GRILLED SHEET PAN S'MORES



Grilled Sheet Pan S'mores image

30 whole graham crackers
One 13-ounce jar chocolate spread
16 ounces marshmallow cream
8 ounces mini marshmallows
One 10-ounce bag caramel chips
12 ounces bittersweet chocolate chips
8 ounces toffee bits

Steps:

  • Preheat a gas or charcoal grill to medium heat and line a sheet pan with aluminum foil.
  • Spread 15 graham crackers with chocolate spread and line them up on the prepared sheet pan. These will be the sandwich bases.
  • Using 2 spoons, dollop the marshmallow cream evenly on the chocolate-spread graham crackers. Sprinkle the mini marshmallows evenly across the graham crackers. Do the same with the caramel chips, chocolate chips and toffee bits. Top each bottom cracker with a top cracker to create a sandwich.
  • Place the sheet pan on the grill. If your grill has a lid, close it. If your grill does not have a lid, flip a second sheet pan over and rest on top of the pan of s'mores to create a lid. Cook until everything is deliciously melted, about 25 minutes. Serve warm.

S'MORES CRISPY RICE TREATS



S'mores Crispy Rice Treats image

When I think of trips, I think of camping, and when we go camping, we make s'mores. It's one of my childhood favorites.

One 10-ounce bag mini marshmallows
One 10-ounce bag bittersweet chocolate chips
2 cups crushed graham crackers
Nonstick cooking spray, for the pan
3 tablespoons unsalted butter
6 cups crispy rice cereal, such as Rice Krispies

Steps:

  • Set aside 1 cup marshmallows, 3/4 cup chocolate chips and 1/2 cup crushed graham crackers to top the treats with.
  • Lightly spray an 8-inch square metal baking pan with nonstick spray. Cut out an 8-inch-wide strip of parchment paper and use it to line the pan, leaving enough overhang on the sides so you can use the flaps to lift out the treats. Lightly spray the parchment with nonstick spray.
  • In a large nonstick pot over medium heat, add the butter. Swirl around until melted, then dump in the marshmallows. Stir gently with a spatula until the marshmallows have completely melted, about 90 seconds. Remove the pot from the heat, then add the rice cereal and stir until combined. Let cool slightly, then add the crushed graham crackers and fold in gently. Add the chocolate chips and mix just barely until folded in (if you mix too much, the chocolate will melt completely).
  • Dump the mixture into the lined pan and press down gently so the mixture is evenly distributed in the pan. While still warm, sprinkle with the reserved marshmallows, reserved chocolate chips and reserved crushed graham crackers. Using a creme brulee torch, toast the marshmallows and melt the chocolate evenly, using a sweeping motion so the marshmallows don't catch fire, about 45 seconds.
  • Allow to cool completely, about 30 minutes.
  • Slice into squares using a warm, sharp knife and serve.

4-INGREDIENT S'MORES PIE



4-Ingredient S'mores Pie image

This gooey and chocolaty pie tastes just like the campfire treat.

14 ounces milk chocolate chips
3/4 cup heavy cream
One 9-inch prepared graham cracker crust
15 marshmallows

Steps:

  • Combine the chocolate chips and cream in a large microwave-safe bowl and heat for 2 1/2 minutes. Stir until completely smooth (the chocolate may appear separated at first, but just keep stirring). Pour into the prepared pie crust, loosely cover with plastic wrap and refrigerate until set, about 4 hours or up to overnight.
  • Preheat the broiler.
  • Use kitchen shears to cut each marshmallow in half, on a bias, from one corner to the opposite corner. Arrange the marshmallow halves, cut-side down, on top of the chilled pie. Broil until golden, watching closely and rotating the pan as needed, about 1 minute. Let the pie cool completely, then cover loosely with plastic wrap and return to the fridge until the ganache sets again, 1 to 2 hours.

