Smoking corn gives it a unique flavor and then it's finished with a smoky lime butter right before serving! Try it for your next BBQ!

4 ears corn on the cob, silks removed
mesquite wood chips
2 tablespoons butter, melted
1 tablespoon chopped fresh cilantro
½ lime, juiced
1 lime, zested
1 teaspoon smoked paprika
salt and ground black pepper to taste

Steps:

  • Place corn back in their husks in a large pot of water and soak for 2 hours. Soak wood chips in another container of water for about 30 minutes.
  • Preheat a smoker to 250 degrees F (120 degrees C). Place corn, unstacked, onto wire racks. Place the racks into the smoker. Add wood chips according to manufacturer's directions. Smoke until corn reaches your desired level of tenderness, 60 to 75 minutes.
  • Combine butter, cilantro, lime juice, lime zest, and paprika in a small bowl. Peel back the husks and brush corn with the butter mixture. Season with salt and pepper.

Smoked Corn on the Cob with Bourbon Butter image

Sweet summer corn is lightly smoked and covered in a subtle, yet delicious bourbon-cinnamon butter. If you already have other foods going in your smoker at a higher temp, throw the corn in - just reduce the time slightly. I like using maple or fruit woods, but for a smokier flavor, use hickory or mesquite.

8 ears fresh corn
1 stick butter, softened
1 fluid ounce bourbon whiskey
⅛ teaspoon ground cinnamon
wood chips, soaked
salt to taste

Steps:

  • Pull corn husks back to remove and discard the silk. Pull husks back over the corn. Soak corn in a pot of water for 1 hour.
  • Place butter in a small dish. Add bourbon and cinnamon and carefully mix with a fork until well incorporated.
  • Preheat the smoker to 225 degrees F (110 degrees C).
  • Place corn, unstacked, onto wire racks. Place the racks into the smoker. Add wood chips according to manufacturer's directions. Smoke until corn is tender, turning halfway through, about 1 1/2 hours.
  • Pull husks off corn and spread the bourbon butter over corn. Sprinkle with salt.

  • Heat your smoker to 300F. Prepare wood chips or chunks according to manufacturer’s directions. Any type of smoking wood will work — we like using hickory.
  • Shuck the corn by peeling down the outside layers one at a time and keeping them attached, facing downwards away from the cob. When you’ve finished, use kitchen twine or string to tie the leaves together (see the photos). This step is optional, but it’s handy for making a natural handle for eating the corn. Otherwise, simply shuck the corn.
  • Place the corn cobs in a single layer on the grates and smoke until golden brown, 40 to 45 minutes. Turn once halfway through if the smoker allows. Serve immediately with butter and salt, using the tied husks as a handle for easy eating.

  • Prepare the corn. On each ear of corn, peel back the husk and remove the silk. Replace the husk and place the ears of corn in a large pot. Cover the corn with cool water, making sure it is completely submerged. Soak the corn for 2 hours.
  • Preheat the smoker. Preheat your smoker to 225 degrees F. I like to use mild woods like maple, alder, or pecan.
  • Butter the corn. Remove the corn from the pot of water. Set on a towel and pat dry. Melt the butter and stir in the Sweet Rub seasoning. Peel back the husks on the corn and brush each ear on all sides with the seasoned butter. Pull the husks back up over the ear of corn.
  • Smoke the corn. Place the seasoned, husk-on corn directly on the grates of the smoker. Close the lid and smoke for 90 minutes. Remove the corn from the smoker, peel back the husks, tie them off with butcher's twine to use as handles, and enjoy!
