- Preheat oven to 350°F and line cookie trays with parchment (if the air temp is on the warmer side, it is a good idea to chill the cookies for 30 minutes before baking, so be sure to plan accordingly).
- In a large bowl, cream the butter & sugar until light and fluffy using a hand mixer.
- Add the egg yolks and vanilla and mix on medium speed until well combined.
- Next, add the flour & salt to the mixture and mix on low speed until large crumbles form.
- Add the 2 tablespoons of milk and mix until the milk is absorbed. If the dough is not sticky, add another TEASPOON of milk until it is sticky and has the consistency of thick buttercream. Avoid using too much milk as this can cause the cookies to spread too much!
- Transfer the dough to an extra large, heavy duty piping bag fitted with a large open star tip.
- Pipe the dough into rosettes by using the following motion; holding the bag upright, pipe the dough onto the tray and pull up slightly, then wrap around the center and pull gently to release.
- Chill if needed.
- Bake in the oven until light golden brown on the edges, about 13 - 15 minutes.
- Allow to fully cool on baking sheet.

- Preheat oven to 350 degrees and very lightly grease a baking sheet or line with a baking mat.
- In a medium bowl whisk together flour, baking soda, and salt. Set aside.
- In a large bowl cream together butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2-3 minutes until light and fluffy. Mix in egg and vanilla until blended.
- Add dry ingredients to wet ingredients and mix until combined (do not over mix). Roll dough into balls (two regular size cookie scoops or about 3 tablespoons, the balls should be fairly big - this is the key to a super soft texture!)
- Roll cookie dough balls in remaining 2 tablespoons sugar, then place on baking sheet 2-3 inches apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
- Bake for 8-9 minutes - DO NOT OVER BAKE. The cookies should just begin to crack on top. Allow to cool 1-2 minutes on baking sheet, then transfer to a cooling rack. Store in an airtight container at room temperature up to 5 days (they are softest on day 1 and 2!).

- Add eggs and vanilla and stir together until well-blended.
- Add sugars and stir well.
- Sift in flour, baking soda and salt and stir together until completely incorporated into the dough.
- Roll into balls and place 2 inches apart on baking sheet or baking stone.
- With a fork, flatten slightly, making a criss-cross pattern on top of cookie. If fork sticks to dough, dip it in flour or sugar.

- Beat the butter, sugar, salt and vanilla together until smooth and creamy.
- Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
- Add the flour and mix just until incorporated.
- Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
- Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
- Before baking, preheat the oven to 325°F.
- Line your baking sheets with parchment.
- Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
- Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
- Note: you can do many things with these cookies.
- You could roll the dough out and cut shapes.
- You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
- You could make them and then dip them half into chocolate.

- Preheat oven to 350 degrees F (325 for convection ovens).
- Beat the butter and sugars on medium speed until fluffy (1-2 minutes). Add the oil, eggs, and vanilla and beat for another minute.
- In a separate bowl, whisk together flour, salt, baking soda, and cream of tartar.
- Slowly mix in flour mixture in two parts, on low until dough is just combined.
- Form dough into a ball and wrap in plastic wrap and refrigerate 4 hours or overnight (this will make for a much flakier, tender texture, and gives time for the flavors to meld and mature. It will also make the dough much easier to handle).
- Cut off sections of dough and roll into 1 inch balls. Place on ungreased cookie sheet spaced apart 2-3 inches.
- Coat the base of a flat-bottomed glass in a thin smear of butter and dip in granulated sugar. Gently press the glass onto each dough ball until approximately 1/4 " thick (can be pressed thinner, which produces a slightly crisper, more delicate cookie).
- Bake on rack in bottom third of oven and bake for 9-11 minutes. Light cookie sheets work best, but if using a dark cookie sheet, adjust oven temp to 325 and begin checking for doneness after 8 minutes or so. Cookies are done when they are *just* starting to darken slightly around the edges. (Try not to overcook--this may produce a "burnt butter" taste. Err on the side of underdone.).

- Prehead the oven to 180C/ fan 160C/ gas 4
- Make sure the butter is softened. Cut in cubes and put it in a large bowl along with the sugar.
- Put an electric whisk on the lowest setting and break the butter up into the sugar. Increase the whisk's speed and mix for about 1 minute until you have a light and creamy mixture.
- Add the eggs, one at a time. Make sure they are mixed well.
- Add the baking powder and flour and mix gently with your hands until everything is mixed well.
- Add the zest of the lemon and the pieces of white chocolate.
- Put a grease proof paper in a baking tray. Make small balls out of the dough and press them gently on the tray until they are about 0.5cm tall.
