1 cup unsalted butter (at room temperature)
1 cup granulated sugar
1 large egg (at room temperature)
2 ounces reduced-fat cream cheese (at room temperature (do not use fat free))
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon lemon zest
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3 cups powdered sugar
3-4 tablespoons milk
2 tablespoons light corn syrup
3/4 teaspoon almond extract
Food coloring
Sprinkles
Colored sugar
Other decorations as desired

Steps:

  • In a large mixing bowl, cream the butter and sugar on medium speed until light and fluffy, about 3 minutes. Scrape down the bowl, then add the egg and beat until fully incorporated, about 30 seconds. Add the cream cheese and beat for 1 minute, scrape down the bowl once more, then beat in the vanilla extract, almond extract, and lemon zest until incorporated, about 30 seconds.
  • In a separate bowl, whisk together the flour, baking powder, and salt. With the mixer running on low speed, slowly add the dry ingredients to the butter-sugar mixture, mixing just until fully incorporated and a soft dough is formed.
  • Divide the dough into quarters. If using the dough within 24 hours, roll each quarter to a 1/4-inch thickness in between two sheets of parchment paper (alternatively, you can store the dough in a ball or disk and roll out when ready to cut and bake). Be careful not to roll the dough any thinner or the cookies will not be as soft. Keeping the dough flat, transfer it to the refrigerator and chill for at least 1 hour or overnight. Repeat with the remaining dough (it is fine to stack the dough "flats" on top of each other to save space). If you will not be using the dough within 24 hours, divide the dough in half, pat each into a disk, then wrap each disk tightly in plastic and freeze in a ziptop bag for up to 1 month. Let thaw in the refrigerator overnight, then proceed with the recipe as directed.
  • When ready to bake, preheat the oven to 350 degrees F and line baking sheets with parchment paper or a silicone baking mat. Remove one of dough flats from the refrigerator. (If you stored the dough in a ball or disk, roll it to a 1/4-inch thickness now, between two layers of parchment paper.) Remove the top layer of parchment paper, then with cookie cutters, slice the cookies into desired shapes. Transfer to the prepared baking sheet. Repeat with remaining dough.
  • Bake the cookies for 9-11 minutes, until barely lightly golden brown and the edges are dry. The cookies will look slightly underbaked. Let cool completely.
  • To make the frosting: In a small bowl, stir together the powdered sugar and 3 tablespoons milk as best as you can (the frosting will be very solid at this point). Beat in the corn syrup and almond extract until the frosting is smooth and glossy. If the frosting seems too thick, add more milk, one teaspoon at a time, until you reach your desired consistency. If making colored frosting, add a few drops of food coloring until you reach your desired color intensity. Frost and decorate the cookies as desired. Let the frosting set for a few minutes, then enjoy!

1 cup unsalted butter, room temperature
1 1/2 cups granulated sugar
1 cup sour cream
8 ounce package cream cheese, room temperature
4 cups powdered sugar, sifted
2 teaspoons lemon juice, freshly squeezed from 1/2 a lemon
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1 tablespoon whole milk, to thin frosting as needed
gel food coloring to tint frosting

Steps:

  • In a mixing bowl, combine the flour, baking powder and soda, and salt together with a whisk. Set this aside.
  • Add the three extracts to the bowl containing the eggs (don't whisk the eggs), and set aside.
  • In the bowl of a stand mixer, mix the butter and the sugar together on med-high speed until light and fluffy- about 5 minutes. Scrape down the bowl twice during this time.
  • Add the eggs (one at a time) to the butter mixture. After each addition, mix on medium speed for 1 minute before scraping down the bowl. Once both eggs have been added, mix on medium speed for 3 minutes, or until the mixture is airy.
  • Add the sour cream to the mixture and blend, on low speed, for another minute. Scrape down the bowl once again.
  • Mix the flour into the butter-egg mixture in two parts on low speed. Scrape the bowl down after a few seconds. Once all the flour has been added, mix for 1 minute to bring the dough together.
  • Remove the mixing bowl from the stand and use a rubber spatula to knead the dough- while it's still in the bowl- to eliminate excess air bubbles. Alternatively, you can turn the dough out onto a floured surface and knead the dough by hand.
  • Wrap the dough in plastic wrap. You can also divide the dough into two equal portions and wrap them separately. Refrigerate the dough for at least 2 hours, or overnight.*

This is the frosting I like to use for my soft sugar cookies, "Recipe#286412". It uses heavy whipping cream and I like to add green or red food coloring to it when I make the cookies for Christmas. It should make enough to frost about 4-5 dozen cookies, depending on how thick of layer you use on each cookie and how big the cookies are. Update: 12/21/2009: I have changed the recipe to increase the amount of whipping cream. I agree with the other reviewer that more is needed but be sure to add the whipping cream gradually and then add the rest if needed.

  • TO PREPARE COOKIES:
  • Preheat the oven to 350F. Line two baking sheets and set aside.

  • In a separate dish put butter and sugar and mix well using electric mixer, medium speed, until it gets light and fluffy. Add an egg and vanilla and mix until combined.
  • Continue mixing slowly adding dry ingredients. The dough will be crumbly. Knead it well with your hands. Put some flour on the table and place the dough on it.
  • Roll the dough up to 1/4 inch thick. Cut it in round shapes. I used a glass 2.4 inch in diameter. Place the cookies in the baking sheets.
  • They should be 2 inches apart. Put them in the oven and bake for 8-9 min. Take them out of the oven and leave to cool for a couple of minutes on the baking sheets.
  • Transfer them to a wire rack to cool completely.
  • TO MAKE THE FROSTING:
  • In medium dish mix butter, cream cheese and vanilla, with a hand mixer, medium speed. Add powdered sugar and mix until well combined.
  • Divide the mixture into 3 bowls. Add red food color in the first one, slowly, until you get the shade that you like. Put green in the second bowl, and leave the third one white.

