Salisbury Steak with Mushroom Gravy is a comfort food that's quick and easy to make. After making it once your family will be asking for it again and again.

6 oz. sliced mushrooms
1/2 cup onion, finely chopped
1 garlic clove, minced
1 tsp. dried thyme
3 Tbsp. flour
2 tsp. Worcestershire sauce
2 cups beef broth
Salt and freshly ground pepper to taste
Parsley for garnish
1 lb. ground beef
1/2 cup onion, finely chopped
1 garlic clove, minced
1/4 cup panko crumbs
1 egg, lightly beaten
1 Tbsp. Worcestershire sauce
1 Tbsp. Dijon mustard
Freshly ground pepper
Kosher salt
1 Tbsp. butter for frying

Steps:

  • Mix together the Salisbury steak ingredients except for the butter for frying. Form into 4 oval or round patties. Melt the butter in the skillet and cook the patties over medium-high heat, about 5 minutes per side. Make sure they get a nice char on them but they don't have to be cooked all the way through. Remove from pan, set aside.
  • For the mushroom gravy, melt the butter and add the sliced mushrooms, onions and garlic. Saute for about 5 min. or until the mushrooms have given off their liquid. Add the dried thyme and cook for 1 min. stirring.
  • Sprinkle in the flour and cook for 1 min. stirring. Slowly add in the beef broth and Worcestershire sauce a little at a time letting the mixture come up to a simmer in between. Continue to add broth and cooking until the desired thickness is reached. Season with salt and pepper.
  • Return the beef patties to the pan. Reduce heat to low, cover slightly and let the mixture simmer and the beef braise in the sauce until the patties are cooked through.
  • Serve over mashed potatoes and garnish with parsley. Serve with your favorite side dish.

1/2 onion ((white, brown or yellow))
1/2 cup panko breadcrumbs ((or 1/3 cup ordinary breadcrumbs))
1 lb/500g ground beef (mince)
1 garlic clove (, minced)
1 egg
2 tbsp ketchup
1 beef bouillon cube (, crumbled)
1/2 tsp Worcestershire sauce
3 tsp dijon mustard (OR 2 tsp dry mustard powder)
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
5 oz/150g mushrooms (, sliced)
2 tbsp unsalted butter
3 tbsp (35g) flour ((all purpose / plain))
2 cups (500 ml) beef broth / stock
1 cup (250 ml) water
2 tsp dijon mustard
2 tsp Worcestershire sauce
Salt and pepper

Steps:

  • Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
  • Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
  • Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
  • Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
  • If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
  • Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
  • Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
  • Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
  • Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
  • Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
  • Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

3 tablespoons vegetable oil, divided
1 garlic clove, minced
2 lbs ground beef
2 large eggs, lightly beaten
1/4 cup fine dry breadcrumb
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon salt, divided
1 teaspoon pepper, divided
1 (8 ounce) package sliced fresh mushrooms
3 tablespoons all-purpose flour
1/2 cup dry red wine
1 1/2 cups low sodium beef broth

Steps:

  • Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
  • Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
  • Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
  • Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
  • Place patties in lightly greased baking dish, top evenly with gravy.
  • Bake, covered, at 350 for 25 minutes or until done.

1 egg
3 tablespoons crushed buttery round cracker crumbs

1 (10-ounce) can condensed cream of mushroom soup, divided
1/2 cup Italian bread crumbs
1 egg, lightly beaten
1/2 cup frozen chopped onions
1 teaspoon steak seasoning (recommended: Montreal)
1 tablespoon canola oil
2 tablespoons butter, divided
1/4 cup cognac
1 (8-ounce) package sliced fresh mushrooms
2 cups low-sodium beef broth
1 (1.2-ounce) packet brown gravy mix
Cooked rice, for serving

Steps:

  • In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
  • Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.

1 tablespoon Worcestershire sauce
1 small onion, diced
1 tablespoon steak seasoning (I use Montreal Steak spice)

Steps:

  • Gently combine ground beef, worchestershire sauce, steak spice and onion - be careful not to overwork the meat mixture.
  • Shape the meat into oval patties, not too thin.
  • At medium to high heat, fry the meat patties approximately 6 mins on each side - turn only once.
  • Remove the cooked patties to a platter and cover with tin foil to keep them warm.
  • Add butter to the same pan and melt.
  • Add the mushrooms, salt and pepper to the pan, saute until nice a golden brown (approx. 3-5 mins).
  • Sprinkly the flour over the mushrooms and cook for 1-2 mins until flour has absorbed the butter (sometimes I added a little bit more butter at this stage).
  • Whisk in the beef stock and cook until thickened. Check for seasoning.

3/4 cup seeded diced tomato
6 tablespoons egg whites, lightly beaten
1/4 cup onion, finely diced

1 cup thinly sliced mushroom
2 tablespoons whole wheat flour

I don't know what it is about Salisbury Steak that I like so much. When I was pregnant with my oldest I craved it like it was the last best food on earth. I think it's that "Anything smothered in gravy can't be bad" mentality. It sure not a bad way to go in my book! But I am not a big fan of pre-packaged, pre-made foods so I had to come up with a recipe all my own. I used crushed Ritz crackers for my crumbs (they add an interesting flavor) but you can use whatever is on hand. I served it with Goat Cheese Mashed Potatoes and Glazed Carrots. If you aren't a fan of red wine or just don't have any on hand you can substitute with more beef broth if you like.

