CRAZY GOOD SOUTHERN BAKED HAM
This is a mash up of two recipes with coffee added to give it a kick. It doesn't taste like coffee but I think it gives it a lift.

SOUTHERN BAKED HAM
This is the ham I use for the big holidays. Everyone looks foreword to it. My secret is that it's so easy. I pour the extra sauce in a small dish and use it for the ham--or my favorite is to pour it on homemade mashed potatoes. It's a VERY sweet sauce!

SOUTHERN BAKED MAC AND CHEESE
This rich and decadent baked pasta is a Southern Black staple for holidays and special occasions. Steering away from the standard stovetop mac, this version includes three kinds of cheese and bakes up like a casserole with a crispy, golden top. The addition of eggs makes it similar to a cheesy, savory custard. Warning: This is not diet food!

Steps:
- Preheat oven to 350°F. Place ham, fat cap facing up, in a large roasting pan. Fill bottom of pan with water to a depth of ½ an inch. Cover pan with aluminum foil. Bake in preheated oven until an instant-read thermometer inserted into thickest portion of meat registers 120°F, about 2 hours, 30 minutes, basting every 30 minutes with accumulated juices in pan.
- Meanwhile, stir together preserves, mustard, and sugar in a small saucepan. Cook over medium, stirring occasionally, until mixture is smooth, about 2 minutes. Remove from heat; cover to keep warm, and set aside.
- Remove ham from oven; remove and discard foil. Brush ham with ½ cup of the apricot glaze. Return to oven and bake, uncovered, at 350°F until top is lightly caramelized and thermometer inserted into thickest portion of meat registers 140°F, about 40 minutes, brushing with ½ cup of the apricot glaze after about 20 minutes. Remove from oven. Transfer ham to a platter; tent with foil, and let rest 15 minutes. Reserve juices in pan.
- Whisk ½ cup reserved pan juices into remaining apricot glaze in saucepan until well combined. Serve ham alongside apricot-pan sauce.

- Carefully slice 1/2″ deep cuts across top of ham, spaced about 1 1/2″ apart. Cut another series of 1/2″ deep cuts crosswise to the first set of cuts, creating a diamond pattern all over the top surface of the ham. If you like, push a whole clove into each spot where the cuts intersect – I usually don’t bother, though. Place ham in roasting pan, along with about 1 cup of water – this will prevent the drippings from burning.
- Follow the directions on the ham for baking – usually about 15 minutes per pound. Set your timer for 40 minutes less than the recommended baking time.

- Line a large pan with a lip around it with aluminum foil. Place ham in center of foil. In small bowl, stir together brown sugar, coke, and mustard to make your glaze. Brush half of glaze over ham. Wrap entire ham well in foil. Place in 350 degree oven for 2 -1/2 hours.
- Remove ham from oven and peel back the foil but don't move the ham. Brush remaining glaze over ham and return to oven, uncovered, for another thirty minutes or until lightly browned. Allow to sit at room temperature for about ten minutes or so before cutting. If you need to serve it later you can cover it with foil to keep it warm and let it sit on your stovetop. I suggest cutting it within half an hour of removing it from the oven because that is about as long as you'll be able to stand waiting once you smell it.
