2 eggs, beaten
1/2 cup vegetable oil
1 cup buttermilk
3/4 cup brown sugar
1/2 teaspoon vanilla
1 1/2 cups pumpkin puree
1/2 cup rolled oats
1/2 cup millet
1/4 cup pumpkin seeds
1 cup unbleached flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg

Steps:

  • Pre-heat oven to 350°F.
  • Line a muffin pan with baking cups or grease (baking spray works well).
  • Combine eggs, oil, buttermilk, sugar, vanilla, and pumpkin puree and mix until there are no lumps of brown sugar.
  • Stir in the rolled oats.
  • Heat a dry skillet and toast the millet until lightly browned.
  • Toast the pumpkin seeds and add with the millet to the wet ingredients.
  • In a separate bowl mix the dry ingredients.
  • Add this mixture to the wet mixture.
  • Avoid overstirring as the muffins will come out tough.
  • Fill the muffin cups and sprinkle with pumpkin seeds.
  • Bake for 25 minutes or until a toothpick comes out clean.

4 large eggs, room temperature
2 cups sugar
1 can (15 ounces) pumpkin
1-1/2 cups canola oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth. Combine the flour, baking soda, baking powder, cinnamon and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full., Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack.

1/2 cup vegetable oil
3/4 cup brown sugar
2 large eggs
1 cup pureed pumpkin
2 teaspoons pure vanilla extract
1 3/4 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon fresh ground nutmeg
1/2 cup dry millet
1/4 cup buttermilk
3/4 cup dark chocolate chips

Steps:

  • Place a rack in the center of the oven and preheat oven to 325 degrees F. Line a muffin tin with paper or foil liners and set aside. In a large bowl, whisk together oil, brown sugar, eggs, pureed pumpkin, and vanilla extract. In a medium bowl, whisk together flour, salt, baking soda, spices, and millet. Add the dry ingredients, all at once to the wet ingredients. Add the butter milk and fold together. When batter is almost completely mixed, fold in the chocolate chips. Spoon batter into prepared pan. Fill muffin cups three quarters full. Bake for 15 to 17 minutes, or until a skewer inserted in the center of a muffin comes out clean. Let rest for at least 15 minutes before serving. Serve warm or at room temperature. Muffins will last, well wrapped at room temperature, for up to 3 days. These muffins also freeze really well. Seal in a freezer-safe bag and store in the freezer.

Everyone I have ever served these to rants about them. I have made some modifications to make them a little healthier. That recipe is Recipe #2509. Either way though, we love them. (Recipe updated to add vanilla, more cinnamon and reduce oil slightly (original calls for 1 1/2 cups oil) since we prefer them with these alterations.)

4 eggs
2 cups sugar
1 (16 ounce) can pumpkin
1 teaspoon vanilla extract
1 1/4 cups vegetable oil (yes, 1 1/4 cups)
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
12 ounces semi-sweet chocolate chips (Regular or mini, I like mini best)

Steps:

  • In large mixing bowl beat eggs, sugar, pumpkin, vanilla and oil until smooth.
  • Mix dry ingredients together and mix into pumpkin mixture. Fold in chocolate chips.
  • Fill greased or paper-lined muffin cups 3/4 full.
  • Bake at 400 F for 16-20 minutes.
  • Let cool before taking out of pan.
