PEANUT BRITTLE
Steps:
- In a small bowl combine peanuts, cinnamon, and cayenne. Set aside.
- Brush the inside of a medium sized heavy saucepan with vegetable oil. Add the sugar and water to the saucepan, cook over high heat, stirring occasionally with a wooden spoon, until it comes to a boil. Stop stirring, cover and cook for 3 minutes. Uncover, reduce heat to medium, and cook until the sugar is a light amber color. Stir in peanuts. This will greatly reduce the temperature of the sugar so work quickly. Once evenly mixed, pour mixture onto a sheet pan lined with a silicone baking mat or buttered parchment paper. Using a buttered spatula, spread thin. You will have to work quickly when pouring out and spreading the mixture in the pan. If necessary, in order to achieve single layer of peanuts, top with second sheet pan whose underside has been buttered. Cool completely and then break into pieces.

- Line a baking tray with parchment and grease the parchment with butter.
- Combine sugar, corn syrup and water in a heavy-bottomed saucepot and bring up to a boil over high heat. Without stirring, cook sugar until it reaches "hard crack", about 300 degrees F. on a candy thermometer, brushing the sides of the pot occasionally with cool water. This will take about 7 to 9 minutes, and it will turn a deep amber colour.
- Remove from heat and stir in salt and peanuts with a wooden spoon. Stir in butter, vanilla and baking soda - it will immediately get foamy. Working quickly, spread nut brittle onto prepared baking sheet. Allow to set completely before cracking into pieces.

- Grease two baking sheets and keep warm in a 200° oven. In a large saucepan, combine the sugar, corn syrup and 1 cup water. Cook over medium heat, stirring constantly, until a candy thermometer reaches 240° (soft-ball stage). Stir in butter, salt and peanuts. - In a double boiler heat the peanut butter keeping it warm until needed. In a large sauce pan combine the sugar, corn syrup and 1/4 cup of water. Cook over high heat to 275°F, lower the heat to medium, add butter, stirring until melted. Add the peanuts and continue to stir until the candy starts turning brown and reaches 300°F ( about 5 minutes). Remove from heat, stir in baking soda that has been dissolved in a teaspoon of water along with the vanilla. Working quickly, fold in the warm peanut butter until well blended. Pour the candy onto a marble slab or greased cookie sheet spreading it 1/4 to 12 inch thick. Break into pieces after it has cooled

- Butter 2 large baking sheets; set aside. Butter sides of a heavy 3-quart saucepan. In saucepan combine sugar, corn syrup, butter, and 1/2 cup water. Cook and stir over medium-high heat to boiling. Clip candy thermometer to side of pan. Cook and stir over medium-low heat to 275°, soft-crack stage (about 30 minutes). Add nuts; cook and stir to 295°, hard-crack stage (15-20 minutes more). - First, place parchment paper on a large rimmed baking sheet and set it aside.
- To a large saucepan combine sugar, corn syrup, and water. Clip a candy thermometer to the side of the pot. Bring the syrup mixture to a boil over medium heat, stirring often until sugar is dissolved. Boil until it reaches 235 degrees F when the candy starts to enter the soft ball stage.
- Add the butter and peanuts to the pan. Continue to cook, constantly stirring, until a candy thermometer reaches 300 degrees F, the hard crack stage.
- When the candy thermometer reaches 300 degrees, remove the pot from heat. Quickly add in the vanilla extract and baking soda and stir to combine. The baking soda will cause it to start to foam. Pour candy mixture, while still foaming, onto the baking sheet. For an optional treat, sprinkle sea salt on top.

- Spray (nonstick spray) or butter a 12x16x1/2-inch pan lightly.
- Combine the sugar, butter, water, and corn syrup in a large saucepan and stir until all the sugar is wet.
- Cook over high heat, stirring, until the mixture turns medium golden (300°F).
- Immediately remove from the heat and carefully whisk in the baking soda followed by the salt (take care; the mixture will rise in the pan and bubble).

My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!
