MEXICAN FIESTA FISH
Dinner on the table, quickly, with a minimal effort! I found this recipe on a another website. It is so easy and delicious!

Steps:
- Lay the fish fillets in a single layer in a greased 8"x12" baking dish.
- Pour the salsa over the top, and then sprinkle evenly with the shredded cheese.
- Top everything with the crushed corn chips.
- Bake, uncovered, at 400°F for 15 minutes, or until fish is opaque and flakes with a fork.
- Serve with choice of garnish: sliced avocado, green chiles, olives and sour cream.
FIESTA ROSA SEA BASS

- Preheat oven to 400 degrees F.
- Season fish inside and out with salt and pepper. Pour about 1 tablespoon of oil into a large roasting pan, reserving the rest of the oil. Lay the fish in the pan and holding the sliced side of the lemon half against your palm, squeeze the juice into the inside cavity of the fish. Stuff the inside cavity with shallots, cilantro, and the thyme. Slice the rest of the lemon and lay the slices on the top (outside surface) of the fish and drizzle the rest of the oil on the outside of the fish.
- Roast until internal temperature reaches 135 degrees F, about 20 minutes. (There will be some carryover cooking even after you remove fish from oven.)
- Let rest and transfer to a platter. Serve family style with whipped potatoes.
WHOLE GRILLED FIESTA FISH

- Add the cilantro, jalapeno, garlic, orange zest, lime zest, lemon zest, grapefruit zest, orange juice, oil, lime juice, lemon juice, grapefruit juice, agave, 2 teaspoons salt and 1 tablespoon pepper to a large re-sealable plastic bag and mix well.
- Add the fish and turn to coat, allowing the marinade to get inside the fish as well. Cover and refrigerate for 15 minutes, flip over and refrigerate 15 minutes more.
- Preheat the grill to a low heat setting. Using a paper towel, rub the grill grates liberally with the canola oil 7 to 10 times.
- Remove the fish from the marinade and stuff the cavity with the lemon slices, if using, and a couple tablespoons of the marinade and place on the hot grill. Cook for 10 to 12 minutes, carefully turn over using a fish spatula and cook for an additional 10 to 12 minutes, or until the fish is flaky.
- While the fish is cooking, place the lemon halves cut-side down on the grill until lightly charred.
- Remove from the grill and cut the meat from the bones. Serve the fish with grilled lemons squeezed over top.
FISH FILLETS
I adopted this recipe in the recipe adoption of February 2005. The only major change I made to this recipe is to change the cooking method from microwave to oven. I prefer to cook fish in the oven, and it only takes a couple of minutes longer. I also added measurements to the spices. DH doesn't like curry powder, so I made the curry powder optional. This recipe is easy to double for 2 servings.

- Preheat oven to 400 degrees F (200 degrees C).
- Lightly grease one 8x12 inch baking dish.
- Rinse fish fillets under cold water, and pat dry with paper towels.
- Lay fillets side by side in the prepared baking dish.
- Pour the salsa over the top, and sprinkle evenly with the shredded cheese.
- Top with the crushed corn chips.

FESTIVE FISH FILLETS
I saw beautiful tomatoes in November at the Mexican/Arabic/Polish market and had to use them with the fish I was planning for dinner. I remembered a recipe I had seen while at the dentist's ". This recipe is festive in its appearance and its flavors. I hope you enjoy it as much as we did.

Steps:
- Preheat oven to 350 deg. F.
- Combine cilantro, garlic, lemon juice and 2 tbl. olive oil. Place in dish or plastic bag, and add fish fillets. Be sure fish is coated in marinade. Marinate for about 30 min., while completing rest of dish.
- Grease baking dish with 1 tbl. olive oil. Distribute sliced onions on bottom, top with chopped tomato, and sprinkle with salt and freshly ground pepper. Cover with aluminum foil and bake for 30 minutes - onions should be soft.
- Place fillets on tops of onion/tomatoes and drizzle marinade on top. Sprinkle with salt and pepper. Return to oven and bake until fish is flaky, about 30 minutes.
- Serve with rice or couscous.
- Note: Cooking time will depend on thickness of fillet. If you use very thin fillets, you may need to remove them earlier and keep them warm, and return the onion/tomato mix to the oven. Total oven time should be about one hour.
FIESTA RED SNAPPER

- Heat oil in large skillet over medium-high heat. Add onion and sauté 3 minutes. Add green chilies, 2 tablespoons chopped cilantro and garlic; sauté 2 minutes. Mix in tomatoes with juices, breaking up tomatoes with back of fork. Sprinkle fish with salt and pepper; place fish atop sauce. Bring to simmer. Cover skillet, reduce heat to medium-low and simmer until fish is just opaque in center, about 8 minutes.
- Transfer fish to platter. Simmer sauce to thicken slightly, if desired. Season sauce with salt and pepper. Spoon sauce over fish. Sprinkle with remaining 2 tablespoons cilantro. Surround with lime wedges and serve.