Unlike their clamshell counterparts, which contain margarine, these homemade versions are made with butter and cream cheese, both of which add wonderful flavor that margarine alone does not. Be sure to freeze your dough for the full 15 to 20 minutes: Not only does this chill the fat, helping the cookies maintain their shape in the oven later, but it also allows the flour to hydrate and the flavors to concentrate. A relic of childhood shored into the present, these cookies are not unlike the tops of vanilla cupcakes, devoid at last of their dry, frosting-less bottoms. 1/2 cup/115 grams unsalted butter (1 stick), at room temperature
3 ounces/85 grams cream cheese, at room temperature
1 cup/200 grams granulated sugar
1/2 teaspoon kosher salt
2 large eggs, at room temperature
1 tablespoon vanilla extract
2 1/4 cups/285 grams cake flour
2 teaspoons baking powder
Sprinkles, for garnish
1 cup/30 grams freeze-dried raspberries, finely ground in a food processor or spice grinder
1 cup/225 grams unsalted butter (2 sticks), at room temperature
2 cups/245 grams confectioners' sugar
1 teaspoon vanilla extract
Pinch of kosher salt

Steps:

  • Make the cookies: In a large bowl, using a spoon, cream the butter, cream cheese, sugar and salt until smooth and fluffy. Add the eggs and vanilla extract, and whisk to incorporate some air and to dissolve the sugar crystals, about 1 minute. Stir in the flour and baking powder until just incorporated.
  • Heat oven to 350 degrees and line two rimmed sheet pans with parchment paper. Using two spoons or a cookie scooper, plop out 2-tablespoon/50-gram rounds spaced a couple of inches apart. (You should get about 7 to 8 cookies per sheet pan.) Place the sheet pans in the freezer for 15 to 20 minutes until the dough is no longer sticky and easier to handle.
  • While the dough chills, make the frosting: In a fine-mesh sieve set over a medium bowl, sift the ground raspberries, using a spoon to help pass them through, until most of the ruby-red powder is in the bowl and most of the seeds are left behind in the sieve. (Discard the seeds.)
  • To the bowl, add the 1 cup butter, confectioners' sugar, vanilla extract and salt and, with an electric hand mixer, mix on low speed until the butter absorbs the sugar. Then, turn the speed up to high and beat until the frosting doubles in size, about 2 minutes, scraping down the sides of the bowl with a rubber spatula to ensure all the ingredients are incorporated. Transfer the frosting to a small container, cover tightly, and set aside. (You should have about 2 cups of frosting.)
  • Remove the sheet pans from the freezer. Roll the chilled dough into even balls and flatten them slightly with your fingers so they're about 2 inches wide and 1 inch high. Bake the cookies for 13 to 15 minutes, rotating the pans and switching racks halfway through, or until they no longer look wet on top, are still light in color and spring back to the touch. They will puff up and crack slightly. Let cool completely on the sheet pan. (They will continue to cook as they sit.)
  • Using a butter knife or offset spatula, frost each cooled cookie with the raspberry frosting and adorn with the sprinkles.

2 tablespoons butter
2 tablespoons cream cheese, softened
3 cups powdered sugar

Steps:

  • Soften cream cheese for a few seconds in microwave if necessary. Heat cream, butter, and cream cheese in a small pot, just until the butter and cream cheese melt into the cream. (Stir frequently to avoid burning.).
  • Remove the pot from the stove, and stir in the 3 cups of powdered sugar. You will have a goopy mess. Beat it with your electric mixer, until it changes color slightly (3-4 minutes.)
  • Spoon, paint, or spread it on your cooled cookies. It will still be pretty thin and goopy, but it should spread in a nice, even coat. (I used the back of my spoon to spread it.)
  • Let the icing 'set' for 1 1/2 - 2 hours, until it hardens. It won't harden completely, but it will form a nice soft frosting layer that squishes only slightly when pressed, similar to a slice of cheese.
  • I modified a regular icing recipe to make this, and was very disappointed with the results at first, but after I left the cookies on the counter for two hours, I was glad I saved them. The icing is perfect for transporting, and has a very good flavor, just right for carrot cake cookies.

  • Pre-heat oven to 350 degrees.
  • If you have a stand mixer-fit with paddle beater. Beat on high speed the butter and until light and fluffy.
  • Add in sugar. Beat until the mixture is light and fluffy, about 2 minutes.
  • Scrape down the sides and turn your mixer to low. Add in the egg, sour cream, and vanilla and mix to combine.
  • Scrape down the sides. As the mixer is running on low speed add in the baking soda. Slowly add the flour a 1/2 cup at a time and mix to combine. Final dough will be soft.
  • Chill dough for at least 1 hour or overnight.
  • When you're ready to bake your cookies, lightly flour your work surface and rolling pin.
  • Roll dough to 1/4 inch thick. Cut shapes as desired.
  • Bake cookies on greased or parchment lined cookie sheets for 8-10 minutes.
  • Allow to cool completely and frost as desired

Steps:

  • Combine the butter and cream cheese and beat until well combined. Then add the sugar and beat on medium speed until well creamed together and fluffy.
  • Add the egg yolk and vanilla extract. Mix until it's well combined.
  • Slowly add the flour and beat on medium low speed until well combined and dough forms.
  • Chill for at least 1 hour. Preheat the oven to 350° Shape the dough into 1 inch balls and place on a cookie sheet lined with parchment paper or silicone baking mat. Press a pecan into the top of each one or roll each ball in nonpareil sprinkles.
  • Bake at 350°F for 12-15 minutes. Store in an airtight container.
