I love it when comfort food and 'healthy' come together in one dish. Like in this full bodied nutritious vegetarian split pea soup. It's loaded with vegetables, well seasoned and satisfying. Smooth or chunky. Your choice. If you are too lazy to chop vegetables (like me), use a food processor for a great shortcut.

1 tablespoon olive oil or vegetable oil ((or half oil, half butter))
1 medium to large sweet onion
3 large carrots, peeled
3 -4 celery ribs, scrubbed
3 garlic cloves, peeled
7 cups vegetable broth ( (I use one box plus 3 cups water))
2 cups (390 grams) green split peas ((or yellow split peas or mix of the two))
1/3 cup (16 grams) chopped fresh dill
1 -2 bay leaves
1 1/2 teaspoon kosher salt ((or more to taste - depends on saltiness of broth))
1/2 teaspoon black pepper
1 tablespoon fresh thyme ((or 1 1/2 teaspoon dried))

Steps:

  • CHOP VEGETABLES: Option #1: Dice carrots, celery and onion into 1/2 inch/1.3cm pieces - and mince the garlicOption #2 (shortcut): Cut vegetables into 2 inch/5 cm pieces and pulse them in the processor (this is a big shortcut so my preference!). I process onions in one batch, then carrots, garlic and celery in another. I leave a few larger chunks of carrots and celery to have some vegetables that hold their shape in the finished soup. If you plan to blend the soup into a purée, however, there's no need.
  • COOK ON STOVE TOP: (see Note 1 and 2 for other cooking methods)Sauté veggies: Heat oil on medium heat in a large pot. Add onions and sauté 3 minutes. Add celery and carrots and garlic and sauté 4-5 minutes. Shortcut: skip this step (and skip the oil) and just add everything to the pot and cook. Sautéing adds flavor though.Add broth and seasonings, then cook: Add peas, broth, water, dill and seasonings to pot. Bring to boil. Reduce heat, cover and simmer on medium low (3/10) for 1 1/2-2 hours, until vegetables and peas are soft. If too watery, continue to cook for 15-20 minutes with lid off or partially covering the pot. But note that soup will thicken on standing or in fridge. Remove bay leaf and adjust seasonings to your taste.
  • SERVE: If you like chunkier soup, serve as is. If you prefer creamier soup, blend soup in processor (in batches), blender or with stick immersion blender. Alternatively, do half and half - blend half the soup to creamy, then combine with the unblended chunky half. Serve with croutons, biscuits, a warm crusty loaf bread or cornbread.

This hearty and healthy split pea soup is loaded with umami flavor and topped with smoky baked tofu. Vegan and can be made in the instant pot for easy meal prep.

1-2 tbsp of oil or vegetable broth for sautéing
1 medium onion, diced
2 carrots, diced
2 stalks celery, diced
5 cloves garlic, crushed
1 tsp each black pepper, dry oregano, dry thyme and smoked paprika
2 tbsp nutritional yeast
2 bay leaves
6 fresh thyme sprigs
1 lb dry green split peas, rinsed and drained
6 cups vegetable broth or 1-2 tsp Better Than Bouillon dissolved in 6 cups water
1 cup unsweetened plant based milk, optional
2 tsp yellow miso paste
Salt to taste
Baked Smoky Tofu, for garnish

Steps:

  • In a large pot or instant pot, heat up your oil and sauté onions, carrots and celery with a pinch of salt. Cook the vegetables down until onions have become translucent.
  • Add in garlic and sauté until fragrant.
  • To the pot, add dry thyme, oregano, smoked paprika, pepper and nutritional yeast, then stir well to combine with vegetables.
  • Pour in the split peas along with the vegetable broth and milk, then top with the fresh thyme sprigs and bay leaves and 1/2 teaspoon of salt.
  • Bring soup to a boil, then reduce heat to medium low and cover the pot with a lid. Cook for 1 hour or until split peas are tender. Make sure to stir occasionally to prevent veggies or split peas from sticking and burning the bottom of the pot.
  • Close the lid and seal the pressure valve, then set the pressure cooker to manual pressure and cook for 15 minutes. Leave the soup as is for 15 minutes and then release the remaining pressure through the pressure valve before opening and stirring.
  • Remove thyme sprigs and bay leaves from the soup. Then mash and mix 1/4 cup water with the miso paste until there are no lumps remaining. Pour mixture into pot after soup is done cooking. Stir well and add additional salt and pepper to taste. Serve with baked tofu and enjoy.

