BLACK BEANS AND PORK CHOPS
A hearty dinner, great with rice! It is one of family's favorite dinners given to me by my sister. You may adjust amounts of beans and salsa to your preference. I always seem to add more!

Steps:
- Season pork chops with pepper.
- Heat oil in a large skillet over medium-high heat. Cook pork chops in hot oil until browned, 3 to 5 minutes per side.
- Pour beans and salsa over pork chops and season with cilantro. Bring to a boil, reduce heat to medium-low, cover the skillet, and simmer until pork chops are cooked no longer pink in the center, 20 to 35 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

LIMA BEANS AND PORK CHOPS
Steps:
- Preheat the oven to 350 degrees F.
- Cook lima beans in salted water until almost tender, and reserved 1/2 cup of the cooking liquid. Pour the lima beans into a large flat baking dish with the reserved liquid. Stir in the salt, pepper, sugar, mustard, parsley, savory, thyme, and chopped onion. Mix well.
- Heat the butter in a large skillet over medium-high heat. Add the chops and cook, turning once, until well browned. Place the chops on top of the beans.
- Mix bread crumbs with sour cream. Spread over chops. Cover dish and bake for 8 minutes. Uncover the chops and continue baking, until lightly browned, about 8 minutes more.
- Arrange the chops on a bed of the lima beans on a large platter and sprinkle with parsley. Serve.

Steps:
- Place cannellini beans in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Melt butter in a heavy pot over medium heat. Cook and stir onion in hot butter until translucent, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
- Stir pork shank, water, chicken stock, and bay leaves into onion mixture; bring to simmer, reduce heat to low, cover the pot with a lid, and simmer until flavors blend, about 45 minutes.
- Turn shank over and stir oregano, rosemary, and red pepper flakes into chicken stock mixture; add beans and stir. Return mixture to a simmer, cover the pot with a lid, and simmer until beans are almost tender, about 1 hour. Simmer uncovered until beans are tender, about 30 minutes more. Cool to room temperature, cover the pot, and refrigerate, 8 hours to overnight.
- Spoon accumulated fat from the top of the chilled bean mixture and discard fat. Remove pork shank; cut meat into slices and discard bone.
- Stir sliced pork shank, tomato, gremolata, salt, and black pepper into bean mixture over medium heat; cook and stir until heated through, 10 to 15 minutes.

I had some green beans from the local farmers' market and a smoked pork chop in the freezer. Couldn't find a recipe for what I had on hand, so this resulted. I served it with oven roasted fingerling new potatoes. Yum!

Steps:
- 1. Put green beans and bouillon into a saucepan and cover with water. Bring to a boil and simmer until almost tender, about 10 minutes.
- 2. Meanwhile, in a large skillet, heat oil. Add chopped onion and stir over medium-high heat until slightly translucent, but not browned. Sprinkle flour over onions and stir together to cover onion pieces with flour. Slowly pour in water while stirring. Keep stirring until mixture has thickened slightly.
- 3. Add cubed smoked pork chop. Turn down heat a bit and continue to stir as mixture bubbles and thickens and meat warms.
- 4. Drain beans and add to the onion/meat mixture. Add the vinegar. Stir together until evenly mixed. Salt and pepper to taste.
- 5. NOTE: if there's time, finish cooking beans before you need the water in step 2, then use the boullion-bean liquid instead of plain water.

- -Pre-heat oven to 400 degrees.
- -Heat about 1/2" oil in a 12" skillet.
- -Brown pork chops in oil; about 5 minutes per side.
- -Use 2 corning ware dishes: Between the 2 dishes divide 1/4 teaspoons salt and 1/4 tsp pepper.
- -Put 3 pork chops in each dish.
- -Add potatoes, green beans, onions and oil from skillet.
- -Add more salt and pepper on top of everything. Probably 1/4 tsp salt and 1/4 tsp pepper.
- -Cover with aluminum foil. Bake for 1 hour.

- Weigh your pork chops in grams. Yes, you need a scale for this recipe because I have no idea how heavy or thick or large your chops are. Once you have your weight, measure out 1.25% of that weight in grams of sea salt, or kosher salt. Now measure out 0.25% - that's one-quarter of one percent - in curing salt if using. If you are not using curing salt, sub in more regular salt.
- Mix the salts and the sugar, if using, together and massage that into the pork. Ideally, you then vacuum seal the pork. If you don't have a vacuum sealer, put the pork chops in heavy freezer bags. Set them in the fridge to cure. You will need to cure these chops for a minimum of 2 days, and for chops as thick as mine, up to a week. Don't worry, this method of salting them prevents the pork from every getting too salty. You can leave the chops in there for 10 days if you wanted.
- When you are ready, get the smoker going. Any wood you like works, but I prefer apple or cherry. Rinse the pork chops in cold water and pat dry. You want them still damp.
- Smoke at 200F for at least 4 hours. You want them to be fully cooked inside, about 150F to 160F. Serve hot or cold.
