1 cup shredded cabbage
3 teaspoons canola oil, divided
1 slice onion, halved
1 garlic clove, minced
8 uncooked large shrimp, peeled and deveined
2 tablespoons water
1 tablespoon soy sauce
1 tablespoon minced fresh cilantro
1/8 teaspoon crushed red pepper flakes

Steps:

  • In a small skillet, stir-fry the cabbage in 1 teaspoon oil for 2 minutes or until tender. Remove and keep warm. In the same skillet, stir-fry onion and garlic in remaining oil until tender. Add the shrimp, water and soy sauce; stir-fry for 2-3 minutes or until shrimp turn pink. Stir in cilantro and pepper flakes. Serve with cabbage.

1/3 cup chopped fresh cilantro
1/4 cup water
3 tablespoons brown sugar
2 tablespoons minced seeded jalapeno peppers
2 tablespoons of fresh mint, thinly sliced
1 1/2 tablespoons fish sauce
1 garlic clove, minced
6 cups napa cabbage, thinly sliced
1 1/2 cups shredded carrots
1 1/2 cups loosely packed fresh mint leaves
1 cup vertically sliced red onion
1 1/2 lbs medium shrimp, cooked and peeled
1 English cucumber, halved lengthwise and sliced (about 1 1/2 cups)
6 tablespoons chopped chopped dry-roasted unsalted peanuts
mint sprig (optional)

Steps:

  • To prepare dressing, combine first 8 ingredients, stirring with a whisk until sugar dissolves.
  • To prepare salad, combine cabbage and next 5 ingredients (through cucumber) in a large bowl.
  • Drizzle dressing over salad, and toss well to coat.
  • Sprinkle with peanuts; garnish with mint sprigs, if desired. Serve immediately.

A crunchy, refreshing salad with unusual flavor. This recipe was given to me by my friend Joan Truman. If you are fortunate enough to live near a Japanese market, purchase Nissen ramen noodles. They come in a red and gold package. The only word I recognize is Nissen; everything else is Japanese. These noodles do not come with a flavor packet as the seasoning is already in the noodles. Although you can use regular ramen noodles with seasoning packets, I prefer the taste of noodles that are already seasoned.

2 tablespoons oil
1/4 cup sliced almonds
1/4 cup sesame seeds
8 green onions, finely sliced
1 head green cabbage, finely chopped
2 (3 ounce) packages chicken-flavored ramen noodles (break up noodles in package)
1/4 cup white sugar
1 teaspoon black pepper (freshly ground if possible)
1 teaspoon salt
1/4 cup oil (I prefer Canola oil)
6 tablespoons rice vinegar
2 teaspoons Accent seasoning (optional)

Steps:

  • Dressing:.
  • Mix sugar, rice vinegar and salt together in small saucepan. Heat over medium until sugar and salt dissolve. Let mixture cool and then combine with remaining dressing ingredients. Set aside.
  • Salad:.
  • Heat 2 tablespoons oil in skillet. Toast almonds and sesame seeds until lightly browned. Combine with onions, cabbage, and dressing. Approximately 30 minutes before serving, crush ramen noodles in their package and combine with salad.
  • Note: This salad is best if you make it the night before you plan on serving it. The sweet and salty flavors develop overnight and although the cabbage softens a bit, it still retains it's crunchy texture. A good summer salad for picnics since it travels well and doesn't contain mayonaise.

This is yet another version of Ramen Noodle Slaw, but with a little different twist -- lime. Also,no nuts, as my family isn't wild about them in a main dish. The bottled dressings listed are Good Seasons and Kraft brands, because that's available here. This makes a great lunch or light supper when it's too hot to eat (but when is that???). It's easy to put together: use a LARGE Tupperware bowl with a lid, and you don't even need to stir, just turn it over a few times, and chill! (Cooking time is chilling time)

1 medium napa cabbage, sliced thin, including stem pieces (baby bok choy)
1 medium carrot, peeled and grated
1 (8 ounce) can sliced water chestnuts, drained
1 (8 ounce) can bean sprouts, drained
1 (8 ounce) package frozen ready-to-eat cocktail shrimp, thawed and drained
1 (3 ounce) package ramen noodles, oriental or 1 (3 ounce) package shrimp, flavor
1/3 cup asian sesame dressing
1/3 cup French dressing (Catalina)
1 lime, juice of

Steps:

  • Slice (shred) Napa cabbage and place in large bowl.
  • Grate carrot into the cabbage.
  • Add drained water chestnuts, bean sprouts and shrimp.
  • Crush ramen noodles and add those to bowl; sprinkle spice packet over all.
  • Pour in both salad dressings. The directions are for 1/3 cup each, but add or subtract amounts to your liking. Most times, I just squirt until it looks good!
  • Juice the lime over all.
  • Place lid on the bowl and turn over several times. Best chilled for at least an hour.

1 lb medium shrimp, shelled and deveined
3 tablespoons olive oil, extra virgin
1 1/2 tablespoons fish sauce
1 lime, zest and juice, plus lime wedges for serving
1 tablespoon light brown sugar
1 teaspoon Thai red curry paste
1 small shallot, very finely chopped
1/2 small green cabbage, cored and finely shredded (6 packed cups)
2 carrots, julienned
2 kirby cucumbers, very thinly sliced
1 cup unsalted dry roasted peanuts, coarsely chopped
1 cup cilantro leaf

Steps:

  • Step 1: Bring a large pot of salted water to a boil and fill a bowl with ice water. Add the shrimp to the boiling water and cook until pink and curled, about 1 minute. Drain the shrimp and transfer them to the ice water to cool. Drain and pat dry.
  • Step 2: In a large bowl, whisk the olive oil with the fish sauce, lime zest, lime juice, brown sugar, red curry paste and shallot. Add the cabbage, carrots, cucumbers and shrimp and toss until evenly coated. Let stand at room temperature for 20 minutes, until the cabbage is very slightly wilted. Toss the salad, top with the peanuts and cilantro and serve with lime wedges.
