GRILLED PEPPERS AND ONION
Grilled peppers and onion are the perfect summer side dish! Fire up the grill for your main dish, and cook these on the side to make it a meal.

Steps:
- Preheat a grill to medium-high heat (375 to 450 degrees). If using the grill basket, place it on the grill while preheating. Or, fold a large piece of aluminum foil in half and prick several holes in it with a fork, then fold up a 1-inch rim around the edge to make a makeshift tray.
- Cut the peppers into 1 1/2-inch wide strips. Cut the onion into wide strips and separate the layers with your fingers. Place them in a bowl and mix with the olive oil and kosher salt.
- Grill in the grill basket or on the foil tray for 15 to 20 minutes until tender, turning the vegetables a few times to ensure even cooking.

Steps:
- Mix dressing and crushed red pepper. Pour over fish and peppers in shallow glass dish; turn fish and peppers over to coat both sides of each with dressing mixture. Refrigerate 15 min. to marinate.
- Heat grill to medium-high heat. Remove fish and peppers from marinade; discard marinade.
- Grill fish and peppers on covered grill 4 min.; turn fish over. Grill, covered, 2 min. or until fish flakes easily with fork. Place fish and peppers on serving plate. Sprinkle with cheese and cilantro; let stand 3 min.

GRILLED WHOLE FISH WITH FOUR PEPPER-GINGER SAUCE
Steps:
- For the sauce:
- Place the vinegar, sugar, habanero and ginger in a medium saucepan and cook over high heat until reduced to 1 1/2 cups, stirring occasionally. If the sauce becomes too thick, thin with a little bit of water.
- Strain the sauce through a strainer into a bowl, stir in the red and yellow peppers, poblano, mint, Thai basil, cilantro and season with salt, to taste.
- For the fish:
- Heat the grill over high heat.
- Season the cavity of the fish with salt and pepper. Brush the fish with oil on both sides and season with salt and pepper. Grill for 4 to 5 minutes on 1 side. Turn the grill down to medium and cook for another 6 to 7 minutes with the grill hood closed. Remove to a platter and immediately drizzle with the sauce. Garnish with Thai basil and cilantro.
GRILLED PEPPERS
A friend made this the other day and it was great, so I had to share. The more colors you use the more colorful it is. Our friend just sprinkled oregano. We added the jalapeno for heat.

- Preheat a grill for medium-high heat. When the grill is hot, lightly oil the grate.
- Place the pepper pieces onto the grill with the inside facing down. Cook until slightly charred, 3 to 5 minutes.
- Turn peppers over, and place jalapeno slices onto them. Top with some mozzarella cheese, and sprinkle with a bit of oregano. Grill until cheese melts, then remove to a plate and serve.

- Boil the potatoes for 15 mins until tender. Meanwhile, line a grill pan with foil and brush with a little oil. Put the fish on the foil, brush with oil and sprinkle lightly with salt and pepper. Grill the fish for 6-8 mins depending on thickness, until the flesh flakes easily.
- Drain potatoes, then return to the pan and stir in the peppers, olives and garlic. Gently stir in the mayonnaise. Serve the fish with rocket and warm potato salad.

- Preheat grill to medium-high heat. Mix dressing and crushed red pepper. Pour half of dressing mixture over fish in resealable plastic bag; pour remaining mixture over peppers in separate resealable plastic bag. Seal bags. Turn bags over several times to evenly coat fish and peppers. Refrigerate 15 minutes to marinate.
- Remove fish from marinade; discard marinade. Remove peppers from marinade, reserving marinade. Place peppers on grill. Top with fish; cover grill with lid.
- Grill 4 minutes; carefully turn fish. Brush with reserved marinade from peppers. Grill, covered, an additional 2 minutes or until fish flakes easily with fork. Place fish and peppers on plate; let stand 3 minutes. Sprinkle with cheese and cilantro.

- Pat fish dry, inside and out, with paper towels. Place fish on a wire rack set inside a rimmed baking sheet. Refrigerate, uncovered, until skin is dry, at least 8 hours or up to 2 days.
- Open bottom vent of a charcoal grill completely. Light charcoal chimney starter filled with briquettes. (Never use charcoal lighter fluid to start a charcoal fire; it will give grilled foods a chemical taste.) When briquettes are covered with gray ash, pour them onto bottom grate of grill. Insert top grill grate, and cover grill. Bring temperature to medium-high (400°F to 450°F) by adjusting top and bottom air vents.
- Place bell peppers on oiled grates over hottest part of the grill; grill, uncovered, turning occasionally, until charred all over, 8 to 10 minutes. Transfer bell peppers to a medium bowl, and cover tightly with plastic wrap; let stand 10 minutes. Using a paper towel, scrape off skins from peppers; discard skins. Slice peppers lengthwise into 1/3-inch-thick strips; remove and discard seeds and core.
- Place cherries on oiled grill grates, or use a grilling basket or an 8-inch cast-iron skillet. If using a skillet, preheat it on the side of the grill while peppers are cooking. Grill cherries, uncovered, turning or tossing occasionally, until they begin to char and weep, 2 to 4 minutes. Transfer cherries to a medium bowl; let cool 5 minutes. Halve cherries; remove and discard pits.
