SNOWMAN CHEESE BALL
This frosty fellow is always welcome at a winter gathering, according to Susan Seymour of Valatie, New York. He's very tasty, too--and gets a little zip from horseradish and garlic.

- In a large bowl, beat the cream cheese until smooth. Stir in the dried beef, onions, horseradish and garlic powder until blended. Shape into two balls, one slightly larger than the other. Roll each in parsley. Cover and refrigerate 8 hours or overnight., On a serving plate, place the smaller cheese ball on top of larger cheese ball, forming a snowman. Set aside 1 teaspoon spreadable cream cheese. Carefully cover snowman with remaining spreadable cream cheese. , Arrange cranberries for eyes and buttons. Insert carrot for nose and pretzel sticks for arms., Place a small dab of reserved cream cheese on top of large cracker. Top with a butter-flavored cracker. Repeat with three remaining butter-flavored crackers. Place on top of snowman. Serve with crackers.

Steps:
- Mix first 5 ingredients until blended. Refrigerate 1 hour.
- Divide cheese mixture into 3 different-size balls (1 small, 1 medium and 1 large). Coat with Parmesan. Arrange in line on serving plate to resemble a snowman lying down. (Largest ball should be at bottom of plate for the snowman's base, and the smallest ball should be at the top for the snowman's head.)
- Decorate with remaining ingredients to resemble photo.

SNOWMAN CHRISTMAS CHEESE BALL RECIPE
Steps:
- Let cream cheese and sharp cheddar come to room temperature. In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese, cheddar cheese and ranch dressing mix.
- Divide cheese mixture and form one smaller cheese ball for the head and one larger cheese ball for the body. Transfer cheese mixtures to two separate sheets of plastic wrap. Refrigerate for at least 4 hours, or overnight. Can be made several days ahead.
- Right before serving, press shredded cheese into cheese ball. Place on a serving plate and place smaller cheese ball onto larger cheese ball. Slice the tip off of a baby carrot and press into cheese ball to make a nose. Use whole peppercorns for mouth, eyes and buttons. Serve with crackers.

- Directions For the cheese ball Place ingredients in bowl and beat with an electric mixer until all ingredients are mixed together well. Divide cheese mixture into two sections-one larger for the snowman's body and one smaller for the head. Wrap in plastic wrap and shape into balls. Refrigerate for two hours or until well chilled. For frosting and decorating the cheese ball Beat together sour cream and 2 ounces cream cheese with an electric mixer until smooth. Refrigerate until ready to use. Before removing cheese balls from plastic wrap, re-form cheese into round balls. This will be easier to do after the cheese has chilled. Place larger cheese ball onto serving tray in desired spot. If you would like, place small pieces of parchment paper around base of cheese ball to protect tray from getting messy during frosting. Place two wooden skewers into the center of the cheese ball to secure the head. Gently place head on the cheese ball body. After the head and body are attached, begin frosting the cheese ball. Using a small, offset spatula, completely cover the outside of the snowman with the chilled sour cream frosting. Finish the face, and dress the snowman using the remaining ingredients. Make sure his hat is jaunty!
MAKE-AHEAD SNOWMAN CHEESE BALL
This is so cute when decorated and can be made up to a month ahead of an event and stored in the freezer to decorate the day of!

Steps:
- Mix 3 pkg cream cheese and the Cheddar cheese; divide into 3 equal parts.
- Combine 2 parts to equal 2/3 of mixture.
- Mix in pesto.
- Mix onion, mustard and pepper sauce into remaining 1/3 mixture.
- Cover each cheese mixture and refrigerate about 4 hours or until firm enough to shape.
- Shape each cheese mixture into ball.
- Wrap each ball, label and freeze.
- May be frozen up to 1 month ahead.
- About 12 hours before serving, remove balls from freezer.
- Thaw in wrappers in refrigerator.
- Arrange balls on serving plate with smaller ball on top for head of snowman.
- Frost snowman with whipped cream cheese before serving.
- Decorate as desired.
- Serve with crackers.
- Store covered in refrigerator.
- To decorate, if desired, use your imagination to decorate this whimsical snowman!
- You can use fresh rosemary and dried cranberries (crown), chopped olive pieces or raisins (eyes and buttons), pimiento or red bell pepper (mouth), radicchio or carrot ribbon (scarf), and asparagus spears or celery sticks (arms).
