2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
1 1/2 cups milk
1 cup regular sour cream or 1 cup light sour cream
1 teaspoon vanilla
butter or margarine, for cooking pancakes
fresh blueberries (optional)
fresh raspberry (optional)

Steps:

  • Microwave 2 tbsp (30 mL) butter in a small bowl until melted.
  • In a large bowl, using a fork, stir flour with sugar, baking powder and salt. Make a well in centre.
  • In a medium bowl, whisk eggs with milk, sour cream, melted butter and vanilla.
  • Pour into flour mixture and stir just until mixed.
  • Immediately melt about 1 tsp (5 mL) butter in a large frying pan set over medium heat. (Or save time by cooking on a large griddle or simultaneously in 2 pans.) Use a 1/4-cup (50-mL) measure to pour batter into hot pan. Depending on size of pan, add 1 to 3 more pancakes. Cook until surfaces are covered with bubbles and edges are lightly browned, from 2 to 3 minute Turn and continue to cook until pancakes are golden, from 2 to 3 minute.
  • Place on a plate and keep warm in a low-temperature oven while cooking remaining pancakes.
  • Delicious drizzled with maple syrup and scattered with fresh berries. Great with bacon or sausages.

1/3 cup pure maple syrup

1/2 cup sour cream
1/2 cup whole milk
1 large egg

Steps:

  • Make syrup:
  • Heat all ingredients in a small saucepan over medium-low heat, stirring occasionally, until butter has melted.
  • Make pancakes:
  • Preheat oven to 200°F.

  • Brush a 12-inch nonstick skillet with melted butter and heat over medium heat until hot. Steps:

  • In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and shortening; stir into dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

Another recipe from my Great Aunt's collection. She clipped this from the Chicago Tribune on July 5,1972, where it had won the weekly "$5 Favorite Recipe Prize." Makes a small batch. While the original version called for only 2 Tbsp of flour, I found they needed a bit more. These are very eggy pancakes - their texture and taste is quite different from a more floury pancake. They can be a little tricky to turn- make sure you keep the heat low enough not to burn them, and wait to flip until the surface really is riddled with air bubbles. Recipe doubles well.

1 1/2 tablespoons granulated sugar
1/2 teaspoon baking soda

Steps:

  • Combie dry ingredients, then mix in eggs, beating until smooth.
  • Blend in sour cream.
  • Pour 1/4-1/3 cup ladlefuls of batter on a well greased hot griddle (medium heat) until many small bubbles appear on the surface, flip over and brown the other side.
  • Repeat until all battter has been used.
  • Serve hot with butter and syrup or powdered sugar, if desired.
