CHEESEBURGER SUB WITH SPECIAL SAUCE

- To make the special sauce, add the mayonnaise to a small bowl and stir in the remaining ingredients. Store in an airtight container in the refrigerator. You can do this up to a week in advance.
- To make the cheeseburger subs, in a large skillet over medium heat, add the oil. Once the oil warms, add the ground beef and sprinkle with salt, pepper and paprika. Cook the beef, using a wooden spoon to break up the meat during the cooking process. Add the garlic and cook for 30 seconds, constantly stirring. Turn off the heat and drain the beef.
- Divide the beef among four sub rolls. Top each with 1/4 cup shredded cheddar. Place in the broiler until the cheese melts. This should only take about a minute, so keep a close eye to make sure the bread doesn't burn. Remove from the broiler and dress with special sauce and desired toppings. Lightly brush the sub rolls with melted butter. Enjoy!

SHEET PAN SAUSAGE AND PEPPER HOAGIES

- Preheat the oven to 450 degrees F. Toast the rolls on a sheet pan for 5 minutes. Set aside. Lower the oven temperature to 425 degrees F.
- Spread the peppers and onions on the sheet pan. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do. Nestle the sausages in and around the vegetables. Bake until the sausages are cooked through and the vegetables are tender, about 30 minutes.
- Meanwhile, create your sandwich spread. Mix together the mayonnaise, ketchup and mustard in a small bowl until combined. Set aside.
- Transfer the sausages to a cutting board and slice into coins. Spread each roll with as much or as little sandwich spread as you want, then load up with sliced sausage and roasted vegetables.
BACON CHEESEBURGER BITES

- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

- Heat gas or charcoal grill. In medium bowl, mix ground beef, salt and pepper. Shape mixture into 4 oval patties, about 1/2 inch thick, to fit hoagie buns.
- Cut 2 (18x12-inch) sheets of heavy-duty foil. Generously spray half of one side of each foil sheet with cooking spray. Place onions evenly in center of sprayed portion of foil; generously spray onions with cooking spray. Fold unsprayed half of foil over onions so edges meet; seal edges with tight 1/2-inch folds and fold again, allowing room for heat expansion.
- When grill is heated, place patties and packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 11 to 13 minutes, turning patties and packets over once, until meat thermometer inserted in center of patties reads 160°F and onions are tender.
- Spread cheese onto bottom halves of buns. Top each with lettuce leaf, patty and onions. Cover with top halves of buns.

- Preheat oven to 350. Place bread dough on cutting board, stretch slightly. Cut dough into four equal portions. Cut three diagonal slits on top of each portion of dough; place seam side down and 3 inches apart on cookie sheet. Bake 20-22 minutes or until golden brown. Immediately remove loaves from baking sheet to a cooling rack. Cut two slices of the cheese into small pieces. In a 10-inch skillet, cook and stir beef, onion, and garlic over medium heat 8-10 minutes or until no longer pink, breaking beef into crumbles. Drain. - Mix together ground beef and all ingredients (EXCEPT pepper jack cheese) in a medium bowl.
