BAKERY SHOP FROSTING
This is a rich, but not overly sweet, frosting often favored by bakery shops because of its durability. It holds its shape (seemingly forever) and freezes well. It is very fluffy, good for filling in cracks and uneven spaces and for covering large areas on a cake.

Steps:
- Place flour in a saucepan. Slowly add creamer and water, stirring to eliminate lumps. Cook over low heat until thickened, stirring constantly. Cool in the refrigerator about 1 hour.
- In mixer bowl combine sugar, margarine and vanilla. Beat at high speed at least 10 minutes. Gradually add the cooled flour mixture and beat until fluffy. Yield: 3 cups.

I needed an icing to use to make my daughters castle cake. While in Farmer Jack, the woman at the register ahead of me talked about how she decorates cakes. So I took that as my opportunity to ask her what recipe she uses for icing and this is what she gave me. I got lots of raving reviews. This hardens up like the cakes in meijer, etc.... and it's not too sweet.

- Combine the shortening, water and vanilla. This will take some time to mix up but it will eventually.
- Add the meringue powder and powdered sugar.

- Stop and scrape down, start again till creamy.
- Add cut-up cream cheese and cream again, scraping down sides till fluffy on high.
- Add vanilla extract and blend.

- You may add salt if you need to.