6 slices bacon, sliced thin
1 tablespoon bacon grease, reserved
1 onion, minced
2 cloves garlic, minced
2 lbs ground beef
1/4 cup fresh parsley, chopped fine
1 1/2 cups bread, crumbs or 1 1/2 cups crushed crackers
1 tablespoon Dijon mustard
2 eggs
1 1/2 teaspoons salt
1 teaspoon pepper

2 tablespoons reserved bacon grease
1 onion, chopped fine
8 ounces button mushrooms, rough chopped (or creminis)
2 cloves garlic, minced
1/2 cup flour
1 1/2 cups red wine
4 cups beef broth
salt and pepper

Steps:

  • Preheat oven to 150 degrees. In a large skillet, over medium-high heat, cook the bacon until very crisp and it has rendered its fat. Remove the bacon with a slotted spoon to a paper towel lined plate. Transfer the bacon grease into a heat same bowl or cup and set aside.
  • Add a tablespoon of the reserved bacon drippings back to the skillet. Add the onion and cook until softened and translucent. Toss in the garlic and cook for 15 seconds. Removed the onions and garlic to a large bowl to cool.
  • Once the onion has cooled add in the crispy bacon and the remaining ingredients for the steaks. Mix until combined. Form into 8 equal patties, formed into an oval shape, and place on a cookie sheet.
  • Place cookie sheet into the oven and cook 35 minutes. Remove from the oven and cover with foil. Allow to set until ready to serve, or at least 10 minutes.
  • Meanwhile start the gravy, return the large skillet to the burner. Add 2 tablespoons of the reserve bacon grease to the skillet. Add the onions and mushrooms and cook until the mushrooms are browned and the onions have softened. Add the garlic and flour and stir until the vegetables are coated in flour.
  • Add the wine and stir to combine well, reduce the heat and simmer 2-3 minutes. Whisk in the beef broth slowly. Continue to simmer until it is the desired consistency. Note: Gravy will be thick. If you like thinner gravy use less flour. Serve over the steaks.

  • NOTE: DO NOT ATTEMPT TO GRILL PATTIES ON A BARBECUE RACK OR GAS GRILL. USE AN INDOOR RIDGED FLAT GRILL OR PRESS "GEORGE FOREMAN" CLOSABLE GRILL. I RECOMMEND DOUBLING THE GRAVY RECIPE IF PLANNING TO SERVE GRAVY OVER MASHED POTATOES. THE DIRECTIONS HAVE BEEN CONDENSED SINCE FIRST REVIEW.
  • MIX the GRILLED SALISBURY STEAKS ingredients in a medium to large mixing bowl (mixture will be soft; patties will shrink considerably while cooking); KNEAD well using hands or mix using a large fork; DIVIDE ground beef mixture to form 4-5 oval-shaped steak patties, about 3/4" thick; PLACE patties onto a platter.
  • PREHEAT indoor grill to medium-high heat; OIL or spray grill surfaces completely with non-stick cooking spray; GRILL beef patties until sear-marks are obtained; TURN patties and repeat process (if using a press-type closable grill, sear without turning), searing until center of each beef patty is still a little pink, not quite done.
  • CUT Spanish onion into 1/4" thick, julienne strips to yield 1/2 cup; THINLY slice 4 ounces fresh mushrooms; PREHEAT oven to 350 F if using the OVEN FINISH METHOD (SEE STEP 9).
  • HEAT 3 tablespoons unsalted butter a large heavy saucepan over medium heat; ADD the onion, mushrooms and mashed garlic clove; SAUTE until onions are light golden and softened; STIR in 1 1/2 tablespoons all-purpose flour; COOK for 1-2 minutes.
  • QUICKLY whisk the beef broth into the saucepan roux to deglaze, then add the remaining SAVORY MUSHROOM GRAVY ingredients; BRING mixture to a boil over medium-high heat while whisking constantly; REDUCE heat to medium.
  • WHISK 1/4 cup cold water (or 2 tablespoons water with 2 tablespoons cognac) with 1 1/2 tablespoons cornstarch for the SLURRY in a small mixing bowl, until smooth and cornstarch is completely dissolved; ADD the slurry gradually to gravy base in saucepan, while whisking constantly, until thoroughly blended; COOK gravy until thickened and bubbly; REDUCE heat to low; ADD grilled beef patties, immersing them in gravy.
  • STOVETOP FINISH METHOD: Simmer over low heat for 10 minutes. CAREFULLY turn steaks with a spatula. Simmer an additional 10 minutes until steaks are steam-cooked and tender.
  • OVEN FINISH METHOD: Transfer oven-safe large heavy saucepan to preheated 350 F oven. Bake patties uncovered for 20 minutes, immersed in gravy.
  • SERVE: Transfer steaks onto serving plates with a spatula. Whisk gravy to refresh consistency. Ladle gravy over steaks. Serve with desired side dishes. Enjoy!
