GARLIC BUTTER FILET MIGNON



Garlic Butter Filet Mignon image

This Garlic Butter Filet Mignon is the most tender & delicious cut. Smothered in garlic butter, it melts in your mouth. A great easy family dinner idea or perfect for a romantic dinner in that is ready in under 30 minutes.

Number Of Ingredients 7

4-6 cuts of Filet Mignon (you want them close in the skillet)
2-3 tbsp worcestershire sauce
2 tsp salt (divided between all of the pieces)
2 tsp pepper (divided between all of the pieces)
2 tsp granulated garlic (divided between all of the pieces)
4-6 tsp Italian Garlic Butter (for serving)
sprinkle of parsley (for serving)

Steps:

  • Preheat oven to 450 degrees.
  • Take your meat out of the refrigerator & let sit for at least 30 minutes.
  • Unwrap & pat dry - the meat will seer better when dry.
  • Place in a seasoned cast iron skillet close together but not touching.
  • Add in your Worcestershire sauce, salt, pepper & granulated garlic.
  • Cook on each side approx 3-4 minutes. (place & leave it- don't move it, let it seer)
  • Once the meat has browned on all sides, it's time to move to the oven & cook 7-8 minutes.
  • Remove & immediately add your garlic butter & parsley to the top of each piece.

This recipe is similar to the recipe used by Massa's restaurant in Houston. They serve it with their pan roasted fresh vegetable medley (also posted this recipe separately). It's so simple and quick, but impressive, that it's a great recipe for entertaining. Note: I had to give a cooking time, but that varies depending on whether you are grilling steaks (also how thick your steaks are) or if you are roasting the tenderloin.

2 lbs beef tenderloin or 2 lbs steaks
1/2 cup extra virgin olive oil
1 tablespoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon blackening seasoning
salt & pepper

Steps:

  • Clean and prepare filet.
  • Mix all marinade ingredients together.
  • Place in zip bag with tenderloin and let sit at room temperature for 30 minutes.
  • Cook to desired temperature (roast or grill).
  • Serve with demi-glace or brown gravy.
  • Can top with sauteed mushrooms, if desired.

cracked black pepper
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons dried rosemary
1 tablespoon butter
2 cups onions, slices
1 teaspoon white sugar
4 ounces blue cheese, crumbled

Steps:

  • Season steaks with seasoned salt and black pepper, and arrange in a single layer in a large baking dish.
  • In a bowl, whisk together olive oil, balsamic vinegar, mustard, and rosemary.
  • Pour mixture over filets, and turn to coat. Marinate for up to 30 minutes.
  • While you are marinating the meat, melt the butter in a skillet over medium heat.
  • Cook onion slices in butter until soft, then stir in sugar. Continue cooking until onions are caramelized. Set aside.
  • Preheat grill for high heat on one side, and medium heat on the other side.
  • Lightly oil the grill grate. Place steaks on the hot side of the grill, and cook for 10 minutes, turning once.
  • When the steaks are almost done, move to the cooler side of the grill.
  • Top each filet with a quarter of the caramelized onions and blue cheese. Close the lid, and continue cooking until the cheese is melted.

2 filet mignon
2 tablespoons vegetable oil
1 tablespoon coarsely ground sea salt
1 tablespoon coarsely cracked black peppercorns
2 tablespoons unsalted butter, at room temperature (optional)
1 1/2 lbs mixed wild mushrooms, such as crimini, shiitake, porcini, and portobello
1/2 cup e.v. olive oil
1 cup chopped leek (3 large)
4 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
3 tablespoons chopped garlic
1 generous cup chopped flat leaf parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large, well-seasoned cast iron skillet over high heat until very hot, 5 to 7 minutes.
  • Meanwhile, pat the steaks dry with a paper towel and brush them lightly with vegetable oil. Combine the salt and cracked pepper in a shallow bowl and roll the steaks in the mixture, pressing lightly to evenly coat all sides.
  • When the skillet is ready, add the steaks and sear them evenly on all sides for about.
  • 1 - to -1 1/2 minutes per side.
  • Top each steak with a tablespoon of butter and place the skillet in the oven. Cook the steaks until they reach 120 degrees F for rare or 125 degrees F for medium-rare on an instant-read thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.).
  • Remove the steaks to a serving platter, cover tightly with aluminum foil and allow to rest at room temperature for 10 minutes.
  • Brush the caps of each mushroom with a clean sponge or damp paper towel. Remove and discard the stems. Slice the small mushrooms thickly and cut the large ones in a large dice.
  • Heat the olive oil in a large (11 - inch) Dutch oven or saucepan. Add the leeks and cook over low heat for 5 minutes, or until the leeks are translucent. Add the butter, mushrooms, salt, and pepper and cook over medium heat for 8 minutes, until they are tender and begin to release their juices, stirring often. Stir in the garlic and cook for 2 more minutes. Toss in the parsley, sprinkle with salt, and serve warm.

Steps:

  • in skillet heat 2 tbsp butter with oil.
  • add mushrooms, garlic and onions, cook until lightly browned, remove, season with thyme,, salt, pepper.
  • add the rest of the butter and oil to skillet, brown fillets about 5 minutes per side for medium rare, remove.
  • add madeira to pan, reduce by half.
  • add broth and reduce, add cream and stir to thicken.
  • add mushrooms back to pan, add filets to warm through.
