SOUTHERN, SOUL FOOD COLLARD GREENS WITH SMOKED TURKEY LEGS. SIMMERED WITH ONIONS, GARLIC, RED PEPPER FLAKES AND SMOKED TURKEY FOR A ROBUST, FLAVOR!

Steps:
- In a large deep skillet or pot, heat olive oil on medium heat.
- Add in onions and cook until tender.
- Stir in garlic and cook until fragrant.
- Add chicken broth, red pepper flakes and smoked turkey.
- Bring to a boil and reduce heat.
- Cover and boil lightly for about 20-30 minutes.
- Remove turkey leg and let cool.
- Remove meat from bone and cut into bite-size pieces.
- Return meat and skin back to the pot.
- Simmer for 10 minutes.
- Add collard greens to pot, pushing them down if needed.
- When greens begin to wilt down, cover and simmer for up to 60 minutes or until your desired texture is reached, stirring occasionally.
- Add salt and pepper if desired.
- Plate the greens and pour on a few drops of hot sauce.
- Serve hot.

- 1. Place a pot over medium heat, add in the turkey tails and cool water, cover with a lid and boil for 1 hr.2. Place the collard greens in a big mixing bowl, add in 1 tbs of salt, and enough water to cover them.3. Scrub the collard greens well, let them soak for 15-20 minutes, then rinse well.4. Remove the stems and chop them up. Keep a cup worth of stems, discard the rest, and chop up the collard greens.5. Once the turkey tail is done and tender, chop it up into small pieces.6. Chop the onions and peppers into small pieces. 7. Place a large pot over medium-high heat and add in the oil, butter, onions, peppers, and stir periodically.8. Sautee for 5 minutes, then stir in the first pound of collard greens.9. After 3 minutes, add in the 2nd pound of collard greens and let them cook for 3 mins or until they wilt and are glossy.10. Reduce the heat to medium and add in the chopped turkey tails, the water from the turkey tails, the broth, and all the condiments and seasonings, then stir well. 11. Cover the greens with a lid and let them simmer for approximately 1 hr or until tender.

Steps:
- Heat olive oil in a large pot. Add onions and cook over medium-low heat until caramelized. Add vinegars and water and bring to a slow boil. Add collard greens. Simmer until tender.
- Add vegetable base, cayenne and sugar. Continue to simmer until flavors are absorbed by greens. Serve hot.
BLACK FOLKS SOUL FOOD COLLARD GREENS RECIPE
Steps:
- Clean the collard greens and cut off the stems.
- Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
- Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
- Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
- Finally, add the collard greens, followed by the cooked turkey leg.
- Press down to sink the greens as much as you can into the liquid broth.
- Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 15 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 15 minutes.
- To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
- Serve Black folks' soul food collard greens right away and enjoy!

BEST EVER COLLARD GREENS
This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

- Heat broth.
- Add remaining ingredients.
- If there is not enough broth to cover greens, add more.
- Bring to a boil, then reduce heat& simmer for about 3 hours.
- Remove bay leaves.
COLLARD GREENS
You can also use this recipe with turnip greens or mustard greens. For something different use all three greens. Serve with corn bread and sliced tomatoes.
