Homemade Sugar Free Amaretto image

Enjoy this easy sugar free amaretto recipe at your next gathering or special occasion! This version is sugar free and uses keto approved ingredients!

1 cup warm water
2 Tablespoons yacon syrup
½ cup BochaSweet (or other granulated sugar substitute)
2 Tablespoons almond extract
2 teaspoons vanilla extract
2 cups vodka

Steps:

  • In a mason jar or glass bowll, mix together warm water, yacon syrup and BochaSweet (or other granulated sugar substitute) until dissolved.
  • Add almond extract, vanilla extract and vodka and mix together.
  • Pour into a mason jar or other container for storage that you can tightly seal.
  • Store for a minimum of 1 week. This homemade sugar free amaretto reaches it's best flavor if you make it about 4 weeks in advance.

1 egg white (- small)
55 g ground almonds
10 ml Amaretto liqueur (- optional but recommended)
¼ tsp almond extract
25 g erythritol
1.5 tsp pure stevia powder

Steps:

  • pre-heat oven to 160ºC fan (170ºC static).
  • whisk egg white until snowy-stiff.
  • add all other ingredients and stir to incorporate everything well.
  • wearing food-safe disposable gloves, take a bit of mixture into the palm of your hand and shape it into rough balls using the other palm in a light, circular motion. The mixture should be sticky but not so much that you can't form the balls. If that is the case, just add more ground almonds.
  • place balls on a sheet of parchment paper over a baking tray and flatten them a little.
  • bake for 10 mins for soft amaretti, or 15 mins for hard ones.

1/2 cup almond flour
3 sliced almonds (to garnish)
1 lb cream cheese
3/4 cup Splenda sugar substitute
3 eggs
1 teaspoon vanilla extract
2 tablespoons Amaretto (I use DaVinci SF Amaretto Syrup)
3/4 cup sour cream

Steps:

  • Spread amond flour in a baking pan and bake in a preheated 325°F oven for 4 minutes or until lightly toasted. Let cool.
  • With an electric mixer, beat cheese and splenda until smooth. Mix in eggs, vanilla, Amaretto and sour cream.
  • Pour batter into a greased 9-inch springform pan. Sprinkle garnish almonds on the top.
  • Bake in the middle of a preheated 325°F oven for 25 minutes or until just barely set. Turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. Chill. To serve, remove pan sides and cut into wedges.

1 cup water
1 cup sugar substitute, splenda
1/2 cup brown sugar, splenda
2 cups vodka
2 tablespoons almond extract
2 teaspoons vanilla extract

Steps:

  • Combine water and sugars in a very large saucepan over medium heat.
  • Heat until the mixture is boiling and all sugar is dissolved.
  • Reduce heat to low and continue to simmer for approximately 2 hours until mixture is thickened and syrupy and lightly coats a spoon.
  • Remove pan from heat and allow to cool for 10 minutes.
  • Add vodka and extracts and stir well.
  • Pour into a bottle and seal.
