1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped

Steps:

  • Preheat your toaster oven to 400 degrees F or high.
  • Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.

I saw this recipe on 30 Minute Meals made with smoked turkey. I thought it would be great with smoked tofu and I was right. It's very easy and has been a hit every time I've made it, even with meat-eaters! This recipe is meant for a toaster oven, although I am sure a conventional oven would work.

4 ounces smoked tofu, cut into approximately 1-inch pieces and thinly sliced (savory baked tofu works well, too, if you can't find smoked)
1 tablespoon chili powder
2 cups cabbage, shredded (the recipe calls for it raw, but I like to use a little extra and saute it for a couple of minutes f)
1 -2 chipotle chile in adobo
1 cup tomato sauce
3 scallions, chopped
salt
pepper
4 (12 inch) flour tortillas
6 ounces sharp cheddar cheese, shredded
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 cup sour cream (optional)
2 tablespoons chopped cilantro (optional)
1 tomatoes, chopped (optional)

Steps:

  • Preheat toaster oven to 400 degrees F or high.
  • Place tofu in a bowl and season with chili powder.
  • Add cabbage, chipotles in adobo, scallions, and tomato sauce. Toss filling to combine and season with salt and pepper.
  • Warm tortillas in the microwave wrapped in a towel.
  • To build, place about 1/4 of the cheese near one edge of a tortilla. Top with 1/4 of the filling. Tuck sides up and roll up the tortilla. Place in toaster oven baking tray, seam side on the side pointing up to minimize spillage. Repeat with the other three tortillas and remaining filling.
  • Brush the wraps with oil, being careful to get in between the wraps and between wraps and tray.
  • Bake until golden, 15-17 minutes.
  • Top with optional ingredients if desired.

Ok, ok. I know. These aren't really chimichangas. But I'm from Ohio, where if you use a tortilla it is Mexican food. ;-) I made these as written, but I am also looking forward to trying them with some ground beef or some carnitas. This was originally written to use a toaster oven but I don't have one of those so I used the regular conventional oven. You can definitely use a toaster oven if you have one though. Use the "high" setting if your toaster oven does not have a temperature control dial. Originally from Rachael Ray via the Food Network website.

1 lb smoked deli turkey, chopped
1 tablespoon chili powder (I also mix in other spicy spices as the mood strikes me)
2 cups cabbage, shredded (I used the bagged coleslaw mix)
1 -2 chipotle chile in adobo, depending on desired level of spiciness
1 cup tomato sauce
3 scallions, chopped
salt, to taste
pepper, to taste
4 burrito-size flour tortillas
1/2 cup monterey jack pepper cheese, shredded
1 tablespoon extra virgin olive oil
1/2 cup sour cream (optional)
2 tablespoons cilantro (optional) or 2 tablespoons flat leaf parsley, chopped (optional)
1 yellow tomatoes, seeded and chopped (optional)
1/2 cup salsa (optional)

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl, combine turkey and chili powder (and other seasonings, if using). Add cabbage, chipotles, tomato sauce, and scallions. Toss filling to combine well. Season with salt and pepper to taste.
  • Place tortillas in a kitchen towel and place in microwave. Microwave 1 minute on high.
  • To build the chimichangas, place one of the tortillas on a flat surface. Sprinkle 2 tablespoons cheese near one edge of the tortilla. Pile 1/4 of the filling on top. Tuck sides up and roll tightly. Repeat with remaining tortillas, cheese, and filling.
  • Line a baking sheet with aluminum foil (DO NOT do this if you are using a toaster oven. Apparently foil can wreck the oven). Brush a thin layer of oil over the foil (If using a toaster oven, brush the oil directly on the baking tray).
  • Place chimichangas on prepared sheet. Brush lightly, but completely, with oil.
  • Bake until wraps are deeply golden, about 15-17 minutes.
  • Serve with sour cream, cilantro, tomatoes, and salsa, if desired.

These are a deliciously healthy, filling meal, and good for both everyday eating and when your vegetarian guests come over for dinner! My non-vegetarian husband doesn't even miss the meat when I fix these. This is a *big* batch, so plan on leftovers. :) Good for picnics & potlucks, too... see note below.

1 cup chopped onion
6 garlic cloves, minced
1 cup roughly-chopped mushroom (optional)
2 teaspoons olive oil
1 (7 ounce) can chopped green chilies
1 (16 ounce) can vegetarian refried beans
1 1/2 cups of your favorite salsa
2 cups cooked brown rice
1 (16 ounce) can regular black beans
1 (16 ounce) can black soybeans
1 ripe avocado, pitted, peeled, and cubed (optional)
1/2 teaspoon salt, to taste
1 -2 teaspoon chili powder, to taste
2 teaspoons powdered cumin
3 tablespoons sour cream (or non-dairy equivalent)
1 1/2 cups grated cheddar cheese or 1 1/2 cups soy cheese
grated cheddar cheese (to garnish) or soy cheese (to garnish)
flour tortilla (large burrito size)

Steps:

  • Sauté the chopped onion, garlic, and mushrooms (if using) in olive oil until onion is soft.
  • Add the chopped chilies, flatten mixture in bottom of pan and sauté, not stirring, until the onions begin to caramelize a little, then remove from heat.
  • In a large bowl, mix remaining ingredients except tortillas.
  • To put together the chimichangas, place about 3/4 to 1 cup of filling on a tortilla, fold the bottom over the filling, fold the sides in, then carefully fold/flip it over to close; repeat until you have as many chimichangas as you want to bake at one time.
  • Place the chimichangas on a cookie sheet, brush each one with 1/2 teaspoon of olive oil, and bake at 400 degrees F for 15 minutes.
  • Sprinkle each with grated cheddar, serve with extra sour cream, guacamole, and salsa, and enjoy!
  • Makes 8 to 10 large chimichangas, depending on the amount of filling you put in each.
  • (Black soybeans are good for those eating low carb because they are lower in carbohydrates and high in fiber. Information on black soybeans available at the Eden Foods website.).
  • Note: To make these for a picnic or potluck, instead of baking them as I would at home, I make the filling and put it in a container, then bring tortillas and toppings and set them all out so folks can make their own sort of burritos. It's very popular! :).
