  • Heat some one calorie cooking spray in a pan, and add minced garlic. Cook for a minute to bring out the flavor.
  • Add the smoked haddock fillets, skin side down, along with 200 ml fish stock. Leave to simmer for a few minutes, then flip the fillets and allow to simmer on the other side. About 8-10 minutes total.
  • Remove the pan from the heat, and take the fish out, If you are using skin-on fillets, remove the skin from the fish.
  • In a large pot, add the arborio rice, dill and basil. Stir to combine, then add some of the fish stock from the pan. When the rice has absorbed the liquid, add some more. Continue this until all the stock from the pan, and the rest of the stock has all been used. The rice should now be cooked.
