- Stir together cream cheese, onion, 1 tablespoon chives, the oil, Old Bay seasoning, Worcestershire sauce, and liquid smoke in a medium bowl until creamy.
- Flake tuna with a fork. Add the tuna and pimiento to the cream cheese mixture; stir until well mixed. Cover and chill at least 1 hour or up to 24 hours. (The smoke flavor will build. It may seem faint at first, but refrain from adding more liquid smoke until after the mixture chills. If desired, stir in an additional 1/8-1/4 teaspoon liquid smoke.)
- To assemble the canapés, spread 1/2 teaspoon of the tuna mixture on each cracker. Top each with a cucumber slice and another 1 1/2 teaspoons of the tuna mixture. Sprinkle with the remaining 1 tablespoon chives.

- Preheat a smoker to 225 degrees F (110 degrees C) according to manufacturer's instructions.
- Mix brown sugar and 1/4 cup salt together in a bowl.
- Score ahi tuna skin with a sharp knife; rub with brown sugar and salt mixture.
- Smoke tuna until an instant-read thermometer inserted into the center reads 140 degrees F to 155 degrees F (60 degrees C to 68 degrees C), about 1 hour.
- Mix masa corn flour and water together in a bowl until a slightly sticky dough forms. Divide dough into large balls.
- Heat a lightly oiled griddle over medium-high heat. Flatten balls of masa to 1/4-inch thickness and cook until golden brown, 3 to 4 minutes per side. Cool sopes on a wire rack.
- Preheat a grill for medium-high heat and lightly oil the grate.
- Place tomatillos, half the onion, and 1 jalapeno pepper on the grill; cook until charred on all sides, about 5 minutes. Transfer to a blender; blend into a smooth sauce. Season with salt.
- Dice remaining onion and jalapeno. Mix with tomatoes, avocados, and cilantro in a bowl. Season with lime juice and salt.
- Place cooked sopes on serving plates. Top with smoked tuna, tomatillo sauce, and avocado mixture. Garnish with shredded cabbage and queso fresco.

- Blend all ingredients together well using a stand mixer or hand mixer. Taste, and adjust seasonings to your liking. Be careful adding more liquid smoke, a little goes a long way! When ready to serve, try adding a light sprinkling of paprika over the top for decoration.
SHEILA'S SMOKED TUNA DIP
This is a Great Seafood Appetizer. It is easy and cheap to make but taste like a million. I assure you it is a crowd pleaser.

Steps:
- Drain tuna of as much excess liquid as you can.
- You may use the new tuna in a pouch if you desire.
- Once tuna is drained, place in bowl, add liquid smoke and mix well.
- Cover container and let set 30 minutes to overnight.
- The longer it sets the better it will absorb the smoke flavor.
- Remove tuna from fridge and add Mrs.Dash, mix well.
- Next add mayo 1 tablespoon at a time until you achieve the desired consistency.
- Since this is meant to be eaten with crackers you want to keep it thick but creamy. (I usually use about 5 tablespoons).
- You can also add chopped boiled eggs and extra mayo to this recipe to create an interesting tuna salad for sandwiches.

- Place tuna steaks in a large heavy-duty zip-top plastic bag. Stir together 2 quarts water and next 4 ingredients; pour over steaks. Seal bag; chill 3 hours, turning bag occasionally.
- Remove steaks from brine. Wash and pat dry. Place on a rack to air dry 30 minutes. Brush with vegetable oil. Pat pepper on both sides of fillet.
- Prepare charcoal fire in smoker; let burn 15 to 20 minutes. Drain wood chunks, and place on coals. Place water pan in smoker; add wine. Coat rack with cooking spray; place in smoker. Place steaks on upper rack; cover with smoker lid. Cook 3 to 4 hours or until fish flakes easily when tested with a fork.
