Skip the starchy mashed potatoes in favor of this filling, nutrient-dense cauliflower mash.

2 tablespoons butter
1 teaspoon sea salt flakes
4 cloves garlic, peeled
1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 large head cauliflower

Steps:

  • In 1-quart saucepan, heat butter, salt, garlic and chicken broth to a simmer over medium heat. Reduce heat to low; simmer 12 to 15 minutes or until garlic is completely soft. Set aside.
  • In stockpot or Dutch oven, heat 3 quarts water to boiling over high heat.
  • Cut florets from heads of cauliflower. If using stalks, cut stalks into 1/2-inch chunks. There should be about 8 cups raw cauliflower. Add cauliflower to boiling water; return to boiling. Cook 15 to 20 minutes or until cauliflower is extremely soft when pierced with knife. Remove from heat; set aside.
  • Strain cauliflower well; pat dry thoroughly with towel. Place cauliflower in food processor. Add broth mixture. Cover; process until extremely smooth, processing in batches if necessary. Rinse out stockpot, and return to pot to combine batches.

Steps:

  • Separate cauliflower into florets and cut in smaller chunks.
  • In a medium pot, combine cauliflower, garlic and enough cold water to cover the vegetables.
  • Place a lid on top and bring to a boil. Reduce heat to low and cook for about 10 minutes or until cauliflower is fork tender. Drain.
  • Add butter or olive oil, salt and ground black pepper to taste.
  • Using an immersion blender (a food processor), process until very smooth or desired consistency.

1 medium head cauliflower ((1 lb. when trimmed))
1/2 cup shredded sharp cheddar
2 tablespoons chopped chives or parsley ( for garnish)

Steps:

  • Preheat your oven to 400 degrees F.
  • Place the butter, garlic, kosher salt and black pepper in your food processor bowl.
  • Cook the bacon in a skillet until crisp. Drain on paper towels, then crumble. Set aside.
  • Trim the cauliflower and cut it into chunks. Place the chunks in a large microwave-safe bowl. Add 1/4 cup water. Cover and microwave on high until very tender, about 10 minutes. The bowl will be hot - careful when removing it from the microwave. Drain and transfer the cooked cauliflower to the food processor.
  • Process the cauliflower on high speed until very smooth, 1-2 minutes, stopping once to scrape the sides with a spatula.
  • Transfer the cauliflower puree to a small 1-quart casserole dish. Top with the shredded cheddar and the crumbled bacon. Bake just until the cheese is melted, 3-5 minutes. Top with the parsley and serve.

3 garlic cloves, chopped
2 (14 ounce) cans low sodium chicken broth (or beef broth)

Steps:

  • Combine cauliflower, garlic and broth in a large saucepan. If the broth does not cover the cauliflower add water to cover.

Here is another vegetable side dish that I make once or twice a week. This recipe fits perfectly with phase 1 of The South Beach Diet and is a great alternative for those wanting to cut back carbs. Even my meat-and-potatoes husband enjoys this recipe. Cooking the cauliflower in milk is what makes this version unique (and tasty). Also, I have used a couple of bags of fresh cauliflower already cut up like they sell at Trader Joe's or 1 20 oz bag of frozen florets for convenience.

1 medium head cauliflower, chopped in small florets
1 cup low-fat milk (1% or less)
1/2 teaspoon salt

Steps:

  • Cook cut up cauliflower florets in milk and salt over low heat for 35 minutes, or until tender. Stir the mixture a couple of times to rotate the cauliflower in the milk and to keep the milk from scalding. (Sometimes when I get distracted the milk gets scalded on the bottom of the pot. If this happens, stir gently so that that the scalded milk browned bits do not get mixed up into the cooked cauliflower).
  • Drain, and discard or freeze the remaining liquid for a creamed vegetable soup (like cauliflower-cheese soup).
  • Using an immersion blender, blend cooked cauliflower until the mixture resembles mashed potatoes (no liquid necessary -- otherwise it will be too runny).
  • At this point use this mixture as if it were mashed potatoes and turn this "Smashed Cauliflower" into your favorite form of potatoes. In other words, you can add roasted garlic, scallions, low fat sour cream, chives, butter, or any combination. However, most of the time we eat it as is, with salt and white pepper to taste.

