S'MORES COOKIE BARS



S'mores Cookie Bars image

Quick, easy and delicious, these bars have all the flavours of S'mores, in cookie bar form. Great for BBQs, picnics or bake sales.

Number Of Ingredients 9

2 cups all purpose flour
2 cups graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
1 cup unsalted butter (at room temperature)
1 1/2 cups light brown sugar (packed)
2 large eggs (lightly beaten)
2 cups mini marshmallows (heaping)
1 1/2 cups semi-sweet chocolate chunks (a bit more if using chocolate chips)

Steps:

  • Preheat oven to 350 F. and grease and line a 9x13 baking pan with parchment paper, ensuring that the paper along the long sides extends above the pan a bit, to act as handles to remove from the pan later. Set aside.
  • In a large bowl, whisk together the flour, graham cracker crumbs, baking powder and salt. Set aside.
  • In a large bowl with an electric mixer or in the bowl of a stand mixer with a paddle attachment, beat together the butter and brown sugar until light and fluffy, about 2 minutes. Scrape down sides of bowl. Add eggs and beat until well combined. Reduce mixer to low and slowly beat in the flour mixture until combined.
  • Remove and set aside about 1/4 of the dough. Press the remaining dough into the prepared pan to form a thin, even layer on the bottom of the pan. Top with chocolate chunks, then marshmallows. Scatter the reserved dough over-top in clumps. It won't/shouldn't cover the entire top, as you want the chocolate and marshmallows to show through the top.
  • Bake in preheated oven until golden brown, about 30-35 minutes. Set pan on a wire rack to cool completely, then lift out of pan by grabbing the parchment paper. Remove to a cutting board. Trim the outside edges, if desired, then cut into squares.

1 stick unsalted butter, plus more for greasing, at room temperature
2/3 cup brown sugar
1 1/2 teaspoons vanilla extract
2 eggs
1 1/3 cups flour
1 1/4 cups graham cracker crumbs
1 teaspoon baking powder
1 teaspoon kosher salt
Heaping 1/3 cup semisweet chocolate chips
Heaping 1/3 cup mini marshmallows

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-8-inch baking dish with butter.
  • In a large bowl combine the butter and brown sugar. Using a hand mixer, blend until fluffy, about 2 minutes. Add the vanilla extract and eggs and mix on medium speed until combined, about 1 minute.
  • In a separate bowl combine the flour, graham cracker crumbs, baking powder and salt. With the mixer running, slowly add the dry mixture into the wet mixture, and mix until a dough forms.
  • Transfer the dough to the prepared baking dish and pat out in an even layer to cover the bottom of the pan. Top the dough with the chocolate chips and marshmallows.
  • Bake until the marshmallows are browned and the dough is cooked through, 20 to 25 minutes. Cool to room temperature, then slice into 2-by-2-inch squares.

9 graham cracker squares
½ cup butter, melted
½ cup brown sugar
2 cups miniature marshmallows
1 ½ cups chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line an 8x8-inch square pan with aluminum foil, leaving a 1-inch overhang on sides.
  • Crumble graham crackers in a bag; pour into a bowl. Stir in butter and brown sugar until well mixed. Press graham cracker mixture into bottom of pan to form crust.
  • Bake in preheated oven until crust is lightly browned and smells toasted, about 7 minutes.
  • Remove pan from oven; cover crust evenly with marshmallows. Sprinkle chocolate chips over marshmallows.
  • Bake in preheated oven until chocolate chips are melted and marshmallows are browned, about 3 minutes.
  • Let s'mores rest in pan until cool, about 30 minutes. Refrigerate until set, about 45 minutes. Remove from pan and cut into squares.

1/4 cup butter, cubed
1 package (10 ounces) miniature marshmallows
6 cups Rice Krispies
1-1/2 cups crushed graham crackers
1 cup milk chocolate chips
FROSTING:
3/4 cup butter, softened
1 cup confectioners' sugar
1 jar (7 ounces) marshmallow creme
TOPPING:
1/4 cup crushed graham crackers
2 milk chocolate candy bars (1.55 ounces each)

Steps:

  • In a 6-qt. stockpot, melt butter over medium heat. Add marshmallows; cook and stir until melted. Remove from heat. Stir in cereal and crushed crackers. Fold in chocolate chips. Press into a greased 13x9-in. baking pan. Cool to room temperature., For frosting, in a small bowl, beat butter and confectioners' sugar until smooth. Beat in marshmallow creme on low speed just until blended. Spread over bars. Sprinkle crushed crackers over frosting. Cut into bars. Break each candy bar into 12 pieces; place a piece on each bar.

No-Bake S'mores Bars image

Nonstick cooking spray, for the pan
4 tablespoons salted butter
One 10-ounce bag mini marshmallows
One 12-ounce bag semisweet chocolate chips
Pinch of kosher salt
9 graham crackers, broken into pieces
1/4 cup mini chocolate-coated candies
2 tablespoons rainbow sprinkles

Steps:

  • Line a 9-inch square baking pan with waxed paper, overlapping all 4 sides. Spray with cooking spray.
  • Place a nonstick pan over low heat and add the butter. When melted, add two-thirds of the marshmallows and cook, stirring, until the marshmallows have melted and combined with the butter, about 3 minutes. Next, fold in the chocolate chips and stir until they are melted too. Add the salt and half of the broken graham crackers and stir so the cracker pieces are incorporated into the chocolate marshmallow mixture but not broken up too much.
  • Tip the mixture into the prepared pan and press it into the pan with a wooden spoon. Sprinkle over the remaining graham crackers and marshmallows, pressing them down with your hands so they set into the base. Next, add the coated candies and sprinkles and press them down.
  • Allow to set for 1 hour before removing from the pan and cutting into bars. Or you can chill for 10 minutes and slice if you're in a hurry!

Steps:

  • 1. Heat oven to 350°F Grease 8-inch square baking pan.
  • 2. Beat butter and sugar in large bowl until light and fluffy. Add egg and vanilla; beat well. Stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of dough into prepared pan.
  • 3. Arrange chocolate bars over dough, breaking as needed to fit. Spread with marshmallow creme. Scatter bits of remaining dough over marshmallow; carefully press to form a layer.
  • 4. Bake 30 to 35 minutes or until lightly browned. Cool completely in pan on wire rack. Cut into bars. 16 bars.

3/4 cup margarine or 3/4 cup butter
3 cups graham cracker crumbs (wafer)
1 (6 ounce) package semi-sweet chocolate chips (1 cup)
1 cup butterscotch chips
1 cup mini marshmallows
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • In 13" x 9" baking pan, combine margarine with crumbs; press to form even layer.
  • Evenly sprinkle with chocolate chips, then butterscotch chips, then mini marshmallows.
  • Pour condensed milk evenly over mixture.
  • Bake 25 minutes or until bubbly.
  • On wire rack, let cool completely.
  • Cut into squares. (For easier cutting, refrigerate for 1 hour).

Beat for about 2 minutes until smooth and combined, then add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed. Set aside.
  • Toss the flour, graham cracker crumbs, and baking powder together until combined. With the mixer running on low, slowly add the dry ingredients into the wet ingredients. Mix until combined.
  • Press 2/3 of the graham cookie dough into prepared pan. Spread the marshmallow creme on top. This will be tricky since the marshmallow creme is so sticky, but do the best you can to get an even layer. (Sometimes I spray the bottom of a spatula with nonstick spray to spread it around.) Sprinkle the marshmallow creme with chocolate chips. Mold the remaining cookie dough into flat pieces and layer on top of the chocolate chips. You won’t have enough dough to make one single layer, so some chocolate chips will be exposed. That’s ok.
