SOUTH BEACH DIET MUG CAKE
So good! Very P2 and P3 friendly, eaten with or without frosting this is perfect to eat every day, anytime without the guilt!

Steps:
- Mix all dry ingrediants in the mug (almond flour, sugar, cocoa powder). Add the milk or cream, oil or butter, and vanilla extract. Mix with spoon. Place the mug in your microwave for 3 minutes. Do not cover the mug. Turn mug over and shake onto a plate. Let cool, cut in half. Add homemade sugar free whip cream (just whip up some heavy cream and add your choice of sugar substitute). Or chocolate frosting made with only 4 tbsp of cream cheese, 1 tablesppon of splenda, splash of vanilla extract, a dash of unsweetened cocoa powder, and blend with blender until smooth.

PEANUT BUTTER MUG CAKE
You definitely need either an oversized mug, or divide the batter into two regular sized mugs or else it will overflow. This came from Kirbie's Cravings. I have not tried this, just posting for safe keeping.

- Combine all ingredients in an oversized coffee mug. Whisk well with a small whisk until smooth.
- Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don't want to overcook it or it will become rubbery.
- You can also make this into two smaller-sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually.

DANGEROUS MUG CAKE
And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night! *After reading the first few reviews, I realized that when I had originally made it, I had been using self rising flour! So, I've since updated the recipe and add the baking powder and salt that was missing... not surprisingly, it turned out much better! We always top ours with whipping cream or a scoop of vanilla ice cream!

- You will also need: 1 coffee mug.
- Spray inside of mug lightly with cooking spray.
- Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly.
- Pour in the milk and oil and mix well.
- Add the chocolate chips (if using) and vanilla, and mix again.
- Put your mug in the microwave and cook for 3 minutes at 1000 watts.
- The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired or you can eat it right out of the mug and a scoop of ice cream is a nice way to top this dessert off.
- You can put all the dry ingredients into snack size zip lock bags and tuck them into a mug (along with this recipe) to give it as a gift. Just make sure that the cup is microwave safe and holds 1 1/2 cup.

Not bad for a diet cheesecake. Satisfies that sweet tooth. Phase 2 on The South Beach Diet. The 20 minutes prep times includes the 15 minutes cool-down phase before adding the sour cream topping.

- Beat ingredients for'cake' until smooth.
- Pour into a 9" greased square pan.
- Bake at 350 degrees for 35 minutes.
- Remove from oven for 15 minutes-- leave oven on.
- Meanwhile-- mix topping ingredients together and mix well.
- After the 15 minutes has elapsed, pour topping over the cheesecake and spread evenly, and bake for 10 minutes more.
- Chill.