2 pounds russet or yellow potatoes, (washed and cut into large chunks. (See notes))
1 medium head cauliflower, (cut into florets)
4 cups chicken or vegetable broth. (You will use less if using Instant Pot)
salt, (to taste)
1 head garlic, (skins removed)
1 tbsp olive oil
4 tbsp butter, (more to your liking)
¾ cup whole milk, (more if desired)
2 tbsp fresh parsley, (for serving (optional))
fresh ground black pepper, (for serving)

Steps:

  • Add potatoes and cauliflower in a large pot. Add the chicken or vegetable broth to cover the vegetables. You may use water if you like instead but the broth adds extra flavor. Add about 1 teaspoon salt to the pot and 2 of the garlic cloves from the head of garlic that you have already skinned. (Reserve the other cloves for roasting)
  • Bring to a boil, cover and simmer for about 20 minutes (until the potatoes are fork-tender).
  • While the cauliflower and potatoes are simmering, turn your broiler on and place oven rack on one spot below the middle. Put the remaining garlic cloves (you want at least 7 or 8) on a piece of aluminum foil and drizzle with the 1 tablespoon olive oil. Add a dash of salt and black pepper. Place the foil on the oven rack and heat until the edges of the cloves just start to brown, about 5-7 minutes depending on the heat of your oven. Watch closely so the cloves don't burn. Remove the cloves from the oven and mince until it's almost a garlic mash. Set aside.
  • Drain the cauliflower and potatoes and return to the pot. Add the butter and the garlic mash that you've roasted and use a potato masher to mash the vegetables until the butter is fully melted.
  • Add the milk and mash some more until you reach the consistency you desire. Add more butter and/or milk if needed.
  • Add more salt to taste, stir and place in a serving platter. Sprinkle top with fresh parsley, black pepper and a pat of butter (to look even more irresistible) before serving.
  • Add potatoes and cauliflower to the insert of your pressure cooker and add 2 cups of chicken or vegetable broth. You may use water if you like instead but the broth adds extra flavor. Add about 1 teaspoon salt to the pot and 2 of the garlic cloves from the head of garlic that you have already skinned. (Reserve the other cloves for roasting)
  • Seal the lid on the cooker, select Manual cooking and cook on high pressure for 10 minutes. (See next step for preparing roasted garlic while potatoes and cauliflower are cooking.) Once the 10 minutes is up, let pressure release naturally for 5 minutes then finish with a quick release. Remove lid when pressure is completely released and the top can be turned easily.
  • While the cauliflower and potatoes are pressure cooking, turn your broiler on and place oven rack on one spot below the middle. Put the remaining garlic cloves (you want at least 7 or 8) on a piece of aluminum foil and drizzle with the 1 tablespoon olive oil. Add a dash of salt and black pepper. Place the foil on the oven rack and heat until the edges of the cloves just start to brown, about 5-7 minutes depending on the heat of your oven. Watch closely so the cloves don't burn. Remove the cloves from the oven and mince until it's almost a garlic mash. Set aside.
  • Remove the cauliflower and potatoes with a slotted spoon to a large bowl. (Do not pour any remaining broth or water into the bowl unless you want to make the recipe dairy-free then add the broth in place of milk or butter.) Add the butter and the garlic mash that you've roasted and use a potato masher to mash the vegetables until the butter is fully melted.
  • Add the milk and mash some more until you reach the consistency you desire. Add more butter and/or milk if needed.
  • Add more salt to taste. Sprinkle top with fresh parsley, black pepper and a pat of butter (to look even more irresistible) before serving.

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • For the cauliflower: Remove the outer green leaves from the head of cauliflower and trim the stem. Using a large knife, cut the cauliflower in half lengthwise, through the core. Cut a 1 1/2-inch thick steak from each half (save the remaining cauliflower for another use).
  • Place the steaks on the prepared baking sheet and season with salt and pepper on both sides.
  • Whisk the oil, lemon juice, paprika, garlic powder and coriander together in a small bowl. Brush half of the mixture on the top of the steaks, flip them and brush the remaining mixture on the other side. Roast the steaks until golden brown, about 15 minutes, flipping halfway through.
  • For the mashed sweet potatoes: While the cauliflower roasts, bring a small saucepan of water to a boil. Add the sweet potatoes and a pinch of salt and cook until fork tender, 10 to 12 minutes. Drain, return to the saucepan and cover to keep warm.
  • Just before serving, with the back of a fork or potato masher, mash the potatoes until smooth. Add the warm soy milk and continue to mash. Grate the garlic clove into the saucepan, add a pinch each of salt and pepper and stir to combine. Keep warm.
  • For the chimichurri: Combine all the chimichurri ingredients in a small bowl and stir to combine. Set aside.
  • Spread the mashed potatoes on plates and top with cauliflower steaks. Drizzle with some of the chimichurri. Serve and enjoy!
