This is a great tasting loaf, fruity and nutty at the same time.

2 eggs
½ cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Beat eggs slightly. Add butter and sugar. Beat smooth. Stir in pineapple and vanilla.
  • In separate bowl put flour, baking powder, soda, salt, and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into greased 9x5x3 inch loaf pan.
  • Bake in 350 degree F (175 degree C) oven for 1 hour. Test with toothpick. Let stand 10 minutes. Remove from pan. Cool and wrap.

This is my mom's recipe for banana bread with canned pineapple. It comes out nice and moist, but not overly oily as some banana breads do.

3 cups all-purpose flour
2 cups white sugar
2 cups mashed bananas
1 cup vegetable oil
½ cup unsweetened applesauce
1 (8 ounce) can crushed pineapple
3 large eggs
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
  • Mix flour, sugar, bananas, oil, applesauce, pineapple, eggs, cinnamon, baking soda, and salt together in a large bowl until blended. Pour into the prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes.

3 cups flour
1/3 teaspoon vanilla
2 cups crushed pineapple
1 cup oil
3 eggs, beaten
1/2 teaspoon cinnamon
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup walnuts or 1 cup pecans

Steps:

  • Beat eggs, sugar and oil.
  • Add sifted flour, baking soda, baking powder and cinnamon.
  • Mix in pineapple and walnuts or pecans.
  • Pour into 2 loaf pans.
  • Bake at 325 degrees for 50-60 minutes.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan. Drain pineapple well, pressing out excess syrup with back of spoon. Reserve 3/4 cup of the syrup.
  • In a medium bowl, combine pineapple, reserved syrup, egg, butter and grated tangerine zest. Set aside.
  • In a large bowl, combine flour, sugar, wheat germ, baking powder, salt and baking soda. Make a well in the center, and pour in pineapple mixture. Stir just until blended. Pour batter into greased 9 x 5 inch loaf pan.
  • Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan 15 minutes. Remove from pan; cool completely on wire rack.
