The idea is to simmer small potatoes until tender, then toss them with olive oil, flatten them and crisp them in the oven. It's simple - and insanely delicious. There are more than 35,000 #smashedpotatoes photos on Instagram, and many Food Network stars are obsessed, too. Here's how to make them like a pro.

Steps:

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.

These potatoes are incredibly tender on the inside yet amazingly crisp on the outside!

2 pounds baby yellow potatoes
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place potatoes in a large saucepan and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 15 minutes; drain well and let cool slightly. Place potatoes onto the prepared baking sheet. Using a flat dry measuring cup or glass, carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic and thyme. Place into oven and bake for 25-30 minutes, or until golden brown and crisp. Serve immediately.

CHIVE AND GARLIC MASHED POTATOES

4 to 6 pounds Yukon gold potatoes, peeled
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/2 stick (1/4 cup) unsalted butter
4 cloves garlic, lightly crushed
3 sprigs fresh thyme
2 tablespoons chopped chives

Steps:

  • Put the cut potatoes into a large pot, cover them with cold water, and add a large pinch of salt. Bring to a boil and simmer until the potatoes are fork tender, about 20 to 30 minutes. Drain well. Meanwhile, in a small pot heat the cream, butter, garlic, and thyme. While the potatoes are still warm, press them through a potato ricer or food mill into a bowl. Stir in the warm cream a bit at a time, straining out the solids, until the potatoes are fluffy. Season with salt and pepper and gently fold in the chives. Serve immediately.

16 red potatoes (unpeeled)
3 cloves garlic, halved
1/4 cup olive oil
kosher salt, to taste
fresh ground pepper, to taste

Steps:

  • In a large soup pot combine the potatoes and garlic with enough water to cover them by several inches.
  • Bring the water to a boil, cover the pan, and lower the heat.
  • Let the pototoes simmer steadily for 20 minutes or until they are tender when pierced with a skewer.
  • Set the oven at 450 degrees.
  • Have on hand a 12-inch baking dish.
  • Rub the dish with a thin film of oil.
  • Drain the potatoes and garlic and set them aside until they are cool enough to handle- do not let the potatoes become cold.
  • Cut the potatoes into quarters and squeeze each one with your fingers or set the potatoes on a board and tap them lightly with a mallet.
  • Transfer the potatoes to the baking dish, packing them tightly into the dish.
  • Chop the garlic and scatter it on the potatoes.
  • Drizzle the oil on top of the potatoes and sprinkle them with salt and pepper.
  • Transfer the dish to the hot oven.
  • Roast the potatoes for 20 minutes or until the top is crusty and golden brown.
  • Serve at once.

5 pounds Yukon gold potatoes, peeled and cut into chunks
2 sticks butter
One 8-ounce package cream cheese, at room temperature
1 cup heavy cream
1 tablespoon Cajun Seasoning, recipe follows
1/2 to 1 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons garlic powder
2 tablespoons paprika
2 tablespoons black pepper
2 tablespoons kosher salt
1 teaspoon cayenne pepper

Steps:

  • Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork tender, 20 to 25 minutes.
  • Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all of the steam to escape.
  • Turn off the heat before adding the butter, cream cheese, heavy cream and Cajun Seasoning. Mash, mash, mash! Next, add the seasoning salt, salt and pepper. Mash to combine.
  • Place the lid on the pan to keep the potatoes warm until you are ready to serve.
  • Combine the garlic powder, paprika, black pepper, salt and cayenne.

1 head garlic
1 tablespoon olive oil
1/4 cup sour cream
4 tablespoons butter
milk or cream, if needed
salt

Steps:

  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork, or force through a fine strainer.
  • If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
  • Peel and boil potatoes in salted water until tender.
  • Force the cooked potatoes through a ricer (recommended) or mash by your usual method.
  • Put the riced potatoes, garlic, sour cream, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth.
  • Add cream or milk to adjust consistency.

5 large potatoes
1 teaspoon salt
1 teaspoon cayenne pepper
1 (3 ounce) package Philadelphia Cream Cheese
1/4 cup land o lakes butter
2 tablespoons Mrs. Dash seasoning mix
1/4 cup milk

Steps:

  • Wash the potatoes and cut into 1" squares. LEAVE the skins on the potatoes.
  • Boil the potatoes in a large pot for 15-20 minutes or until the skins freely separate from the potatoes.
  • A few minutes prior to draining the potatoes, put the butter, salt, pepper, and cream cheese in a small bowl and microwave until soft.
  • Add the Mrs. Dash seasoning and mix thoroughly.
  • When the potatoes are done, drain the water from them but leave them in the pot.
  • Pour the cheese/butter/seasoning mixture on top. Add milk, a little at a time, until the consistency is as you like it.
  • Mix thoroughly with a potato masher, adding up to more milk if desired.
  • Serve hot.

This is a version inspired by an old guy named Tom who used to cook breakfast every morning at the youth hostel I stayed at down in NOLA. He was displaced after Katrina and no one has heard from him again. So where ever he is now - I thought I'd share his recipe. Even if it is my own version of it. It's great for breakfast, brunch or even dinner. Spicy, garlicy, buttery goodness.

2 1/2 lbs russet potatoes
1 small onion, finely chopped
2 stalks celery, finely chopped
1/4 green bell pepper, finely chopped
1/4 red bell pepper, finely chopped
4 large garlic cloves, finely minced
2/3 cup green onion, chopped
2 tablespoons peanut oil
5 tablespoons unsalted butter
1 tablespoon creole seasoning, divided in half (Tony's)
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme
2 teaspoons louisiana hot sauce

Steps:

  • Boil your potatoes whole in water until just fork tender. Drain and fill with very cold water. Set aside, draining water and adding fresh cold water as it gets warm.
  • Meanwhile, while that cools down you can start prepping your veggies.
  • Once potatoes are cooled (about 25 minutes) drain them and dice into roughly 1 inch cubes, keeping the skin on.
  • In large frying pan (Tom always used an old Wok, and it seemed to work really well) heat your peanut oil and a tablespoon of butter. Add onion, celery, bell pepper and half of the Creole seasoning. Sauté on Med-high until the onions start to get translucent, about 4-5 minutes.
  • Add rest of butter and garlic. Once the butter has mostly melted add your potatoes. Stir to coat them with the buttery goodness. Add parsley, thyme and rest of Creole seasoning. Let cook for another 5-6 minutes, scraping the bottom of the pan to avoid sticking and to mix the crispy bits into the potatoes.
  • They should start to look a little creamy/smashed by this point.
  • Stir in hot sauce and garnish with green onions.
  • Now all you need are a couple of fried eggs, some spicy Louisiana sausage patties and some fresh biscuits with jam. Don't forget the coffee with chicory!
