1/4 cup red wine vinegar
1 tablespoon sugar
1/2 teaspoon dried oregano
2 to 3 dashes hot sauce
1/2 cup vegetable oil
Two 15-ounce cans black-eyed peas, rinsed and drained
One 4-ounce jar diced pimentos, drained
1 cup fresh or thawed frozen corn kernels
2 cloves garlic, minced
1 small red onion, finely diced
1 green bell pepper, finely diced
1 bunch fresh cilantro, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Whisk together the vinegar, sugar, oregano and hot sauce in a large bowl. Drizzle in the oil while whisking. Add the peas, pimentos, corn, garlic, onion, bell pepper and cilantro to the dressing; season with salt and pepper. Toss until everything is coated. The salad can be served immediately, but is better if it sits for a few hours or overnight.

A co-worker brought this dish to a work potluck, and everyone was absolutely raving! I couldn't get enough of it, so I knew I had to get the recipe :) It is great with tortilla chips as a dip, or over some lettuce for a salad. As a bonus, it's so simple and quick to put together!

1 (15 1/4 ounce) can corn, rinsed and drained
1 (10 ounce) can Rotel tomatoes & chilies
3/4 green bell pepper, diced
1/2 red onion, diced
4 green onions, sliced
1/2 jalapeno, seeded and diced
1 cup zesty Italian dressing

Steps:

  • Combine all ingredients and mix well.
  • It can be made up to 24 hours in advance and kept in the fridge.

3 -4 green onions, thinly sliced
3/4 cup KRAFT Zesty Italian Dressing

Steps:

  • Mix all of the ingredients except the chips.

2 (15 ounce) cans black-eyed peas, drained
1/2 cup chopped purple onion
1/2 cup chopped green pepper
1/2 garlic clove
1/4 cup vinegar
1/4 cup olive oil
1/4 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Combine peas, onion, green pepper and garlic in a large bowl.
  • Combine vinegar and remaining ingredients in a jar; cover tightly and shake vigorously. Pour over pea mixture and toss gently.
  • Cover and chill 12 hours. Remove garlic clove and drain before serving.

From About Southern U.S. Cuisine website. This recipe makes some delicious black-eyed peas for New Years Day or anytime of the year. A true southern delight. Note: you can use chicken broth in place of some of the water for more flavor.

1 lb dried black-eyed peas
1 large onion, sliced
1 large ham hock
2 -4 slices bacon
1/8 teaspoon cayenne pepper (to taste)
1/2 teaspoon garlic powder or 1 fresh garlic clove, minced
1/2 teaspoon salt

Steps:

  • In a large saucepan, cover peas with water to 3 inches over the peas.
  • Bring to boil, reduce heat, then simmer for 45 minutes to 1 hour.
  • Place ham hock, sliced onion, bacon, pepper, garlic and salt in the slow cooker/crock pot.
  • Pour in 3 cups water.
  • Cover and cook on HIGH until peas are tender and ready to go into the crockpot.
  • When peas are tender, transfer to the slow cooker/crock pot.
  • Reduce heat to LOW; cover and cook for 7 to 9 hours.
  • Taste and adjust seasonings. Serve with hot cornbread.

5 cups water
1 green onion, chopped
3 teaspoons chicken bouillon granules
3 teaspoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1 teaspoon chili powder
1 teaspoon coarsely ground pepper

Steps:

  • Sort peas and rinse with cold water. Place in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until softened. Drain and rinse peas, discarding liquid., Return peas to the pan; add the water, onion, bouillon and seasonings. Bring to a boil. Reduce heat; cover and simmer for 40-45 minutes or until peas are tender.

1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
½ teaspoon ground coriander
1 bunch chopped fresh cilantro

Steps:

  • In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.
