- I don't think anyone needs a lesson in how to build a s'mores, but here's the idea...
- Using a stick, long grilling fork, or wood skewer, stick on a marshmallow and roast over an open flame for 30-60 seconds, or until toasted.
- Place roasted marshmallow between 2 graham crackers (or cookies, etc) lined with chocolate (or other toppings) Devour immediately.
INDOOR S'MORES
When our restaurant Tru won its first 4-star review, my partners and I thanked the staff with a "staff meal" of caviar, champagne and foie gras. So when the second 4-star review came in, we were stuck for a way to celebrate! We decided to go the other extreme, with a feast of the best bratwurst (a Chicago classic), beer and s'mores. I think we got even more respect for the second meal than we did for the first. It takes nerve for 4-star chefs to serve s'mores! My dear friend Karen reintroduced me to the molten, aromatic pleasures of this childhood treat. Just combine three bite-size ingredients - graham crackers, milk chocolate and marshmallow - and apply heat. Add your own summer camp memories and serve immediately.

Steps:
- Preheat the oven to 400 degrees F.
- Lay 1/2 of the graham crackers on a cookie sheet. Top with chocolate pieces to cover. Use kitchen scissors to snip the marshmallows in 1/2 horizontally if using miniature crackers and place 1/2 a marshmallow on top of each graham cracker. If using regular size crackers use a whole marshmallow.
- Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.

- The Dirty Pillow. The dirty pillow is the trick of inserting a square of chocolate inside the marshmallow that you roast. With the chocolate tucked in the middle, you'll want to insert your roasting stick a little to the side of the marshmallow.
- Add Peanut Butter. Okay, seriously I cannot believe in my entire childhood it never occurred to me to put peanut butter on a s'more. I'm ashamed. Make sure the same doesn't happen to your poor children.
- Use Rollos Instead of Plain Chocolate. Instead of stuffing your marshmallow with a piece of chocolate, why not stuff it with a Rollo? The candy is perfectly shaped for stuffing in a marshmallow.
- Use Nutella Instead of Chocolate. Another way to avoid a cold, hard chocolate bar in your s'more is to use a chocolate spread instead of a bar. And if you use Nutella, you'll get that added creamy hazelnut flavor as well.
- Use Ritz Crackers for the Sandwich. S'mores are a near perfect feat of a dessert, but if they're missing one thing it's salt. If salty and sweet is what you live and die for, this is the new way you must make all of your s'mores.
- Add a Layer of Jam. Spread a layer of jam on your graham crackers before you make your s'more. Chocolate, jam, and marshmallow are already a winning combination, but you could also add a layer of peanut butter for a PB&J s'more.
- Add Fruit. Instead of jam, you could add fruit to your sandwich. Sliced strawberries or raspberries would be delicious, for example. To really go over the top, you could skewer a piece of pineapple and roast it over the fire along with your marshmallow, and add that to the s'more.
- Use Andes Mints. Using an Andes Mint instead of a regular piece of chocolate will give you a mint-chocolate s'more. The thinness of an Andes means it melts easily when sandwiched with warm marshmallow, but you could also employ the dirty pillow method here.
- Use White Chocolate. Haters will protest. If you or your kid love white chocolate, I say, go forth! Make your marshmallow with white chocolate instead of milk chocolate.
- Make a Brownie S'more. I've now become convinced that our Food Director Rhoda developed these sheet-pan brownie thins specifically for the purpose of making a brownie s'more.
