SMOKED PORK CHOPS WITH PINEAPPLE

Smoked Pork Chops With Pineapple image

If you can't find smoked pork chops just use the bone-in porkchops. These are great served with mashed potatoes or white rice. Seems like a lot of work, from stove top to oven, but they're great.

Categories     Pineapple

Time 40m

Yield 3-6 serving(s)

Number Of Ingredients 9

6 smoked pork chops or 6 pork chops
6 pineapple slices, with juice
1/3 cup brown sugar
2 tablespoons spicy brown mustard
1 medium sweet onion, finely chopped
4 tablespoons butter
2 tablespoons unsalted butter
1 -2 large garlic clove, crushed
salt and pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium-sized skillet over low-medium heat, melt the 4 tablespoons of butter, add the sugar and stir until dissolved. Add the sweet onions, stir. Cook the onions until tender; stirring often, don't let them brown. Add the pineapples with their juice and arrange in a single layer. Reduce heat to low and allow them to caramelize, 5-7 minutes. Remove from heat.
  • In a large skillet add 1 1/2-2 cups of water and bring to a boil, place pork chops in the boiling water and cook until no longer pink, 5-6 minutes Remove from the water.
  • In a separate large skillet over medium-high heat, melt the 2 tablespoons of unsalted butter, add the garlic and cook for 1 minute, add the mustard and stir into the butter. Sprinkle both sides of each chop with pepper and salt and add to the skillet with the garlic and mustard. Cook on each side for 5-7 minutes. Don't move them while cooking. Remove from heat. Allow them to rest in skillet for 2 minutes.
  • Transfer pork chops to a large ungreased glass baking dish, arrange the porkchops in a single layer. Put one pineapple slice on top of each chop and spoon the onions from the pan over them. Bake for 15-20 mins or until done (depending on the thickness of you porkchops) Enjoy!

SMOKED PORK CHOPS WITH PINEAPPLE-ROSEMARY SAUCE

Smoked Pork Chops with Pineapple-Rosemary Sauce image

Categories     Fruit     Sauté     Pineapple     Rosemary     Pork Chop     Summer     Gourmet

Yield Makes 2 servings

Number Of Ingredients 10

1 pineapple (labeled "extra sweet"), peeled (reserving rind), quartered, and cored
1/4 cup olive oil
1 (4-inch) sprig fresh rosemary
1 large garlic clove, smashed
2 teaspoons fresh lemon juice
1/8 teaspoon salt
2 (6- to 8-oz) fully cooked smoked pork chops
1 rounded 1/4 teaspoon black pepper
Special Equipment
cheesecloth

Steps:

  • Put aside one fourth of pineapple for another use. Cut enough of remainder into 1/4-inch dice to measure 1/2 cup and reserve the rest. Squeeze juice from reserved rind with your hands into a blender. Cut reserved pineapple into 1-inch chunks and purée with juice in blender at high speed until very smooth, about 1 minute.
  • Pour purée into a dampened-cheesecloth-lined sieve set over a bowl. Drain until you have 1 cup juice, about 30 minutes.
  • Boil juice in a small skillet over moderately high heat until reduced to about 1/4 cup, 10 to 14 minutes.
  • Meanwhile, cook oil, rosemary sprig, and garlic in a small heavy saucepan over moderately low heat, stirring, until garlic is golden, 2 to 3 minutes. Discard rosemary and garlic and transfer 1 tablespoon oil to a 10-inch heavy skillet. Whisk remaining oil into reduced juice and stir in diced pineapple, lemon juice, and salt.
  • Pat chops dry. Sprinkle with pepper.
  • Heat oil in skillet over moderately high heat until hot but not smoking, then sauté chops, turning once, until browned and heated through, about 5 minutes. Transfer to a platter and keep warm.
  • Discard fat from skillet, then add pineapple sauce and bring to a boil over moderate heat, scraping up any brown bits. Pour sauce over chops.

