This is an awesome pasta that is quick to make and very satisfying. I first copied a recipe from Bon Appetit and then combined it with several recipes from my cookbooks. Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
  • Add capers, parsley, salt and pepper. Mix well.
  • Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
  • Serve.

16 ounces linguine
1 1/2 cups heavy cream
1 teaspoon dry onion flakes
1 (300 g) package frozen asparagus, thawed and cut in pieces of 3/4 inch
2 (135 g) packages smoked salmon fillets, flaked (type Atkins) or 9 ounces slivered smoked salmon, cut in straps
1 cup parmigiano-reggiano cheese, grated
salt and pepper

Steps:

  • In a large saucepan with boiling salted water, cook pasta 8 to 10 minutes or until al dente. Drain and put back in the saucepan.
  • Meanwhile, in another saucepan, bring to boil heavy cream and dry onion flakes.
  • Add asparagus and smoked salmon, cook at low heat until warm.
  • Remove from the heat, add 1/2 cup of parmigiano reggiano and stir. Add salt and pepper.
  • Add sauce to the pasta and stir to coat well.
  • Sprinkle each serving with remaining parmigiano reggiano.

8 ounces uncooked linguine
1 bunch broccoli, cut into florets
2 tablespoons butter
2 garlic cloves, minced
2 cups heavy whipping cream
2 tablespoons lemon juice
1 pound fully cooked salmon, flaked
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Parmesan cheese
3 tablespoons minced fresh basil or 1 tablespoon dried basil
2 tablespoons capers, drained
2 teaspoons grated lemon zest

Steps:

  • Cook linguine according to package directions, adding broccoli during the last 5 minutes of cooking., Meanwhile, in a large skillet, heat butter over medium heat. Add garlic; cook and stir 1 minute. Stir in cream and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened, stirring constantly., Add salmon, salt and pepper; heat through. Drain linguine and broccoli; add to skillet. Stir in cheese, basil, capers and lemon zest.

11 ounces linguine
salt & freshly ground black pepper
1/2 cup heavy cream
1/2 cup white wine
scallion (1 bunch , shredded )
4 artichoke hearts (cooked and chopped )
1 teaspoon whole grain mustard
7 ounces smoked salmon (cut into strips , about 1 cup )

Steps:

  • Cook the linguine in boiling salted water according to the instructions on the packet.
  • About 3 minutes before the end of the pasta cooking time, put the cream wine , scallions, artichoke hearts, and mustard in a pan and heat gently, stirring to combine.
  • As soon as the pasta is cooked, drain well. Stir the smoked salmon in to the cream mixture, season to taste with salt and pepper, then pour over the pasta and toss well to combine. Serve immediately.

Salt
2-3 ounces linguine
1 teaspoon butter
2 scallions, sliced fairly thin
A splash of vodka
2 or 3 slices smoked salmon
3-4 tablespoons heavy cream
Freshly ground pepper
1 teaspoon capers, rinsed
A scattering of chopped fresh parsley

Steps:

  • While the linguine is boiling (see page 181), melt the butter in a small wok or a medium skillet. Toss in the scallions, and sauté gently for 1 minute, stirring. Splash in the vodka and let it cook down a little. Tear or cut the salmon into small bite-sized pieces, and stir them into the sauce. Pour in the cream and bring to a simmer. When the linguine is done al dente, scoop it up with a spider and tongs, letting the water drain off, and mix it in with the sauce. Grind pepper generously over the pasta, and stir in the capers and parsley, then spoon it all up into a warm bowl.

1 lb dry linguine
2 tablespoons extra virgin olive oil
1 cup thinly sliced mushroom
1 tablespoon minced garlic
1/4 teaspoon crushed red pepper flakes
1/2 cup clam juice
1/4 cup lemon juice
1 tablespoon lemon zest
1/4 cup white wine
1 cup cream
2 cups raw asparagus, thinly bias cut
3/4 cup red bell pepper, cut matchstick size
6 -8 ounces smoked salmon, cut in thin slices (or flaked)
salt and pepper
2 tablespoons thinly sliced chives or 2 tablespoons scallions
3 -4 tablespoons chopped parsley

Steps:

  • Right before making the sauce, cook the pasta according to package directions, until just al dente. Drain it will, toss very lightly with a splash of olive oil and salt to taste, then cover and keep warm.
  • To make the sauce; Heat 2 tablespoons olive oil in a large saute pan over medium-hight heat. Add the mushrooms and saute until lightly browned, about 2 minutes.
  • Add the garlic and pepper flakes, and saute 30 seconds more. Add the clam juice, lemon juice, zest, and wine. Cook until the sauce is reduced by half, about 3 minutes.
  • Whisk the cream, than add the asparagus and bell peppers, and bring sauce to a quick boil to thicken. Add the smoked salmon and cooked pasta. Season with salt and pepper to taste. Cover and let heat through.
  • Place pasta on a large platter and sprinkle with the herbs.

300g spaghetti
1 tbsp olive oil
1 red chilli, deseeded and finely chopped
120g pack smoked salmon trimmings
zest 1 lemon and juice to taste
good handful snipped chives or finely chopped spring onions

Steps:

  • Cook the spaghetti for 10 mins or following pack instructions until al dente.
  • Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli to soften it.
  • Drain the spaghetti, reserving a little of the water, then tip into the wok and, using 2 wooden spoons, toss in the chilli oil until well mixed. Add the salmon, lemon zest and chives or onions, then toss again. Season and add lemon juice to taste.

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente. Reserve 1 cup of the pasta water then drain the pasta and put it back into the pot. Place the spinach on top of the pasta.
  • While the pasta cooks, begin making the sauce. Heat the oil in a large pan over medium-high heat. Add the onion and cook for 2 minutes, until it is transparent. Add the garlic and cook for 1 minute.
  • Break the smoked salmon into pieces and add it to the pan along with the cherry tomatoes, artichoke hearts, sour cream, lemon juice, capers, chili flakes, and ½ cup of the pasta water. Bring the pan to a boil and stir until everything is creamy and mixed together. Season to taste with salt and pepper then mix in the dill.
  • Pour the smoked salmon sauce into the pasta pot and mix everything together. If needed, add a splash more pasta water to loosen the pasta.
