Steps:
- Heat oven to 160C/ 140C fan/gas 3. Mix the beef, onions, tomatoes, spices, vinegar and sugar in a casserole dish. Cover and bake for 2½ hrs. Stir in the beans and bake for 30 mins more (with the lid off if the casserole is a little wet or lid on if good consistency), until the beef is tender.
- Cool, then freeze in 6-8 portions in small food bags or plastic containers. Defrost in microwave or overnight in fridge, then heat in the morning and transfer to a thermos container, or heat in the microwave at lunchtime.

SMOKY SIRLOIN STEW WITH WATERCRESS DUMPLINGS

- Heat a heavy bottomed large, wide pot or pan over high heat. Cut the sirloin into large cubes. Add oil to the pan and heat. Add meat and caramelize for 2 minutes on each side; remove from pan to a shallow dish and cover loosely with foil. Reduce heat to medium high. Add bacon to the pan and brown bacon at edges, rendering fat. Add onions and celery to the pan, bay and thyme. Stir and cook vegetables 5 minutes. Add flour to the pan, stir and cook another minute. Whisk in wine and mustard and scrape up pan drippings. Add stock. Cover and bring liquid to a boil, 1 to 2 minutes.
- Mix watercress with biscuit mix and add beef stock, (instead of water), according to directions on box. Add meat back to the pan and settle it in so that it is covered with sauce. Season with salt and pepper, to taste. Drop large spoonfuls of watercress biscuit mix into the pan onto the surface of the stew and cover the pan. Cook 8 minutes until dumplings plump. Serve stew with dumplings.

- As the meat browns transfer to a 5 quart slow cooker.
- Pour in 1/2 cup of the barbecue sauce, sprinkle with the coffee granules.
- Top with onions, carrots and potatoes; cover with lid and cook on low for 7 to 8 hours.
- Turn heat to high, stir in thawed peas and remaining 1/4 cup barbecue sauce; cover and cook an additional 30 minutes or until heated through.

- Squeeze most of the lemon half into a small bowl of cold water. Working with 1 artichoke at a time, snap off the tough outer leaves. Using a sharp knife, cut off the top half of the artichoke and peel the base and stem. Cut off the stem and drop it into the bowl. Using a melon baller or a spoon, scoop out the furry choke. Rub the artichoke bottom all over with the lemon half, then quarter the artichoke and drop it into the bowl. Repeat with the remaining artichoke.
- Season the beef with salt and pepper and lightly dredge the pieces in flour. In a medium enameled cast-iron casserole, heat 2 tablespoons of the olive oil. Add half of the meat and brown over moderately high heat, about 3 minutes per side. Transfer to a plate and brown the remaining meat in the same oil.
- Drain the artichokes and pat dry. Pour off the fat from the casserole and add the remaining 2 tablespoons of olive oil. Add the leeks and bay leaves and cook over low heat, stirring occasionally, until the leeks are softened, about 8 minutes. Add the garlic and pimentón and cook, stirring, until fragrant, about 2 minutes. Add the parsley, peppercorns and wine and simmer over moderately high heat for 5 minutes. Add the seared meat, stock, red pepper puree and the artichokes and bring to a simmer. Add a pinch of salt and cook over low heat, stirring occasionally, until the meat is tender, about 1 1/2 hours. - Preheat the oven to 150°C, fan 130°C, gas 2. Season the flour and coat the beef with it. Heat 1 tablespoon of oil in a large frying pan and brown half the beef on a high heat. Transfer to a casserole, deglaze the pan with a little of the stock and pour this into the casserole too. Repeat, and stir the left over seasoned flour into the beef in the casserole.
- On a medium heat, cook the onions in the frying pan in another tablespoon of oil for 6-8 minutes until starting to soften. Add the garlic, smoked paprika, oregano and bay leaves and cook, stirring, for about 2 minutes. Pour in the red wine and stir to deglaze, then tip into the casserole. Add the tomatoes, apricots, sugar and the rest of the beef stock to the casserole. Bring to a simmer, add some seasoning then cover and transfer to the oven for 1½ hours.
- Take the casserole out of the oven and add the sweet potatoes, peppers and babycorn, making sure the sweet potato is submerged as much as possible. Bring back to a simmer on the hob and cook for 5 minutes, lid on, then return to the oven for 30-45 minutes or until the sweet potato is tender. Serve with polenta dippers, or with crusty bread to dunk.

Once the pan is hot, begin frying the ground beef in batches; I recommend splitting the 2 pounds into three portions. Brown each batch for 5 to 7 minutes, breaking up the ground beef with a flat spatula until only small pieces remain. Season the ground beef with salt. Once browned, transfer the beef into a large braising pot.
- Next, into the same frying pan, add the onion and bell pepper; add more oil if needed. Saute this mixture for 4 to 5 minutes, until the onions are tender. Next, add in the garlic and cook for 30 more seconds. Add the spices next: smoked paprika, ground cumin, ground coriander, and chipotle chili powder. Toss the spices with the onion mixture and cook for 1 minute.
- Deglaze the pan with the wine (or broth), cooking until the wine is almost completely evaporated, about 1 minute. Add this mixture to the ground beef.
- Add the remaining chili ingredients into the braising pot: beef broth, tomato paste, diced tomatoes, drained kidney beans, chipotle peppers, salt, sugar and ground black pepper. Stir to combine all the ingredients together.
