Smoky Strip Steaks with Mexican-Style Grilled Corn image

2 beef Strip Steaks Bone-In, cut 1 inch thick (12 to 15 ounces each)
4 ears corn, husked
1/4 cup reduced-fat mayonnaise
2 tablespoons grated Parmesan cheese
Salt
Lime wedges (optional)
1 to 2 teaspoons chipotle chile powder
2 teaspoons brown sugar
2 teaspoons fresh lime juice

Steps:

  • 1)Combine seasoning ingredients in small bowl. Spread 2 teaspoons seasoning mixture evenly onto beef steaks. Spread remaining seasoning mixture onto corn. 2)Place corn on outer edge of grid over medium, ash-covered coals; grill, covered, 15 to 20 minutes (over medium heat on preheated gas grill, times remain the same) or until tender, turning occasionally. Place steaks in center of grid over medium, ash-covered coals. Grill, covered, 9 to11 minutes (on gas grill, 9 to 12 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. 3)Spread mayonnaise and sprinkle cheese evenly over corn. Carve steaks into slices. Season beef and corn with salt, as desired. Squeeze lime wedges over beef and corn, if desired. Serve beef with corn.

Steps:

  • Preheat a grill to low. Peel back the husks from the corn and remove the silk. Sprinkle with salt and smoked paprika, if desired. Fold the husks back over the corn.
  • Grill the corn, turning occasionally, until the husks are charred and the corn is tender, 12 to 15 minutes.

1 teaspoon smoked paprika
1/4 teaspoon ground mustard
1 pinch cayenne
1 pinch garlic powder
Kosher salt
4 ears corn, shucked

Steps:

  • Preheat a grill on medium-high heat.
  • Mix the butter with the smoked paprika, ground mustard, cayenne, garlic powder and 1/4 teaspoon salt in a small bowl.
  • Grill the corn, turning occasionally, until tender and charred in spots, about 10 minutes.
  • Serve the corn with the butter on the side. Leftover butter can be kept refrigerated in an airtight container for up to 2 weeks.

6 plum tomatoes, halved
4 medium ears sweet corn, husks removed
2 medium sweet yellow peppers, halved
2 medium green peppers, halved
3 jalapeno peppers, halved and seeded
1 medium red onion, cut into 1/2-inch slices
1/4 cup minced fresh cilantro
3 tablespoons olive oil
3 tablespoons red wine vinegar
5 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon pepper

Steps:

  • Grill the tomatoes, corn, peppers and onion, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Allow vegetables to cool slightly. Remove corn from cobs; transfer to a large bowl. Chop the remaining vegetables and add to corn., In a small bowl, whisk the cilantro, oil, vinegar, garlic, salt, sugar and pepper. Pour over vegetables; toss to coat. Serve warm or cold.

2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon seasoned salt
1/8 teaspoon cayenne pepper

Steps:

  • Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush corn with oil. In a small bowl, combine remaining ingredients; sprinkle over corn. Rewrap corn in husks; secure with kitchen string. Place in a Dutch oven; cover with cold water. Soak 20 minutes; drain., Grill corn, covered, over medium heat 25-30 minutes or until tender, turning often.

Smokey Grilled Corn on the Cob With Cajun Butter image

I make this corn with the Cajun butter very often in the summer season, after you try this recipe, you will always be making this corn on the grill! Low temperature heat on the BBQ for about 30 minutes on indirect heat produces the best tender corn, the Cajun butter makes this corn so good! Don't forget, soak the corn for 1 hour, with the husks on, and only heat up one side of the barbecue for this. Double up on the Cajun butter if you are making more than 8 corn.

7 -8 ears of fresh corn on the cob
1 lb butter, softened
3 teaspoons cayenne pepper
1 1/2 teaspoons salt (or to taste)
2 teaspoons crushed hot red pepper flakes (or to taste)
1 tablespoon dried thyme
1 tablespoon dried basil
1 teaspoon dried oregano
2 tablespoons minced fresh garlic
2 tablespoons Worcestershire sauce

Steps:

  • Carefully remove the "silks" from the cornhusks (keeping the husks intact).
  • Place the corn cobs with the silks removed in a large pot of COLD water (the corn should be completely covered with the cold water).
  • Soak the corn for 1 hour.
  • In the meantime prepare the cajun butter, by mixing all of the cajun butter ingredients together, adjusting ingredients to taste).
  • Remove the corn from the water and shake off any excess moisture.
  • Pull husks back gently.
  • Smear the butter (with your hands) over all sides of the corn.
  • Pull the husks back over to cover corn.
  • Place the corn on a baking tray large enough to hold the cobs.
  • Preheat only ONE SIDE of the barbecue to 275 degrees or to low temperature.
  • Leave the other side of the grill off.
  • Place the corn on the tray onto the side of the grill that has NO heat.
  • Close lid, and cook the corn for about 30 minutes (the corn kernels will turn a bright yellow colour, and the butter will be fully absorbed into the flesh of the corn).
  • Remove from the grill and serve immediately.
  • DELICIOUS!

  • Prepare the corn. On each ear of corn, peel back the husk and remove the silk. Replace the husk and place the ears of corn in a large pot. Cover the corn with cool water, making sure it is completely submerged. Soak the corn for 2 hours.
  • Preheat the smoker. Preheat your smoker to 225 degrees F. I like to use mild woods like maple, alder, or pecan.
  • Butter the corn. Remove the corn from the pot of water. Set on a towel and pat dry. Melt the butter and stir in the Sweet Rub seasoning. Peel back the husks on the corn and brush each ear on all sides with the seasoned butter. Pull the husks back up over the ear of corn.
  • Smoke the corn. Place the seasoned, husk-on corn directly on the grates of the smoker. Close the lid and smoke for 90 minutes. Remove the corn from the smoker, peel back the husks, tie them off with butcher's twine to use as handles, and enjoy!
