SMOKY CHILI BEER MARGARITA
A twist on the classic Mexican cocktail, this margarita gets an added kick from fresno chile, cayenne pepper and liquid smoke. Top each glass with beer and garnish with cucumber and lime for a refreshing finish.

Steps:
- Cut 1 lime into wedges. Squeeze the juice from the second lime and set aside.
- Mix the dehydrated lemon peel if using with 1 tablespoon salt in a small shallow bowl and set aside.
- Wipe the rims of 2 glasses with a lime wedge to moisten. Dip the rim of each glass into the lemon-salt mixture to evenly coat.
- Place 1/2 teaspoon sugar in each glass. Add 5 slices Fresno chile to each glass. Using the end of a wooden spoon, muddle the sugar and chile together.
- Fill each glass with ice. Pour 1 ounce (2 tablespoons) of tequila into each glass. Top each with 1/4 cup club soda, 1 tablespoon lime juice, a dash of cayenne pepper and 2 small drops of liquid smoke. Stir gently to combine.
- Top each glass with 1/2 bottle of beer. Garnish each with 1 cucumber spear and 1 lime wedge. Reserve remaining cucumber and lime for another use. Serve immediately.
SMOKY ORANGE MARGARITA

- Combine the sugar and 1 cup water in a small saucepot. Bring to a boil over medium-high heat, stirring occasionally, and cook until slightly thickened, about 10 minutes. Remove from the heat and let cool completely. (Makes about 1 cup.)
- To a large pitcher, add the lime juice, orange liqueur, mezcal, orange juice and 1/4 cup simple syrup. Stir to combine. Taste and add more simple syrup if desired.
- Moisten the rim of the 4 to 6 rocks glasses with a clementine wheel and then dip the rims in margarita salt. Add ice to the glasses (not the pitcher) and pour over the margarita mixture.
- Garnish each drink with a clementine wheel, and serve.
SMOKEY MARGARITA
Steps:
- Place tequila, Triple Sec, lime juice, and simple syrup in a cocktail shaker and shake until combined. Serve over ice in a rocks glass and pour mezcal on top; do not stir the mezcal into the drink, as it should "float" on top.
BEER MARGARITAS

- Rub lime wedges around rims of 4 margarita glasses. Dip rims into salt to coat lightly. In a medium pitcher, combine beer, limeade, and tequila. Fill prepared glasses with ice, then with margarita mixture. Garnish with remaining lime wedges. Serve immediately.
BLACKBERRY-LIME MARGARITA

- Combine the blackberries, 2/3 cup water, the tequila, sugar, orange liqueur and lime zest and juice in a blender. Blend until smooth and the sugar dissolves.
- Strain the mixture through a fine-mesh sieve into a large bowl or liquid measuring cup, pressing it through with a rubber spatula. Churn in an ice cream maker according to the manufacturer?s instructions until thick and slushy.
- Pour into glasses and top each with 1/2 to 1 teaspoon mezcal. Garnish with blackberries.
SMOKY MARGARITA
Steps:
- Add kosher salt to a shallow dish and rim 2 rocks glasses. Fill the glasses with ice.
- Add the mezcal, agave and lime juice to a cocktail shaker filled with ice and shake hard.
- Divide the mixture between the glasses. Add a lime wedge and a sprinkle of smoked salt to each and serve.
BEER MARGARITAS
Who would believe that beer would be the perfect solution to eradicating fluorescent green margaritas? Well, it is! Best to use not-so-micro brews to avoid an overpowering beer flavor. Use the limeade can to measure the ingredients, and adjust with extra water if the mixture seems too sweet. Straining the pulp is always a good idea, unless, of course, you like pulp!

- Pour limeade, tequila, water, and beer into a large pitcher. Stir until well-blended, and limeade has melted. Add plenty of ice, and garnish with lime wedges. Adjust with additional water, if needed.