ITALIAN S'MORES



Italian S'mores image

1 baguette, cut into 24 (1/2-inch thick) slices
3 tablespoons butter, melted
3 tablespoons sugar
2 (3-ounce) bars gianduja chocolate or semisweet chocolate with hazelnuts, broken along the indentations into 24 pieces
24 large marshmallows

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a large baking sheet with a silicone baking mat, parchment paper, or foil. Arrange the bread slices on the baking sheet. Generously brush the butter over the bread slices. Sprinkle the slices with sugar. Bake until the crostini are crisp and golden, about 15 minutes.
  • Arrange the chocolate pieces in a single layer atop the crostini. Skewer 1 marshmallow onto each of 6 skewers. Roast the marshmallows directly over a campfire until toasted to desired doneness. Push 1 roasted marshmallow atop the chocolate on each crostini and serve. Repeat to make 24 s'mores total.
  • Alternative: Chocolate-hazelnut spread (such as Nutella) may be used instead of the chocolate bars. To do so, omit coating the bread slices with sugar before baking them, and spread about 2 teaspoons of the chocolate-hazelnut spread over each crostini before topping it with the roasted marshmallows.

3/4 cup marshmallow creme
1/2 cup plus 2 tablespoons chilled heavy cream
1 cup crushed graham crackers, plus 1 graham cracker sheet, broken into rectangles, for garnish
1 1/2 cups chocolate pudding
4 jumbo marshmallows
4 rectangles from a 1.55-ounce chocolate bar

Steps:

  • Put the marshmallow creme and 2 tablespoons of the heavy cream in a large chilled bowl. Use a hand mixer to beat until the creme is loosened, smooth and shiny. Add the remaining 1/2 cup heavy cream to the bowl and whip to medium peaks, starting on low and then changing to medium speed.
  • Put 2 tablespoons of crushed graham crackers in the bottom of each of four 9-ounce plastic tumbler cups. Top with 3 tablespoons marshmallow whipped cream, then 3 tablespoons chocolate pudding. Repeat so you have another layer of each ingredient. Refrigerate until ready to serve.
  • When ready to serve, place the marshmallows onto skewers. Toast the marshmallows over a hot grill (or on the stove top).
  • Place a toasted marshmallow on top of each s'mores cup. Garnish each with a piece of chocolate bar and graham cracker.

TRADITIONAL S'MORES

8 full honey-flavored graham cracker sections (can substitute cinnamon-flavored graham crackers or chocolate-flavored graham crackers)

Mini chocolate chips
Whipped cream
Bananas
Chocolate candy pieces (recommended: M&M's)

Steps:

  • Preheat a grill to medium. Alternatively, you can roast the marshmallows over an open fire.
  • Break each graham cracker section in half. Divide chocolate bar into 8 equal parts. Place each chocolate piece on top of half of a graham cracker.
  • Divide marshmallows among several long skewers, spacing them far enough apart so that they won't melt together. Place marshmallows on grill and cook over medium heat, turning slowly, until golden brown. Carefully remove marshmallows from skewers and set on top of chocolate pieces. Add toppings of your choice. Place the other half of the graham cracker on top to form the perfect S'more.

Indoor S'mores image

When our restaurant Tru won its first 4-star review, my partners and I thanked the staff with a "staff meal" of caviar, champagne and foie gras. So when the second 4-star review came in, we were stuck for a way to celebrate! We decided to go the other extreme, with a feast of the best bratwurst (a Chicago classic), beer and s'mores. I think we got even more respect for the second meal than we did for the first. It takes nerve for 4-star chefs to serve s'mores! My dear friend Karen reintroduced me to the molten, aromatic pleasures of this childhood treat. Just combine three bite-size ingredients - graham crackers, milk chocolate and marshmallow - and apply heat. Add your own summer camp memories and serve immediately.

32 miniature graham crackers or 8 regular size graham crackers, broken in 1/2
2 milk chocolate bars, the kind that can be broken into squares
8 marshmallows

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay 1/2 of the graham crackers on a cookie sheet. Top with chocolate pieces to cover. Use kitchen scissors to snip the marshmallows in 1/2 horizontally if using miniature crackers and place 1/2 a marshmallow on top of each graham cracker. If using regular size crackers use a whole marshmallow.
  • Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.
