I like it how it doesn't "cheat" by using a packaged cake mix. This recipe is from "Simply Delicious"- A cookbook comprised of Herberger's Employee Family Recipes.

Steps:
- Cream shortening, sugar, and eggs; add applesauce and mix well.
- Stir dry ingredients into mixture, alternating with water.
- Blend fruit and nuts into batter.
- Pour into greased and floured 9"x13" pan.
- Bake at 350 degrees for 55 to 60 minutes.
- Cool in pan and frost.
- Make frosting: Combine brown sugar, 1/4 cup milk and 3 tablespoons butter in top of double boiler.
- Cook rapidly for about 3 minutes, stirring.
- Cool to luke warm and add 1 teaspoon vanilla.
- Beat in confectioner's sugar to right consistency.

- Preheat oven to 350 degrees.
- Spray 8x8 metal pan with cooking spray.
- In a small bowl, stir together flour, baking soda, baking powder, cinnamon and ginger.
- Set aside.
- In a large mixing bowl, beat margarine and molasses with an electric mixer on high for about 1 minute.
- Add egg substitute and vanilla and blend on high speed for about 30 seconds.
- Mixture will be very liquid.
- add Splenda and beat on medium until smooth, about 1 1/2 minutes.
- Add flour mixture and applesauce and beat on low until mixed, about 45 seconds.
- Spread batter into prepared pan and Bake 30 minutes.

Steps:
- Preheat oven to 350 degrees Fahrenheit Spray a 13 x 9 pan with bakers joy or grease and flour.
- In a large bowl combine cake mix, eggs, applesauce and oil.
- Beat at medium speed for 3 minutes, stir in nuts or raisins.
- Pour into pan.
- Bake for 40 minutes or until toothpick inserted into middle of cake comes out clean.
- Cool in pan for 20 minutes.
- Cool on rack until completely cool.
- Frosting: In a small bowl mix frosting and ground cinnamon until completely mixed.
- Frost cool cake.

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
- To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

- Peel, core and quarter the apples. In a Dutch oven, bring apples, water and cinnamon to a boil. Reduce heat; cover and simmer 10-15 minutes or until apples are tender. Remove from the heat. - Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.
- Bake in the preheated oven for 75 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Pour glaze over cake and let stand for 1 hour before turning out.

If you make your own homemade applesauce than this is the cake recipe for you. Using store-bought just will not work ( I tried, very dry and hard result). But with the homemade this is a very moist, delicous and versatile cake, I have served it plain sans icing, iced it with my grandmothers butterscotch icing or vanilla or cream cheese icings, all with rave reviews. - Grease and flour bundt pan. Set aside. Preheat oven to 350 degrees.

- Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
- In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.
