Steps:
- Place pork shoulder roast in a clear plastic bag; set in a deep bowl.
- Thoroughly blend together the soy sauce, dry sherry, minced garlic, dry mustard, ginger and thyme.
- Pour marinade over meat in bag; close.
- Place the roast in the refrigerator and marinate for 2 or 3 hours or overnight.
- Transfer the pork roast and marinade to a crockpot.
- Cover and cook on HIGH for 3 1/2 to 4 hours.

Steps:
- Season roast with salt and pepper and rub with minced garlic.
- Pan sear (on top of stove) roast about 3 minutes on each side.
- Place onion in bottom of crock-pot.
- Place roast on top of onion.
- Top roast with remaining ingredients, except Pineapple, cornstarch, and water.
- Mix water and cornstarch and pour onto top of all ingredients.
- Cover and cook on low for 8 hours.
- Add the can of pineapple and cook for another hour, or you can do like me and be lazy and throw the pineapple in with the other ingredients and cook it the whole time!

- In a large skillet over medium heat, brown roast in butter for 5 minutes on each side. Transfer to a roasting pan. , In the same skillet, saute onion and carrots until crisp-tender. Place around roast. Sprinkle with paprika. Add broth to pan. Cover and bake at 350° for 1 hour. Uncover; bake 20-30 minutes longer or until a thermometer reads 160°. , Remove roast and vegetables to a serving platter; keep warm. Pour pan drippings into a measuring cup; skim fat. Add water to measure 2-2/3 cups. , In a saucepan, combine flour and sour cream until smooth. Add drippings, parsley and salt. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the roast.

PACIFIC PORK ROAST WITH PINEAPPLE
I've had this recipe forever, and had forgotten all about it. Dug it out when I remembered it, cuz it is sooo good. It takes a while, but it's not difficult. Great combination of flavors! There's usually extra stuffing...just bake it in a dish along side. If you like a little heat, use a hotter pepper like an Anaheim chile, or New Mexico chile.

- Preheat oven to 325.
- Place roast fat side up on cutting board. Slice into 1 inch thick slices, making sure you don't go all the way through.
- Drain pineapple, reserving juice.
- Combine 3/4 cup of pineapple, 1 can of soup, stuffing mix, green pepper, and butter. Mix well.
- Spoon stuffing between slices of pork. Tie roast tight with cooking twine. (Not absolutely necessary to tie.).
- Place roast on rack in shallow pan, fat side up. Cover with foil and bake at 325º for 1-1/2 hours.
- Uncover and bake for 1 to 1 1/2 hours more until meat is cooked has reached an internal temperature of 160.
- Meanwhile, combine remaining can of soup, 1/4 cup of reserved pineapple juice, 2 T pan drippings and ginger. Heat through and serve with pork.
ASIAN PORK ROAST
This makes for a delicious Sunday dinner. I serve it with rice (sometimes mashed potatoes, though) and broccoli.

Steps:
- You'll need 2 heavy-duty large plastic bags; place one inside the other, then place roast inside inner bag.
- In bowl, combine all other roast ingredients and mix well; pour over the roast in the bag.
- Press out any air, tie it up with a twist-tie or elastic band, and place in a large bowl and stash in your fridge.
- Marinate for about 6 hours, occasionally squishing bag to make sure all the meat gets contact with the marinade; you can get away with 3 to 4 hours though.
- Preheat oven to 325F degrees.
- Remove roast from bag, discarding marinade.
- Place roast on a rack in a roasting pan and roast until pork reaches internal temp of 170F (75C) and juice is no longer pink-- about 3 hours.
- Let stand for about 15 minutes before carving to allow juices to settle back into meat.
- To make the sauce, combine all sauce ingredients in a small saucepan and heat over medium heat until jelly melts.
- Stir well and serve with pork.

- Place pork roast in slow cooker. Combine jam, brown sugar, garlic, vinegar, soy sauce, molasses and chicken broth. Mix well.
- Pour over roast. Cover and cook on low for 8 hours.
- Remove roast and sauce from slow cooker. Allow to cool.
- Place cooled roast and sauce in freezer bag. Label and freeze.
- To serve: thaw. Heat roast and sauce until hot and bubbly. Pull roast into serving pieces (or shred) and serve sauce over rice.
