A delicious smoked flavor combined with a sweet and tangy glaze. The meat is tender and moist. This was cooked on a propane smoker at 225 degrees for about 2 hours but could be coooked on the grill with a wood chips and a smoker box.

1 (3 -4 lb) boneless pork loin
3 -4 tablespoons cajun seasoning
1/4 cup maple syrup
1/4 cup hot sauce

Steps:

  • Rinse pork loin under running water and pat dry with paper towels.
  • Sprinkle the Cajun seasoning liberally over meat; rubbing into surface.
  • Allow to sit at room temperature for 45 minutes to 1 hour; place in smoker and cook for 30 minutes.
  • Mix together the syrup and hot sauce; baste meat frequently for the next 90 minutes or until internal temperature of meat reaches 160 degrees for medium or 170 degrees for well done.
  • To prepare on a grill: Prepare meat as above, place water soaked wood chips in a smoker box and place into hot coals.
  • Put the meat on rack over hot coals; cook, turning and basting every 15 to 20 minutes for 1 hour or until internal temperature registers 160 degrees on a quick read meat thermometer.
  • Allow meat to rest for 15 to 20 minutes before slicing and serving.

This is a recipe I have fiddled with for a few years. Rich and smokey, this pulled pork recipe will knock your socks off. As far as our famiy is concerned, if you can't get the real thing this is what you want. Originally, the recipes are all for a whole small pig (the name chocon de lait is roughly a "milk pig" or suckling pig)..enough of that... this is easy, do ahead, put it in the crockpot and prepare to hurt yourself. I hope you enjoy it as much as we do. Cook time includes the overnight cure and the marinating for 2 days

5 lbs boston butt or 5 lbs country-style pork ribs
3/4 teaspoon salt
1 teaspoon pepper
1 teaspoon cajun seasoning
4 garlic cloves, slivered, you want lots of garlic
1 lemon, juice of
1 lemon, zest of
1 large orange, juice of
1 large orange, zest of
2 1/2 tablespoons crab boil
1/4 cup cane syrup (can sub dark Karo)
1/4 cup Worcestershire sauce
1/2 teaspoon Tabasco sauce
1 teaspoon liquid smoke
3/4 cup olive oil

Steps:

  • Rub meat with salt and pepper and put in a large zip lock bag over night in fridge to cure.
  • Next day, rinse and make several slits all over and stud with garlic slivers and rub with a good amount of Cajun seasoning.
  • Put the meat in the bag, mix the rest of the ingredients in a glass bowl and pour over the meat.
  • Seal and put in the fridge for two days, turning a couple of times a day.
  • Remove from fridge and let stand till the chill is off.
  • Dump everything in a crockpot and cook on low overnight.
  • Pull the meat out and trim off fat, and shred the meat or tear it into chunks.
  • Let the liquid cook down a little, and add the meat back into the pot.
  • Serve this on Pistolets, or french bread cut about 6 inches long, or any other crusty bread.
  • Dress it with a good cole slaw.
  • It's hard to say how much this will make, for sandwiches it depends on how large your rolls are, and how much filling you use, but it is a good amount and it freezes well.

4 cups cubed peeled sweet potatoes
1 medium onion, chopped
1/2 cup chicken broth
3 garlic cloves, minced

Steps:

  • Rub 3 teaspoons Cajun seasoning over roast. Add the remaining ingredients to inner pot of a large multi-cooker; top with roast. Lock pressure lid. Press pressure function; select pork setting. Set to medium cook time (30 minutes). Start. , Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Remove roast; transfer vegetable mixture to a bowl; mash until smooth. Set aside; keep warm. Wipe inner pot clean. , Place roast on wire rack with handles. Use handles to lower into inner pot. Cover with air frying lid. Press air fry function; select custom setting. Press timer; set to 10 minutes. Start. Cook until a meat thermometer reads 145°. Let stand for 5-10 minutes before slicing. Serve with sweet potato mixture.

½ pound spicy bulk breakfast sausage
1 (2 pound) boneless pork loin roast
2 tablespoons barbeque seasoning
1 (8 ounce) package cream cheese, softened
2 medium jalapeno peppers, seeded and diced
cooking twine

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Meanwhile, preheat a smoker, according to manufacturer's instructions, until temperature is a steady 220 degrees F (104 degrees F).
  • Remove silver skin and fat from pork loin, then slice into the center and "unroll" it until flat. Season both sides with pork rub. Spread one side with cream cheese, then layer jalapenos and cooked sausage evenly over top. Carefully roll loin up into a fairly tight log and secure with cooking twine.
  • Smoke in the preheated smoker until an instant-read thermometer inserted into the center reads 140 to 145 degrees F (60 to 63 degrees C), about 2 hours. Remove loin and wrap tightly in aluminum foil. Let rest for at least 20 minutes before serving.
