GLUTEN-FREE SHAKE AND BAKE ALMOND CHICKEN
This is my go-to recipe when I'm in a hurry. It's so easy, and yet so good. Because of the coating, the chicken is always extra juicy. Kids can't tell they're nuts (looks like breading) and love it. It's healthy (and grain-free for those with allergies). Everyone asks me for the recipe...that's my cue to add it to Allrecipes!

FLOUR SHAKE AND BAKE FOR CHICKEN
A good flour only shake-and-bake recipe, with seasonings, for a nice change from crumb coatings. For variation you can add 1/2 teaspoon of any one or more of the following: basil, garlic powder, onion powder, poultry seasoning, sage, or dried leaf thyme. Add 1 teaspoon curry powder with the flour mixture for a spicier coating.

Steps:
- Preheat oven to 450*F.
- Mix flour, salt, paprika, sage and pepper together in a bag. Add chicken parts in a bag and shake until well coated.
- Melt butter/margarine in a 9x13 inch baking dish in the preheated oven. Place chicken in the baking dish skin side down and bake for 20 minutes. Turn pieces and bake another 20 minutes until tender and juices run clear.
- My Note: I used skinless, boneless chicken breasts because some of my family isn't fond of bone-in chicken. GOOD LUCK with that one kid! This was very good and very easy to adapt to your own tastes by adding whatever spices you like. Next time I will add a dash of cayenne pepper. Will I did have some boneless chicken breasts ?, so I cut the cooking time by half and also used half the butter. I doubled the spices but not the flour as well per all the other kids request it. Chicken was juicy and very good. All the kids raved about it! Quick and easy. Will make again!
- I've cooked chicken a million different ways. (Slight exageration, maybe.) But, this is the best "fried" chicken ever! I'll never go back to the pan fried again. I cooked it per the recipe, except I doubled the recipe and used a package of six leg quarters. I separated the legs and thighs and had to use two pans. (Quite reasonable at $.69/lb.) The coating was as if it was fried and had a beautiful golden/brownish color. My octogenarian family raved about it as soon as it hit the table. My wife made excellent gravy. The kid's are good with gravy only out of a jar. The flavor was great! This is now my new staple.
- I used bone in breasts and I tried 1 with the skin on and 1 with the skin off. I liked the one without skin better as it allowed the seasonings to really penetrate the meat. The meat stayed so moist. I doubled all the spices, didnt use sage and added a touch of cayenne pepper. I also added onion powder and garlic powder.

- Place the cornflakes in a food processor and process until they are crumbs. You should end up with about a 1/2 cup of cornflake crumbs.
- Add in the rest of the ingredients. This can either be done in the food processor, or the remaining ingredients can be stirred into the crumbs by hand.
- To use, put your crumb mixture in a bag (I use a large ziploc bag). Moisten chicken pieces with water. Put one or two chicken pieces at a time into the bake and shake to coat with the crumb mixture. Place the coated chicken pieces on a foil lined baking sheet. Bake at 400 degrees. Larger pieces will take about 30 to 40 minutes, and smaller pieces will take 20 to 30 minutes.

- Combine the almond flour, almonds, salt, paprika and pepper in a blender or food processor and pulse until the almonds are in small pieces (half a pea, or smaller), about 4-6 times. Make sure not to over-process, or to process for longer spurts, otherwise, the almonds will release their oils and you’ll make almond butter. Pour this into a shallow dish.

- Mix the flour and water together in a large bowl to make a shaggy dough. Using your hands begin kneading the dough in the bowl until it forms a ball. Dump the dough out onto a clean work surface and knead the ball of dough well for 5 - 8 minutes. If the dough is too sticky, sprinkle the dough with flour as needed. Alternatively, if you have a mixer with a dough hook you can use this to knead the dough.
- Put the kneaded dough ball in a large clean bowl and cover it with cool water. Let rest in the water for 1 - 2 hours or overnight.
- Wash 1: drain the water off of the dough ball, then cover the dough with fresh room temperature water. Squeeze the dough under the water, squishing it between your fingers. The dough will be tough at first but will quickly soften and feel slimy. Continue squishing the dough until the water for 3 - 5 minutes is opaque thick milky white, this is the starch separating from the gluten. Drain off the starchy water. You can either discard the water or save it to use to make vegan bacon!Saving the starchy water: let the water sit overnight. The starch and water will separate. You will see the yellow water on top, and the white starch which will sink to the bottom. Pour off and discard the water leaving behind just the starch. Store the starch in an air-tight container in the fridge for up to a week or it can be frozen to use later.
- After the dough has rested for 10 - 20 minutes, gently stretch the dough into a long rectangle. Use a pair of scissors or a knife to cut the dough lengthwise into three strands leaving the top attached. Braid the dough, gently stretching it as you go. Tuck the loose ends into the braid. Gently stretch the braid and then tie it into 1 - 2 knots, tucking in any loose ends. Stretching, braiding, and knotting the dough will give the dough long stringy textures that mimic the muscle fiber texture of chicken.
