Smoked Pulled Pork Lettuce Wraps with Asian Dipping Sauce image

A fun way to jazz up lettuce wraps. Use leftover pulled pork and combine with this Asian inspired sauce. Top with your favorite veggies and pair with a crisp Riesling.

1 cup soy sauce
1/2 cup balsamic vinegar
2 tablespoons brown sugar
1/4 cup green onion
1 sprig rosemary (about 4-6 inches, the whole sprig, no need to break apart or chop)
1 garlic clove
1/4 teaspoon fresh ginger (grated or just a whole chunk)
1 tablespoon honey
1 tablespoon slurry (a mix of 1 tablespoon water and 1 tablespoon cornstarch, this will help the mix thicken)
2 cups pulled pork (approximately 1 lb)
2 carrots (julienned)
2 cups purple cabbage (shredded or julienned)
1 head Boston (or "Butter" lettuce, leaves separated)
1/2 cup green onions (chopped (for topping))
1/4 cup cilantro (chopped (for topping))

Steps:

  • Whisk all the sauce ingredients together in a small saucepan. Bring to a boil, then reduce to a simmer. Then strain after 12 minutes of reducing. Add back into the saucepan over heat.
  • In a separate small sealed container add 1 tablespoon of water with 1 tablespoon cornstarch or flour. Add the "slurry" to the saucepan with the strained sauce. Whisk to combine. Let continue simmering for 8-10 minutes until the sauce has thickened. Set aside.
  • In a large skillet heat up the pork on medium heat until warmed. Add 2-4 tablespoons of the sauce to the meat, as desired. Save the remaining sauce for topping your wraps. Remove from heat.
  • Assemble lettuce wraps: Scoop pork mixture into lettuce leaves, and top with your vegetables, onions, and cilantro. Drizzle with more reserved sauce as desired.

2 Tablespoons mirin
1 Tablespoon oyster sauce
1 Tablespoon rice vinegar
1 Tablespoon vegetable oil
1 pound ground chicken breast
1 8-ounce can water chestnuts (drained and minced (about 1 cup))
10 fresh or dried shitake mushrooms
4 cloves garlic (chopped finely)
1 green onion (thinly sliced, for garnish)
1 - 1 1/2 cups fried rice sticks
Lettuce cups (for serving)
3 Tablespoons soy sauce
1 Tablespoon rice vinegar
1 - 3 teaspoons chili garlic sauce
1/2 - 1 teaspoon Chinese hot mustard paste
1/8 teaspoon chili oil
1 green onion (thinly sliced)

Steps:

  • Prepare the marinade by mixing all of the ingredients together in a small bowl.
  • Mix the ground chicken meat, chopped mushrooms and water chestnuts with all the Marinade ingredients. Set aside for 15 minutes.
  • Prepare the rice sticks by pouring 2 inches of vegetable oil into a wok and heating it on high to around 375 degrees. Add the rice sticks. They will instantly puff up and float to the top. Remove with a slotted spoon and let drain on paper towels.
  • Heat the cooking oil in a wok or saute pan over high heat. Saute the garlic until light brown and then immediately add the chicken. Stir-fry the ground chicken, breaking it up with a spoon until cooked through. Set aside.
  • Serve the chicken with a side of lettuce cups.

olive oil
1/4 cup hoisin sauce
1 tablespoon low sodium soy sauce
1 tablespoon oyster sauce
bib lettuce for serving
green onions for garnish (if desired)
sesame seeds for garnish (if desired)

Steps:

  • Heat grill to medium heat. Spray with nonstick cooking spray.
  • Drizzle pork with olive oil and grill for 20-25 minutes or until fully cooked. Allow the pork to rest on a cutting board for 5 minutes before slicing.
  • While the pork is cooking make the sauce. Add hoisin sauce, soy sauce and oyster sauce to a large skillet or pan. Cook over low heat until heated through.
  • Cube the cooked pork into bite sized pieces.
  • Toss the cubed pork into the sauce.
  • Serve immediately over bib lettuce with green onions and sesame seeds, if desired.