PINEAPPLE PORK CHOPS

SMOKED PORK CHOPS WITH APPLES

Smoked Pork Chops With Apples image

I was looking for something new to do with some smoked pork chops and I found a recipe on cooks.com that I altered slightly. The original called for cranberry-apple drink rather than cider. The glaze never really thickened for me, but it the chops were still delicious. I used MacIntosh apples, unpeeled. My kids and husband cleaned their plates and my husband has already requested that I make it again.

1/2 zest and an orange, juice of
3 cups blueberry jam
1/2 teaspoon salt
1 pinch white pepper
4 1/2 teaspoons cane vinegar (or malt vinegar)

Steps:

  • For the Pork Chops:.
  • In a gallon container, add 1 quart warm water. Add the Kosher salt and light brown sugar. Whisk until dissolved. Add ice cubes and cold water to make 1 gallon brine.
  • Place the pork rack in a large container and cover with the cold brine. Refrigerate for 15 hours.

  • Fire up the smoker and "cold-smoke" the pork rack at about 125° for 3-4 hours, turning once. Refrigerate the smoked pork rack until thoroughly chilled. The pork should have good smoke flavor on the outside, but be nearly raw on the inside.
  • Cut the pork rack into 8 pork chops.
  • For the andouille sweet potato hash:.
  • Cook the sweet potatoes: Preheat oven to 350°. Heat 2 Tablespoons of butter in a large pan over medium-high heat. Add the diced sweet potatoes and cook, stirring constantly for 4-5 minutes.

  • In a separate pan, melt 2 Tablespoons of butter over high heat. Add the diced andouille sausage and cook, stirring occasionally, until the andouille is well browned.
  • Add the celery and onions. Cook, stirring occasionally, until the onions are soft and clear.
  • Reduce heat to low. Add the salt, white pepper, black pepper, cayenne, savory, and thyme. Cook, stirring occasionally for 1-2 minutes.
  • Add the roasted sweet potatoes and mix well. Cook until warmed through, remove from heat.
  • For Chef Frank's Veggie Mojo seasoning:.
  • Combine all ingredients.
  • For the blueberry cane vinegar glaze:.
  • Make blueberry compote: In a pot, add the blueberries, lemon juice, sugar, and vanilla.
  • Cook over low heat, stirring occasionally, just until the blueberries begin to break up and form a thick, syrup-like consistency. Remove from heat and set aside to cool.
  • Heat the duck fat or olive oil in a pot over high heat. Add the onions and cook, stirring occasionally, until the onions are well browned (caramelized).
  • Add the reduced stock, orange zest, orange juice, 3 cups of blueberry compote, salt, and white pepper. Bring the mixture to a boil. Reduce heat to medium-low and simmer for 15 minutes.
  • Add the cane vinegar and purée the sauce with a hand mixer. Strain through a large-holed strainer (China cap).
  • To serve:.
  • About 1/2 cup mild olive oil.
  • 8 cold-smoked pork chops.
  • about 8 teaspoons Chef Paul Prudhomme's Meat Magic® seasoning.
  • Andouille sweet potato hash.
  • Blueberry cane vinegar glaze.
  • Preheat oven to 500°. Season the pork chops lightly on all sides with the meat seasoning. Heat a large pan, or large skillets, over medium-high heat. Sear the pork chops on both sides, place in oven, and cook just until done, 8-10 minutes.
  • Serve each pork chop with 1/2 cup of the hash and 1/4 cup of the sauce.

EASY BBQ PINEAPPLE PORK CHOPS SKILLET (HAWAIIAN RECIPE)
I have to confess that I don’t make pork chops that often. Usually, I’ll make pork roast in the slow cooker, and then we’ll have pulled pork sandwiches, carnitas, or even pork roast soup for leftovers. But those definitely fall and winter recipes, and since it’s still warm out, I wanted to pan-fry the pork chops on the stove instead and add some magic pineapple to spice things up.
