This soup is so easy to throw together and is really tasty. It gets quite a bit of heat from the enchilada sauce so be careful about adding extra spice. I serve with cheese quesadillas for a filling meal. Enjoy!

1 cup cooked chicken, diced
3 cups chicken broth (bouillon works just fine)
1 (15 ounce) can black beans, drained
1 (19 ounce) can enchilada sauce (I prefer Old El Paso)
1 (14 1/2 ounce) can diced tomatoes
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup onion, diced
1/2 cup green pepper, diced
1 (10 ounce) package frozen corn
1 tablespoon oil
1 teaspoon salt

Steps:

  • In large soup pot, sauté onion and green pepper in oil over medium-high. Heat until soft, about 5 minutes.
  • Add all other ingredients and mix until well blended.
  • Let simmer over medium heat for 10-15 minutes so flavors can blend.
  • Ladle into bowls and enjoy!

I saw many used a rotisserie chicken - bet that would add come nice flavor and speed to this dish! I enjoyed Somersizing last time around, and OBVIOUSLY need to get back to it!! ;) Enjoy!! Appears to be Level One meal - but there is an additional section for anyone wanting to make it a LEVEL TWO meal. **Original posting called for 3tbsp of tomato paste, but most reviewers semed to like the recipe changed this way, so I am posting as such.

1 walla walla onion, peeled (Vidalia or other sweet is fine)
4 garlic cloves, peeled (or 3 tsp minced jarred garlic)
1 (4 ounce) can diced green chilies
6 cups chicken broth (3 cans)
2 tablespoons olive oil
2 teaspoons red chili powder
2 teaspoons ground cumin
1 (4 ounce) can tomato paste (may freeze the rest for later use in zip loc bag, depending on taste)
1 lb rotisserie-cooked chicken, shredded (1lb thinly sliced chicken breast or 7-8 chicken tenders)
1 cup cheddar cheese, grated
1 lime
salt and pepper
4 corn tortillas (Only for use if making a Level TWO meal, see below) (optional)
sour cream, full fat
cheddar cheese, shredded
scallion, chopped
tomatoes, diced

Steps:

  • Puree first 3 ingredients together in food processor.
  • Heat stock pot with olive oil add the puree, chili powder, cumin and tomato paste, sauté stirring constantly about 1 minute.
  • Add broth and let simmer for 15 minutes. (You can simmer longer to enhance flavors).
  • Add in thinly sliced chicken breast (or shredded rotisserie) and simmer about 15 more minutes.
  • Add in lime juice, salt and pepper (a few dashes of Tabasco are good too) to your liking.
  • 3.Before serving stir in a cup of cheddar cheese until melted.
  • 4.Ladle into serving bowls and garnish with full fat sour cream , more cheese, diced tomatoes and scallions.
  • ****FOR LEVEL 2:.
  • After step 1 add 4 broken up corn tortillas (toasted in oven).Simmer for additional 10 minutes then puree with hand held blender.
  • Continue on to step 2.****.

1/2 large onion, chopped
3 tablespoons butter
2 (4 ounce) cans green chilies, diced
2 (10 ounce) cans diced tomatoes (Rotel can be used)
1 (8 ounce) package cream cheese
1 (8 ounce) can chicken broth
1 1/2 cups cream (you can use 1 cup cream and 1/2 c. water.)
4 teaspoons lemon juice
2 teaspoons garlic powder (start with 2 teaspoons and adjust accordingly)
2 teaspoons cumin (start with 2 teaspoons and adjust accordingly)
2 teaspoons cayenne pepper (start with 2 teaspoons and adjust accordingly)
salt, to taste
1 -2 cup rotisserie-cooked chicken, shredded (can use breasts or tenders chopped)
1 bunch green onion, chopped (white part)
1 bunch fresh cilantro, chopped (to taste)

Steps:

  • Melt butter over med. high heat. Saute onion in butter until translucent.
  • Add green chiles and tomatoes (do not drain either one) and cook, stirring constantly, until about half of the liquid is evaporated.
  • Add cream cheese and cook until melted, stirring constantly.
  • Add broth, cream, lemon juice and seasonings. (At this point, you can puree the soup with an immersion blender, but that's optional--it's good either way).
  • Add chopped chicken and heat until warmed through. Do not boil.
  • Serve, garnishing each portion with chopped green onions and chopped cilantro.
  • According to the original poster, the garnish is a must for this soup. All the fresh ingredients give it a "crunchy kick.".
  • Non-Somersizers can also garnish with either cut-up & fried tortilla strips OR crushed Nacho Cheese Doritos.

3 -4 chicken breasts (depending on size)
8 ounces sour cream
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can cream of chicken soup
1 (4 ounce) can diced green chilies
1 small onion (diced)
1 dash salt
1 cup cheddar cheese (shredded, for filling mixture)
1 cup cheddar cheese (shredded, for topping)
12 corn tortillas
vegetable oil (for frying)

Steps:

  • Preheat oven to 375 degrees.
  • Cook chicken breasts. I usually microwave them covered in parchment paper until cooked through.
  • Shred chicken with a fork.
  • In a large mixing bowl, combine shredded chicken, sour cream, soup, green chiles, onion, salt, and ONE cup shredded cheddar cheese. Set aside.
  • In a frying pan heat vegetable oil at about medium-high heat til hot.
  • Then soften each corn tortilla in oil until slightly firm but still soft (about 5-7 seconds on each side). Allow to cool on paper towels.
  • Spoon filling into tortillas, roll them up and place them in an 9" x 13" baking pan.
  • Spread remaining filling mixture across the top of the enchiladas.
  • Sprinkle remaining 1 cup cheddar cheese over the top of the enchiladas. If you like cheese feel free to add as much cheese topping as you like.
  • Bake uncovered for 30 minutes or until cheese appears melted.

2 corn tortillas (6 inches)
1/2 teaspoon canola oil
1/2 teaspoon chili powder
1/8 teaspoon salt

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
5 cups water, divided
2 teaspoons reduced-sodium chicken base
1 teaspoon chili powder
1/2 teaspoon ground cumin

1/8 teaspoon cayenne pepper
1/3 cup masa harina
8 ounces reduced-fat process cheese (Velveeta), cubed
2 cups cubed cooked chicken breast

Steps:

  • Cut each tortilla lengthwise into thirds; cut each widthwise into 1/4-in. strips. Place strips and oil in a resealable plastic bag; shake to coat. Combine chili powder, salt and cayenne.