Split pea soup recipes are often flavored with ham hocks, but this veg version gets its smoky taste from smoked paprika and chipotle chiles. Sweet potatoes and split peas are good sources of potassium, which lowers blood pressure. If split peas are old(after about 1-2 years) they will not get tender, so check the date. 1 cup split peas
2 tablespoons olive oil
1 teaspoon smoked paprika (can add more to taste)
1 teaspoon chopped chipotle chile, canned in adobo sauce (more if you like it really spicy)
1/2 teaspoon ground cumin (optional)
1 teaspoon oregano, chopped (optional)
1 large sweet potato, peeled and diced (3 cups, you can use winter squash if you like instead or even carrots)
2 medium onions, diced (3 cups)
3 celery ribs, diced (1 cup)
4 -6 garlic cloves, minced (4 tsp.)
6 cups water (or vegetable stock)
1 (14 ounce) can diced tomatoes

Steps:

  • Soak split peas in large bowl of cold water overnight(some reviewers said they boiled the peas for 30 or 40 minutes rather than soaking and it worked fine).
  • Heat oil in 3-qt. saucepan over medium heat. Add paprika, chipotle, and cumin if using, and stir. Add sweet potato(or squash), onions, and celery, and season with salt and pepper, if desired. Cover, and cook 10 minutes, or until onions are soft and translucent. Add garlic, and sauté 2 minutes.
  • Drain split peas, and add to pot with 6 cups water(I use about 4 cups vegetable stock and 2 cups water). Bring soup to a boil, reduce heat to medium-low, and simmer 1 hour. Add tomatoes, and cook 30 minutes more, or until split peas are tender.

A wonderful split pea soup, and you do not miss the bacon or ham:) My son loved it. I never liked this soup, so I decided to make one with spices I like and also wanted to keep it healthy. I'm trying out new recipes for health, but they must also taste great! I forgot to buy celery so I used some celery salt. and I had to separate the soup at the end because my husband does not like hot spicy foods, ( the garlic and onion ok) . My son and I loved it with the cayenne and cracked red pepper! I would have liked to cook it longer with these spices.

  • dice vegetables, carrot I used one large carrot diced, I used 1 large onion diced probably 2 cups or more, and diced garlic.
  • Place 2 T Extra Virgin Olive Oil in saute/ or fry pan on medium heat.
  • Add 1 diced onion,and the diced carrot cook over medium heat until onions are translucent 3-5 minutes, do not brown.
  • Add diced garlic in middle of pan, push aside onion and saute about 1 minute until translucent, watch carefully do not overcook or brown garlic.
  • Clean split peas in strainer with water, remove any discolored peas.
  • Add peas to a large stockpot.
  • Add 6 cups vegetable or chicken broth to stockpot.
  • Add cooked onions, carrots and garlic to stockpot.
  • Add spices celery salt, cumin, thyme, crushed red pepper and cayenne pepper and fresh ground pepper.
  • Bring all to a boil then cover and simmer over low heat for 30-60 minutes.

wonderful split pea soup. not sure where the recipe came from, i have had it for years and subscribe to many cooking publications and own way too many cookbooks. i usually make it with a ham bone but is just as good with smoked turkey wings. when i really want to ham it up i brown a center cut slice in pan before i begin, remove from pan and cut into pieces and add last 30 minutes.

2 large parsnips, chopped
2 medium leeks, chopped (white and lite green only)
