SMOKED PIZZA FATTY

A Smoked Pizza Fatty is one of my favorite "cheat" meals on the keto diet. It's definitely keto friendly, but your tastebuds might tell you otherwise. This is TASTY.

1 lb ground beef
1 lb ground sausage
1 lb bacon, sliced thin
1 cup Mozzarella
2 Tbsp pizza sauce
1 can black olives (2.25 oz), drained
8 ounces sliced mushrooms, cooked
1/2 pound pepperoni, sliced thin
1 1/2 tsp Kosher Salt
1 tsp basil
1tsp oregano
1 tsp paprika
1/2 tsp garlic
1/2 tsp onion
1 tsp black pepper

Steps:

  • create a bacon weave on a piece of wax paper and then set off to the side.
  • combine the beef and sausage with the meat seasoning, and then place in a gallon zip lock.
  • flatten out the meat in the ziplock so it's an equal thickness throughout.
  • open the ziplock using a knife at the seams on each side.
  • layer the pizza sauce, followed by the olives, mozzarella, pepperoni, and more mozzarella.
  • use the zip lock to help roll the meat into a loaf, being careful not to let the toppings come out. Use your fingers to seal the ends and the main seam.
  • Roll the loaf onto your bacon weave, and then use the wax paper to wrap the bacon weave over the loaf.
  • Place in your smoker and smoke at 225-250 degrees until the internal temperature hits 155 degrees.
  • At 155 increase the temperature to 400 and continue to cook until the internal temp hits 165.
  • Let the fatty rest for about 15 minutes before slicing into 1 inch slices and serving with a side of pizza sauce.

This is a treat on the smoker or grill and is basically a sausage roll stuffed with cheese and other items you can think of.

1 lb breakfast sausage (your favorite)
1/2 cup cheese (pre-shredded)

Steps:

  • Roll out sausage to form a rectangle about 3/8 inch thick.
  • Spread the cheese over the sausage leaving a 1 inch border to prevent leakage while cooking.
  • Roll the sausage back into a log shape, sealing the seams and edges so as not to have cheese escape.
  • Place on a smoker or on a grill with indirect heat at 225F to 250F.
  • Cook until internal temperature is 165F to 170F.
  • Let cool to room temperature, slice and serve with crackers.

This is good in the smoker . I smoked till internal temp was 165. Can be baked and not wrapped in bacon.

3/4 lb venison, ground
1/4 lb ground sausage
1 egg
2 Tbsp chopped parsley
1 Tbsp butter, softened
1 Tbsp bread crumbs
1 tsp lemon juice
1 tsp salt
1/4 tsp pepper
1 Tbsp dried onion flakes
1 c water
1/2 pkg onion soup mix
1 clove garlic
1 c pepper jack cheese, cubed
1 1/2 lb bacon

Steps:

  • 1. If baking Combine all ingredients except the onion soup,cup of water,and bacon. shape into a loaf.
  • 2. Place in a lightly greased pan.
  • 3. Bake 1 hour at 350 degrees.
  • 4. Baste every 10 minutes with a combination of 1 cup water and 1/2 package dried onion soup mix.
  • 5. IF smoking: flatten meat mixture into rectangle and fill with cubed chees. Roll as jellyroll(stuffed meatloaf). Wrap in uncooked bacon(approximately 1 1/2#) in a weave.smoke at 230 till internal temp reaches 165. No need to baste!
  • 6. I love this stuffed with scrambled eggs, cheese. Let your imagination be your guide!
