SMOKED TURKEY SANDWICHES
These sandwiches are really good - my dh said about them "I usually don't like turkey sandwiches but these are really good". I used some light products when I made these (light mayo and light whole wheat bread) without anyone being the wiser. We served these with fruit salad and pickels for a no-work dinner. Steps:
- In a large skillet over medium high heat, heat oil and then add in onions, cooking until llight browned, breaking up into rings. (8-10 minutes). Remove from heat and stir in vinegar and salt and pepper. Set aside.
- Chop enough argula to measure 1 cup and place it in a small bowl. Mix in the mayonnaisse, salt and pepper.
- To make sandwiches: spread 1 1/2 tablespoons (I used less) of the argual/mayo over the cut sides of 4 slices of bread. Divide the turkey slices among the 4 bread slilces and then top with the blue cheese, red onion slices and argula leaves and the remaining slices of bread.

Potato salad, grapes or fresh figs, and brownies round out this lunch. To make things even easier, use raw onions.

- Prepare barbecue (medium-high heat) or preheat griddle pan over medium-high heat. Brush onion with olive oil. Grill until brown, about 2 minutes per side. Season with salt and pepper; cool.
- Mix cheese, sour cream, and thyme in small bowl to blend. Season generously with pepper. Spread cheese mixture over 4 bread slices. Top cheese with grilled onions, radicchio, then turkey. Spread mustard on remaining 4 bread slices; place atop turkey. Press sandwiches lightly to compact. Cut sandwiches in half; wrap each tightly in plastic wrap. Refrigerate at least 2 hours and up to 1 day.

- In a large, heavy skillet over medium-high heat, melt the butter. Separate the onion slices and add them to the skillet. Cook the onions until they begin to brown, about 10 minutes, stirring often. Reduce the heat to medium and cook until the onions are very tender and caramelized, about 15 minutes more, stirring often. Season with the salt and about 1/4 teaspoon of the pepper. Remove from the heat to cool.
- Prepare the grill for direct cooking over medium heat (350° to 450°F).
- In a small bowl combine the mayonnaise, basil and the remaining pinch pepper.
- Lightly brush one side of each bread slice with oil. Turn all the bread slices over and spread with the mayonnaise mixture, dividing equally. Top eight of the bread slices with equal amounts of turkey, onions and cheese. Cover with the remaining eight bread slices, mayonnaise mixture side down.
- Brush the cooking grates clean. Grill the sandwiches over direct medium heat, with the lid closed as much as possible, until the cheese melts and the bread is golden, 3 to 5 minutes, turning once. Remove from the grill and serve right away.
