1 dash fresh ground pepper
2 cloves garlic, minced

Steps:

  • Combine all ingredients in electric blender; process until smooth.
  • Cover and chill (or freeze up to 1 month).
  • Yield: 2/3 cup.

1 red bell peppers, seeded and chopped
10 ajies dulces peppers, tops removed
3 medium tomatoes, chopped
4 onions, cut into large chunks
3 medium heads garlic, peeled
25 cilantro stems (with leaves)
25 recao stems (with leaves)
1 tablespoon salt
1 tablespoon black pepper

Steps:

  • In a food processor, combine green peppers, red peppers ajies dulces, tomatoes, onions, and garlic. Add cilantro, recao, salt, and pepper. Process to the consistency of semi-chunky salsa (not watery). Place in a resealable plastic freezer bag, and use as needed, or freeze in portions.

1 sweet red pepper, seeds removed
2 large tomatoes
2 medium onions, peeled
1 head garlic, peeled
1 bunch cilantro leaf
1/2 bunch fresh parsley leaves
1 jalapenos (to taste and optional) or 1 habanero chili pepper (to taste and optional)
1 tablespoon olive oil (this will help with the consistancy)
salt (optional)
fresh black pepper

Steps:

  • Chop ingredients into chunks that are small enough to fit into a food processor or blender. Process until smooth or desired consistency.
  • Note 1: If your food processor is not large enough to hold all of the ingredients, transfer into a large mixing bowl and repeat.
  • Note 2: May be frozen. Divide mixture into ice cube trays or plastic containers and freeze.

12 scallions, white and light green part only, finely chopped
1 small yellow onion, finely chopped
1 large tomato, cored and chopped
1/2 cup chopped cilantro leaves
Salt and freshly ground black pepper

Steps:

  • Heat the oil in a medium skillet over medium heat. Add the scallions, onions and tomato. Cook until the onions are soft and golden and the tomatoes have broken down, about 10 minutes, stirring often. Add cilantro, and salt and pepper.
  • Transfer to a bowl. Use warm or at room temperature.

1 large Spanish onion, finely diced
5 aji dulce or 1 red bell pepper, stemmed, seeded and finely diced

5 leaves recao (culantro), chopped
2 tablespoons olive oil
1 pound snapper fillets
Kosher salt and freshly ground black pepper

Steps:

  • Combine the green bell pepper, onion, aji dulce, garlic, 1/2 cup of the cilantro and the recao in a medium bowl. Set aside.
  • Heat the oil in a large skillet over high heat. Season both sides of the snapper with salt and pepper. Add the snapper to the pan and cook until golden brown, about 4 minutes per side. Transfer the snapper to a platter.
  • Lower the heat to medium, add the vegetable mixture and cook, stirring, until the onion is translucent, 2 to 3 minutes. Season to taste with salt and pepper and finish with the remaining 1/4 cup cilantro. Pour the sofrito over the snapper and enjoy.

1 medium onion, chopped
1 green bell pepper, seeded and chopped
5 cloves garlic, chopped
1 teaspoon salt
¼ teaspoon pepper

2 bay leaves
2 tomatoes, chopped
¾ cup canned tomato sauce

Steps:

  • Heat oil in a skillet over medium-high heat. Add onion and garlic, and cook until onion is translucent. Add the bell pepper, and saute until tender. Season with salt, pepper, cumin, oregano and bay leaves. Continue cooking until the mixture looks like a yummy green paste with oil around it. Stir in the tomatoes, if using, and cook stirring until all of the liquid is released. Gradually stir in the tomato sauce simmer until the sauce looks really red. Taste, and adjust seasonings if desired. Remove bay leaves.
  • Now the sauce is done. You can add it to meat, rice, beans fish or potatoes. Thin the sauce down if necessary with water, wine, beer, or whatever is handy.

  • Coarsely chop tomatoes, peppers, and onions. Combine with garlic and cilantro. In batches, pulse mixture in a food processor until finely chopped. In a large pot, heat olive oil over medium-high until shimmering. Add mixture and cook, stirring occasionally, until thickened and reduced, 25 to 30 minutes (reduce heat if browning at edge).
