Easy Cream of Garlic Soup, the best natural remedy for colds and flu. Healing and flavourful, this vegetarian soup is ready in well under 30 minutes, and it goes well with the whole family. It's healthy, it's filling, creamy and so simple, so much better than ready-made soups.

- Peel and slice the garlic.
- In a pan, heat up the oil and butter, add the garlic, and stir for about one minute, so that the garlic can soften a bit.

- Transfer everything to a blender, and blend until smooth.
- Add one spoonful of soup to the yogurt, mix well, then add a few more spoonfuls until the yogurt is warm.

CREAM OF GREEN GARLIC AND POTATO SOUP
Green garlic, as I've come to learn relatively late in life, makes one heck of a good soup. It's flavor, once simmered slowly with potatoes and a bit of pork, is somewhere right in the middle between raw garlic and sweet caramelized onions.

Steps:
- Place potatoes in bowl of water. Set aside.
- Soak green garlic in a bowl of water to remove dirt or sand. Drain and set aside.
- Heat olive oil in a skillet over medium heat; cook and stir minced prosciutto until it begins to sizzle, about 2 minutes. Add green garlic and continue to cook, stirring frequently. Do not let the garlic brown. Season with salt, black pepper, and cayenne pepper; cook and stir for 1 to 2 more minutes.
- Mix chicken broth into green garlic mixture and bring to a simmer. Reduce heat to low, cover and cook for 30 minutes.
- Remove potatoes from the bowl of water and add them to the garlic and broth mixture. Cook until potatoes are tender and easily smashed against the side of the pot, about another 30 minutes. Add broth as needed.
- Transfer potato chunks and some green garlic chunks to a blender with about 1/2 cup cooking liquid. Puree until smooth, adding more cooking liquid as needed.
- Stir blended potato mixture back into the pot; stir in heavy cream. Cook over medium-high heat until cream is warmed through, about 5 minutes. Season with salt and black pepper to taste. Garnish with fresh chopped chives.

GARLIC SOUP
Simple yet delicious. Cook garlic slowly to bring out the sweetness (the longer it simmers in the broth the better). I serve a bowl of this with a few grilled skewered shrimp laid over the rim of the bowl and crusty bread as a starter. Everyone that tastes it will want the recipe. This recipe is even better if you use a low sodium prepared chicken stock in place of the water and chicken bouillon

CREAMY ROASTED GARLIC SOUP
After two weeks of searching and trying recipes I finally found one (making a few modifications)to copy a recipe my DH had at a restaurant in Ohio. If you are a garlic lover, then this is a must for you. It's very creamy and the roasted garlic flavor is out of this world! Prep time includes the 1 hour to roast the garlic. But if you are like me, there is always some on hand in the refridgerator.

WORLD'S BEST CREAM OF GARLIC SOUP
From Food & Wine Magazine. This smooth soup is a specialty of chef Susan Spicer at Bayona in New Orleans. What seems like a prodigious quantity of garlic and onions is mellowed by the long, slow cooking. If you can, make the soup a day ahead; the flavor will be even better.

Steps:
- Melt butter with olive oil in a 5 quart heavy-bottomed non-reactive pot over medium heat. (I prefer enameled iron for even heat conduction.) Add whole garlic cloves and onions. Saute over medium to medium-low heat for 15-25 minutes. Stir often. Cook until garlic and onions are soft and light golden brown. Cook slowly to develop the sweetness of the garlic. Add the chicken broth and the potato. Bring soup to a boil. Cover, reduce heat and simmer, stirring occasionally, until the potato is fork tender, about 15-20 minutes. Remove the pot from the heat. Carefully pass the soup through a food mill. A food processor or blender will work, but will not give you the same texture, because the food mill removes the fibrous parts of the garlic, while a process chops them up and they remain in the soup. Return soup to heavy bottom pot. Heat just to boiling over medium heat. Reduce heat to medium low, add half and half and heat, stirring often, until warmed through. Taste for seasoning and add salt and white pepper to taste. Ladle into serving bowls and garnish with a chiffonnade of tangy greens, like arugula or mesculin.

- In a large saucepan, bring the water to a boil. Meanwhile, in a medium skillet, melt the duck fat over moderately low heat. Add the garlic, onion and shallots and stir to coat thoroughly with duck fat. Cook, stirring frequently, until the vegetables are thoroughly softened but not browned, about 12 minutes; if the garlic begins to brown, turn down the heat. Stir in the flour and cook gently for 5 minutes, stirring frequently; again, take care not to let the vegetables brown.
- Season the boiling water generously with salt and pepper. Stir in the vegetables and simmer for 35 minutes. Transfer the hot soup to a blender and puree, in batches if necessary. Return the soup to the saucepan.
- In a small bowl, beat the egg yolks with 1 tablespoon of the vinegar. Whisk a few tablespoons of hot soup into the egg yolks to warm them, then whisk the yolks into the soup. Whisk the soup over moderately low heat just until it begins to look creamy; do not let the soup boil or the eggs will curdle. Season the soup with salt and pepper and add a little more vinegar if desired. Ladle the hot soup into bowls, garnish with the toasted bread and the chives and serve.
