This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.

FRIED CABBAGE AND BACON

- Heat vegetable oil in dutch oven or deep bottom skillet. Add bacon and cook until crispy. Remove bacon to a papertowel lined plate. Set aside. Remove all but 3 tablespoons of bacon grease from pot. Turn heat to low.
- Add mustard, chicken stock, salt and pepper, stirring to incorporate. Carefully add in cabbage and toss to coat with liquid. Continue to cook on low heat for approximately 15 minutes until cabbage is cooked but not mushy. Add bacon back to pot and gently stir into cabbage. Taste and adjust seasoning.
- Serve immediately. Can be stored in a sealed container in fridge for 2 days.

- Put bacon grease to a large deep skillet.
- Add sliced sausage and cook the sausage on medium heat until it's lightly browned.
- Place diced onions, chopped bell peppers, and the minced garlic in the pot. Cook the veggies until tender.
- Toss in the ham and a little bit of the cabbage at a time. The cabbage will shrink as it cooks, and all the cabbage will eventually fit into the skillet.
- Once the cabbage starts to wilt and get tender add in the butter, stir until the butter melts. Sprinkle in the garlic powder, salt, and pepper.
- Reduce the heat and continue cooking the cabbage on a low simmer 20-30 minutes, until the cabbage reaches the desired consistency. Make sure to stir the cabbage periodically. To keep it from sticking to the pot.
- Sprinkle in some Cajun seasoning and stir.
- If you like serve the cabbage over rice with some cornbread on the side.
- Serve while hot and enjoy!

- Cook the bacon in a jumbo cooker over medium-high heat until crisp. Remove the bacon to a paper towel-lined plate. Reserve 2 tablespoons of the bacon grease and discard the rest.
- In the same jumbo cooker, return the 2 tablespoons bacon grease. Over medium-high heat, cook the onion until it is soft, about 4 minutes. Add the garlic and continue to cook for an additional 1 minute. Stir in the cabbage and continue to cook and stir for 4-5 minutes. Add the seasoned salt, pepper, onion powder and garlic powder.
