WHITE WINE GARLIC SALMON
Juicy, tender white wine garlic salmon pan fried and cooked in a delicious sauce is an easy,fool-proof recipe. Perfect served with greens for dinner.

Steps:
- Heat a large frying pan over high heat and add a splash of canola oil.
- Dry the salmon fillets with paper towel and season generously with salt.
- Carefully place the salmon into the hot pan, skin-side down, and turn down the heat to medium-high. Cook the salmon for 3-4 minutes until the skin is golden brown and crisp then flip over. Cook for another 1-2 minutes on the flesh-side until the salmon is cooked through. Remove from the pan and set aside.
- Melt the butter in the pan and add the garlic. Fry until fragrant then add the wine and lemon juice.
- Allow to simmer and reduce for 4-5 minutes then add the parsley and season to taste.
- Add the salmon back into the pan and baste with the sauce, allowing the salmon to heat back up.
- Serve with extra lemon wedges.

HOT SMOKED SALMON
Steps:
- The night before serving, combine the granulated sugar, brown sugar, 2 tablespoons salt, the peppercorns, and lemon zest in a small bowl. Place the salmon fillets skin-side down on a large flat ceramic or glass dish. Spread the mixture evenly on top of the salmon. Cover the dish with plastic wrap and refrigerate.
- At least 1 1/2 hours before you plan to cook the salmon, soak the wood chips in water.
- Thirty minutes before you¿re ready to cook, heat the charcoal. Place a double layer of coals on one side of the grill, light them, and allow them to burn until the coals are gray on the outside. (I use a charcoal chimney to light the coals.) Sprinkle half the soaked wood chips on the hot coals (you will see lots of smoke). On the other side of the grill, place the foil pan and pour in 1 cup water. Place the cooking grate over the coals and the pan.
- Scrape most of the sugar mixture off the salmon and sprinkle with 1 teaspoon of salt. Place the salmon skin-side down on the side of the grill directly over the foil pan. Put the lid on the grill, making sure the top and bottom vents are open. Smoke the salmon for 10 minutes. Add the remaining wood chips directly on the coals and cook for 5 to 10 more minutes, depending on the thickness of the salmon, until it's firm to the touch and barely cooked. Don't overcook the salmon or it will be dry!
- Transfer the salmon to a clean platter and immediately cover tightly with aluminum foil. Allow to rest for 10 minutes. Remove and discard the skin, if desired, and serve hot, at room temperature, or cold with the Fresh Dill Sauce.
- Place the mayonnaise, sour cream, yogurt, cream cheese, scallions, dill, parsley, lemon zest, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Puree for a few seconds, until well mixed. Add the cucumber and puree for another few seconds, until combined. Pour into a container and refrigerate for a few hours to allow the flavors to develop.

- To a large bowl, add sugar, kosher salt, soy sauce, water, wine, onion and garlic powders, pepper and tabasco sauce. Use a whisk to incorporate and thoroughly dissolve the sugar and salt.
- Pour a little of the brine in the bottom of a 13x9-inch pan. Transfer salmon to the pan and pour remaining brine over the salmon to cover. Refrigerate for 8 hours.

SMOKED SALMON

- Wash the salmon fillets thoroughly and place in a pan. In a large bowl, combine soy sauce, olive oil, garlic, ginger, and sugar and mix well. Pour the marinade over the fillets. Refrigerate for 4 to 6 hours.
- Preheat a smoker to 250 degrees F with hickory chips.
- Place salmon on the smoker. Smoke for 60 to 90 minutes, or until fish flakes nicely.
- Serve with freshly squeezed lemon just before serving.
SALMON IN A SOY & HONEY MARINADE
An Asian-inspired simple and satisfying recipe. Beautiful in the summer with a crisp white wine.

- Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
- Rinse the fish with clean water and gently pat dry with kitchen paper.
- Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
- Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
- Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
- Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
- Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.
MESQUITE-SMOKED SALMON
This wonderful salmon can be prepared in a smoker or barbeque and is outstanding served with my Recipe #232006. It's an elegant appetizer or first course but it can also be a lighter main entree also. I've used thick salmon filets instead of the whole fish. Originally from a July 1984 Bon Apetit magazine that featured A Glorious Feast for the Fourth of July. Marinating time is not included in prep time.

Steps:
- Combine chopped cilantro, wine, soy sauce and lemon juice in a small bowl.
- Whisk in oil a little at a time.
- Place fish in a nonaluminum pan.
- Pour marinade over; refrigerate salmon 4 hours or overnight, turning occasionally.
- Remove fish from marinade and place on rack 30 minutes to dry.
- Pour marinade into smoker's water bath.
- Spread mesquite chips on rack of gas or electric smoker.
- Add onion and bay leaves to water bath and fill with water.
- Fill fish cavity with 1 cup cilantro leaves and stems.
- Oil smoker rack and set fish on rack.
- Cover smoker;set heat on high.
- Smoke salmon until fish is just opaque, about 1 hour.
- Cool 15 minutes.
- Discard skin and grey meat from fish.
- Set fish on platter;surround with cilantro and lemon slices.
- Serve at room temperature with Cilantro Sauce (Recipe #232006).
- To smoke fish in a covered barbeque, prepare medium-low coals in barbeque grill. Push coals to sides.Place marinade,onion and bay leaves in 7x11-inch disposable aluminum pan. Place in center of coals and fill with water. Spread mesquite chips over coals. Oil grill rack. Set fish on rack, cover and smoke,turning once and cooking until opaque, about 1 1/2 hours.

Steps:
- Melt butter in a large frying pan over medium low heat.
- Add shallots and garlic and cook, stirring occasionally, until soft, 5 minutes.
- Add wine and simmer until reduced by half, 3 minutes.
- Add cream, lemon zest and juice, chives and salmon.
- Heat over medium low heat, without boiling, until hot through, 1 minute.
- Add salt& pepper to taste.
- Meanwhile, cook pasta, drain, reserving 1/2 cup pasta water.
- Add pasta to the sauce.
- Toss well to coat, adding reserved water as needed.
- Stir through chopped parsley, if using.
- Top with Salmon roe, if using.
- Serve immediately.

- In a suitable container, combine all ingredients, except salmon and wood chips. Mix well, add salmon, cover and refrigerate 8 or more hours. Drain and transfer to smoker, putting thicker pieces on the bottom shelves. Smoke 10 to 12 hours, refilling wood chips in smoker pan 2 to 3 times.
