Steps:

  • In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides. Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve.

1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) mild salsa

Steps:

  • In a 3-qt. slow cooker, layer three-fourths each of the corn and beans and half the salsa. Arrange chicken over salsa; top with remaining corn, beans and salsa. Cover and cook on low for 4-5 hours or until chicken is tender. , Shred chicken with 2 forks and return to the slow cooker; heat through. Top with the peppers, sour cream, cheese and onions if desired.

2 tablespoons ground cumin
2 teaspoons garlic salt
2 teaspoons ground dried chipotle pepper
2 teaspoons paprika
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (15 ounce) can black beans
1 (8 ounce) can whole kernel corn
2 pounds skinless, boneless chicken breast meat - cut into cubes
1 tablespoon olive oil
1 small red onion, diced
1 cup uncooked instant rice
1 cup grated Cheddar cheese

Steps:

  • Combine cumin, salt, dried chipotle pepper, and paprika in a large, resealable plastic bag. Seal bag and shake to mix. Measure 2 teaspoons of the seasoning into a large bowl; add diced tomatoes with green chile peppers, black beans, and corn to the bowl and stir.
  • Put chicken in the bag with the remaining seasoning; shake to coat.
  • Heat olive oil in a large skillet over high heat. Turn seasoned chicken out into the skillet, add red onion, and saute in the hot oil until the chicken is browned, about 5 minutes.
  • Reduce heat to medium-high. Stir tomato mixture with the chicken; bring to a boil, add rice, and stir.
  • Reduce heat to low. Sprinkle Cheddar cheese over the chicken mixture. Place a cover on the skillet and simmer until the rice is tender and the chicken no longer pink in the middle, about 5 minutes. Remove from heat to cool for 5 minutes before serving.

1 medium onion
1 (15 1/2 ounce) can kidney beans, Drained and rinsed
1 (15 1/2 ounce) can black beans, Drained and rinsed
1 1/2 cups frozen corn
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes with green chilies or 2 (14 1/2 ounce) cans diced tomatoes with green chilies
1 (1 1/4 ounce) envelope taco seasoning
4 boneless skinless chicken breasts
Tabasco sauce
1 cup chicken broth, less if you want a thinner soup consistency

Steps:

  • Combine all ingredients except chicken and broth (if using) in slow cooker.
  • Lay chicken on top and cover.
  • Cook on low for 6-8 hours or on high 3-4 hours.
  • Before serving remove and shred chicken. Chicken broth can be added at this point if a thinner consistency is desired.
  • Cook 30 minutes longer on low.
  • Can be served with rice, cheese, sour cream, tortilla chips.

I can't remember where I found this recipe but it is one of my family's favorites. I always make double and freeze some to take to work for lunches. It sounds spicy with the jalapeno peppers but it is not really that hot and you can adjust the number of peppers you use, if you want it hotter or milder. If you have a large microwave oven as I do, you can prepare this whole dish in a 4 quart casserole dish. If not, simmer in a large pot on the stove (you may need a little extra broth if doing it this way). The tortilla chips are used just to thicken the broth at the end.

1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
1 ½ cups uncooked white rice
1 (19 ounce) can black beans, rinsed and drained
1 (12 ounce) can whole kernel corn, drained
2 ¾ cups tomato sauce
2 cups chicken broth
1 cup sour cream
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon ground ancho chile pepper
½ teaspoon ground white pepper
½ cup chicken broth
1 ½ cups grated aged Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 4-quart casserole dish with nonstick spray. Add chicken, uncooked rice, black beans, and corn and stir until combined. Set aside.
  • Mix tomato sauce, 2 cups chicken broth, sour cream, chili powder, salt, cumin, ancho chile pepper, and white pepper together in a large bowl. Pour into the casserole dish and mix well; contents should be fairly soupy. Cover with foil.
  • Bake in the preheated oven for 40 minutes. Remove from the oven, uncover, and stir.
  • Add the remaining 1/2 cup chicken broth if the casserole is too dry or beginning to stick. Cover again and return to the oven until rice is soft, about 40 more minutes.
  • Remove foil, stir contents, and sprinkle with grated Cheddar cheese. Return to the oven until cheese is melted, about 5 minutes.

1 lb boneless skinless chicken breast
2 1/4 cups fat free chicken broth
4 garlic cloves, finely chopped
1 (4 ounce) can chopped green chilies
2 teaspoons all-purpose flour
1 medium red bell pepper, diced
1 medium carrot, sliced
1 cup whole kernel corn
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
2 tablespoons cilantro, finely chopped
1 teaspoon cornstarch
1/4 cup cold water
12 tortilla chips, coarsely crushed

Steps:

  • Trim fat from chicken. Cut chicken into cubes. Heat 1/2 of the broth to boiling in Dutch oven. Cook chicken in broth about 5 minutes, stirring occasionally, until white. Remove chicken from broth with slotted spoon.
  • Cook garlic and chilies in broth in Dutch oven over medium-high heat 2 minutes, stirring frequently. Stir in flour. Cook over low heat 2 minutes, stirring constantly. Gradually stir in remaining broth.

  • Preheat an electric grill (such as George Foreman®) for medium heat and lightly oil the grate.

1 (6 ounce) can tomato paste (no salt added)
16 white pearl onions (in the freezer section)
3/4 teaspoon salt (optional)

1 bay leaf
1/4 teaspoon red pepper flakes, crushed
2 cups Red Bliss potatoes, in 1-inch chunks
2 cups carrots, in 1-inch chunks

Steps:

  • In a ziploc bag, place ¼c. flour and a few of the chicken at a time and shake to coat.
  • Brown the chicken in a dutch oven in the oil; then remove the chicken and set aside.
  • Drain all but 1 tsp of the fat; saute 1 tbsp flour and the garlic in the reserved fat for 30 seconds.
  • Add broth, tomatoes (including the liquid), tomato paste, onion, salt, cumin, oregano, thyme, bay leaf and red pepper flakes.
  • Bring to a boil, then reduce the heat to low and simmer uncovered for 20 minute.
  • Add chicken and kielbasa; cover and simmer 20 minute.
  • Skim the fat off the surface; Add the potato, carrot, zucchini and corn.
  • Cover and simmer, covered, for 30 min; then serve.
