WHITE BEAN AND SMOKED BACON DIP



White Bean and Smoked Bacon Dip image

1 cup julienned applewood-smoked bacon
One 14-ounce can white beans, drained and rinsed well
1 tablespoon red wine vinegar
1 teaspoon minced shallots
2 pinches nutmeg
3 anchovies
Grated zest and juice of 1 lemon
1 clove garlic
Kosher salt and freshly cracked black pepper
2/3 cup extra-virgin olive oil
1/2 cup fresh parsley, finely minced

Steps:

  • Render the bacon in a small pan over medium-low heat, stirring regularly to prevent burning. Drain on paper towels, reserving the fat.
  • Add the bacon, white beans, vinegar, shallots, nutmeg, anchovies, lemon zest and juice and garlic to a food processor and pulse until mostly smooth. Season with salt and pepper. With the processor running, drizzle in the olive oil and about 1 tablespoon of the reserved bacon fat to emulsify.
  • Transfer the mixture to a serving bowl and fold in the parsley.

8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of spiced flat breads, cocktail sized pumpernickel or rye breads, or sliced whole grain baguettes, for dipping

Steps:

  • Preheat oven to 400 degrees F.
  • Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.
  • In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

2 pounds ground beef
1 tablespoon dried minced onion
1 can (8 ounces) tomato sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) chili beans, undrained
4 cups shredded cheddar cheese
Sliced jalapeno pepper
Tortilla chips

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a bowl; add the onion. Mash with a fork until crumbly; set aside. , In a blender, process tomato sauce and beans until chunky. Add to beef mixture and mix well. Spoon half into a greased 13x9-in. baking dish; top with half of the cheese. Repeat layers. , Bake, uncovered until cheese is melted, about 30 minutes. Top with sliced jalapeno. Serve warm with chips.

Tortilla or nacho tortilla chips

Steps:

  • In a bowl, beat cream cheese and sour cream until smooth. Spread in an ungreased 13x9-in. dish or on a 12-in. plate. Combine onions, tomatoes and green pepper; sprinkle over the cream cheese layer. , Pour taco sauce over the vegetables. Sprinkle with cheddar cheese. Refrigerate. 2 -3 garlic cloves, minced (about 1 T)
1 1/2 teaspoons ground cumin (or more to taste)
1 teaspoon chili powder
1 (19 ounce) can white beans, rinsed and drained (such as cannellini)
1 cup grated sharp white cheddar cheese (or can use Monterey Jack cheese or yellow cheddar cheese)
1/4 cup sour cream (to taste)
1 -2 tablespoon fresh lemon juice, to taste
salt, to taste
cayenne, to taste

Steps:

  • In a skillet cook the bacon over medium heat until crisp.
  • Meanwhile, toast ground cumin in a small pan over medium heat until fragrant. Remove from heat.
  • When bacon is done cooking, transfer to a plate lined with paper towels and pour off all but 2 T of bacon fat from skillet.
  • Add onion and garlic to skillet and cook, stirring occasionally, for 5 minutes. Add cumin and chili powder and cook, stirring, 1 minute. Add beans and cook, stirring occasionally, 5 minutes.
  • Transfer the mixture to a food processor and puree until smooth. Add the cheddar cheese, sour cream, lemon juice, salt and cayenne and puree until combined well.
  • Crumble bacon.

Steps:

  • In a skillet cook the bacon over moderate heat, until crisp. Transfer bacon to a plate lined with paper towel and pour off all but 2 tablespoons fat. Add onion and garlic to skillet and cook, stirring occasionally, for 5 minutes. Add cumin and chili powder and cook, stirring, 1 minute. Add beans and cook, stirring occasionally, 5 minutes.

I was craving Southwestern Egg rolls from Chili's and since I've been cutting back on the carbs, I came up with this recipe that can be used as a dip with tortilla chips, quesadilla filling or as a side dish.

1 (16 ounce) package frozen chopped spinach
1 small onion, chopped
1 -2 tablespoon olive oil
4 ounces cream cheese, softened
1 (15 ounce) can black beans, drained
1 (10 1/2 ounce) can Rotel Tomatoes
1 (11 ounce) can corn niblets (I use Green Giant Mexi-Corn)
1 cup cheddar cheese, shredded
2 tablespoons cumin
1 teaspoon chili powder
salt & pepper

Steps:

  • Saute the chopped onion in olive oil, add the frozen spinach and cook about 10 minutes.
  • Add salt and pepper to taste.
  • Add the Rotel tomatoes, cumin, chili powder.
  • Cook about 5 more minutes and then add cream cheese. Stir frequently while it melts.
  • Add black beans and corn, mix well, then add cheddar cheese.
  • Stir until the cheese is melted.
  • If the mixture gets too thick, add milk to thin it out to desired consistency.
  • Serve with tortilla chips or as a side dish.