For Each Roast:
1 bone-in pork roast about 4 1/2 pounds**
1/8-1/4 cup sriracha sauce plus more for serving (we did 1/4 with kids eating)
1/2 cup Thai sweet chili sauce plus more for serving
1/2 cup water optional
1-2 heads bib lettuce or butter lettuce
4-6 handfuls of applewood or cherry wood smoking chips
Good for up to 4 roasts:
1 recipe of our Asian broccoli slaw
1 recipe of our avocado cucumber salad

Steps:

  • 1. Prepare grill to 350 degrees. Add 6 large handfuls of applewood or cherry wood chips to the smoking boxes (we used 4 applewood and 2 cherries). Place roast(s) on grill and close lid.2. Cook for 5 hours on the grill adding charcoal as needed to maintain heat at least over 300 degrees or once the smoke has stopped, transfer the roasts into a slow cooker (high for 4-6 hours or low for 6-8 hours).3. Once the meat is done, shred or slice it into chunks (depending on the cut) and add sauces. If meat is dry a 1/2 cup of water can be added. Hold meat in the slow cooker until serving time, stir and add water every 30 minutes if time is extensive.4. Serve with Asian broccoli slaw and avocado cucumber salad on the lettuce cups.

1 garlic clove, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon mirin (sweet rice wine)

1 teaspoon fish sauce, optional
ASSEMBLY:
8 Bibb lettuce leaves
1/2 English cucumber, finely chopped
1 small sweet red pepper, finely chopped
3 green onions, chopped
1/2 cup each coarsely chopped fresh basil, cilantro and mint
1 jalapeno pepper, seeded and finely chopped
1/4 cup salted peanuts, chopped
Hoisin sauce
Lime wedges

Steps:

  • In a small bowl, mix vinegar, sugar and salt until blended. Stir in carrots and onion; let stand at room temperature 30 minutes., In a large skillet, cook pork, ginger and garlic over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if desired, fish sauce., To serve, drain carrot mixture. Place pork mixture in lettuce leaves; top with cucumber, red pepper, green onions, carrot mixture and herbs. Sprinkle with jalapeno and peanuts; drizzle with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over filling.

2 teaspoons vegetable oil, plus more for brushing
1/4 cup low-sodium soy sauce
1 tablespoon Sriracha (Asian chile sauce), plus more for drizzling
1 1/2 teaspoons grated peeled ginger
1 large pork tenderloin (about 1 1/4 pounds), halved lengthwise
2 carrots, diced
1/2 English cucumber, diced
2 tablespoons fresh lime juice, plus wedges for serving
2 teaspoons packed light brown sugar
12 large Bibb or Boston lettuce leaves
Chopped fresh cilantro, for topping

Steps:

  • Combine the rice and 1 1/2 cups water in a medium saucepan; bring to a simmer over medium-high heat and cook until most of the water is absorbed, about 4 minutes. Reduce the heat to low; cover and continue cooking until all of the water is absorbed, about 12 more minutes. Uncover and transfer to a large bowl to cool slightly.
  • Preheat a large grill pan or grill over medium heat and brush with oil. Combine 2 tablespoons soy sauce, the vegetable oil, 1 1/2 teaspoons Sriracha and 1 teaspoon ginger in a bowl; rub all over the pork. Transfer the pork to the grill pan; cook about 8 minutes per side for medium doneness. Transfer to a cutting board and let rest 5 minutes; thinly slice.
  • Stir the remaining 2 tablespoons soy sauce, 1 1/2 teaspoons Sriracha and teaspoon ginger into the rice. Add the carrots, cucumber, lime juice and brown sugar and toss. Serve the rice and pork in the lettuce leaves; top with cilantro and drizzle with more Sriracha. Serve with lime wedges.

Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes.   • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.
