2 flour tortillas (6 inch)
2 Tbsp. ATHENOS Black Olive Hummus
12 slices OSCAR MAYER Deli Fresh Smoked Ham
1/4 cup chopped roasted red pepper s
1/4 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Spread tortillas evenly with hummus.
  • Place 6 ham slices and 2 Tbsp. each of the peppers and cheese on bottom half of each tortilla; fold tortillas in half to enclose filling.
  • Cook in skillet sprayed with cooking spray on medium heat for 2 minutes on each side or until lightly browned on both sides.

1 1/2 cups shredded smoked gouda cheese
1 cup of chopped ham
1/2 cup pitted chopped olive, chopped
1/4 cup minced red onion
1/2 cup grey poupon country Dijon mustard
8 flour tortillas (6-7inch)
sour cream, and
chopped bell pepper, if desired (to garnish)

Steps:

  • Mix cheese, ham, olives, and onions in a small bowl.
  • Spread 1 tablespoon of mustard on each tortilla shell and spread about 1/3 cup of the gouda mixture over 1/2 of the tortilla. Fold the tortilla in half to cover the filling. Heat the filled tortillas in a large nonstick skillet over medium heat for 4 minutes or until cheese melts, turning once half way through cooking.
  • Cut the quesadillas into 3 wedges and place on serving platter. Garnish with sour cream and peppers.

These are really good quesadillas with gouda, caramelized onions, and prosciutto. They can be assembled ahead of time, and then baked when you're ready.

2 tablespoons butter
1 onion, thinly sliced
1 tablespoon golden brown sugar
1/4 teaspoon white wine vinegar
1 1/2 cups smoked gouda cheese, grated
4 (10 inch) flour tortillas, 10-inch diameter
2 ounces prosciutto, chopped
2 tablespoons butter, melted

Steps:

  • Melt 2 tablespoons butter in heavy medium skillet over medium heat. Add onion, brown sugar and vinegar; saute until onion is golden brown, stirring frequently, about 25 minutes. Remove from heat. Cool to room temperature.
  • Preheat oven to 350ºF. Sprinkle cheese over half of each tortilla, dividing equally. Sprinkle prosciutto and sauteed onion over cheese. Season with pepper. Fold other half of each tortilla over cheese mixture. Brush tortillas with some of melted butter. Brush heavy large skillet with some of melted butter. Place over medium-high heat. Working in batches, cook quesadillas just until brown spots appear, brushing skillet with butter between batches, about 2 minutes per side. Transfer quesadillas to heavy large baking sheet.
  • Bake until tortillas are golden and cheese melts, about 5 minutes.
  • Transfer quesadillas to work surface. Cut each into 6 triangles. Arrange on platter and serve hot.

Olive oil
1 cup purchased salsa verde
2 ripe avocados, halved, pitted, peeled, chopped
1/2 cup chopped fresh cilantro
8 ounces spicy smoked sausages (such as hot links or andouille), thinly sliced
12 5- to 6-inch corn tortillas
2 cups (packed) grated Monterey Jack cheese (about 8 ounces)
1/2 cup crumbled feta cheese
1 7.25-ounce jar roasted red peppers, drained, thinly sliced

Steps:

  • Preheat oven to 350°F. Brush baking sheet with oil. Gently mix salsa, avocado and 1/4 cup cilantro in medium bowl.
  • Sauté sausage slices in heavy large skillet over medium-high heat until just brown, about 2 minutes. Set aside. Cook tortillas, 1 at a time, directly over gas flame until beginning to brown in spots, about 30 seconds per side. Arrange 6 tortillas on prepared sheet. Layer tortillas on sheet with 1 cup Monterey Jack cheese, feta cheese, sausage slices, red peppers, 1/4 cup cilantro, then 1 cup Monterey Jack cheese, dividing equally. Press each remaining tortilla atop filling and brush with olive oil.
  • Bake quesadillas until golden and cheeses melt, about 15 minutes. Cut into wedges; serve with salsa mixture.

5 1/3 ounces chavrie fresh goat cheese
3 -4 tablespoons butter or 3 -4 tablespoons vegetable oil

Steps:

  • Lay out 6 tortillas on a table.
  • Divide the Chavrie® up evenly among the tortillas and spread out to the edges.
  • Drain the peppers and slice in 1/4 inch strips.
  • Evenly distribute the roasted red peppers strips among the cheese on the tortillas.
  • Top each with the remaining tortillas.
  • Sauté the quesadillas in the butter or oil in a non stick pan until each side is golden brown and slightly crispy.
  • Place on a towel to drain.
